Southern Italy is known for their consumption of vegetables and legumes whether they are raw or cooked they are a staple in their diets. The first Italian cookbook dates back from the beginning of the 14th century and starts with a chapter on vegetables. One of the recipes was onion soup with spices. This shows great importance because still to this day Italians focus on traditions and eating vegetables. Italy is heavily based on traditional recipes and this cookbook created the foundation for this.
Italy is filled with the Macchia Mediterranea which is all the vegetation along the coast of the Mediterranean such as: bay leaf, mint, marjoram, thyme, juniper and etc. These lush, fragrant areas with herbs allow Italy to have an array of diversity in plants and dishes. We ate plenty of dishes that exemplified the terroir of the Macchia Mediterranea like: Sauteed Dandelion Greens with Fava Bean Puree, Fennel Salad, Peperonata, Polenta Taragna and many more. These dishes that we made were very simple and you could truly taste the natural flavors of the vegetables. My favorite thing that I ate was the peperonata (not because I made it haha) because it was so sweet from the bell peppers and spicy from the pepperoncini. Also, you can’t forget about the arancini mozzarella sticks, if only those were a vegetable!
