Al via "La Bonissima", il festival del gusto e della tradizione. Modena. I tortellini in brodo di Modena, i maccheroni al pettine della Bassa, e poi il salame di San Felice a riempire le crescentine montanare, il gnocco fritto o la stria carpigiana. E, ancora, un aperitivo con qualche scaglia di Parmigiano macchiata di aceto balsamico tradizionale prima di dedicarsi alla sfida tra lo zampone e la sassolina, insaccato delle feste che ha rischiato di scomparire, con l’accompagnamento dell’immancabile lambrusco. Sono alcuni dei molti piatti della tradizione modenese che si potranno gustare nel corso delle iniziative di “La Bonissima”, il festival del gusto e delle eccellenze enogastronomiche modenesi che si svolge in piazza Grande da venerdì 13 a domenica 15 ottobre tra mercato dei prodotti tradizionali, showcooking, sfide tra giovani chef, laboratori e degustazioni. Il programma della tredicesima edizione del festival è stato presentato questa mattina, a Palazzo comunale, con una conferenza stampa alla quale sono intervenuti l’assessora a Turismo e promozione della città del Comune di Modena Ludovica Carla Ferrari, Paolo Storchi, di Sgp Eventi che organizza la manifestazione in collaborazione con il Comune e con la Camera di Commercio di Modena, e Luca Bonacini, esperto gourmet e giudice del Comitato di La Bonissima. La tre giorni di “La Bonissima” trasformerà piazza Grande in una vetrina delle eccellenze proposte da una trentina di produttori modenesi con specialità spesso difficili da trovare sugli scaffali dei negozi. Tre i prodotti che “debuttano” quest’anno: la stria carpigiana, che si lascerà giudicare da una giuria di esperti; la sassolina, tradizionale insaccato di Sassuolo (a rischio di scomparsa dopo la chiusura della macelleria che lo ha preparato per più di mezzo secolo) che sfiderà lo zampone; i maccheroni al pettine delle valli mirandolesi, nelle diverse declinazioni prodotte dalle rezdore custodi della tradizione. Oltre alla possibilità di gustare aperitivi e cene all’aperto, “La Bonissima” propone anche sfide culinarie come lo showcooking “Il piatto corrotto” che, sabato pomeriggio sul palco allestito in piazza Grande, vedrà contrapporsi gli studenti del Centro di formazione Nazareno di Carpi e della Scuola alberghiera di Serramazzoni nella realizzazione di un piatto classico della cucina tradizionale modenese “corrotto” però da un nuovo e insolito ingrediente. Ad assaggiare i piatti saranno lo chef Stefano Marchini e l’esperto gourmet e giornalista Stefano Reggiani, insieme a un gruppo di food influencer che condivideranno sui loro social piatti e ricette. Domenica non mancheranno gli appuntamenti con il “come si faceva una volta”, con dimostrazioni di pigiatura dell’uva e di preparazione dei ciccioli, e con il contest tra food blogger che realizzeranno i loro piatti con i prodotti acquistati nel mercato della Bonissima. Il contest è condotto da Lorella Giugni di “In cucina con Lorella”. Come è tradizione, una giuria di gourmet modenesi degusterà i prodotti degli espositori e domenica mattina incoronerà il re o la regina del mercato. Saranno proclamati, inoltre, i nuovi ambasciatori della Confraternita del Gnocco d’oro, il riconoscimento che ogni anno viene attribuito a giornalisti, comunicatori, sommelier e chef che più hanno lavorato per affermare le tradizioni modenesi ed emiliane nel mondo. ⌚16:00 ~ BUON POMERIGGIO 유 con la STRIA MODENESE è una specie di schiacciata al forno, croccante e friabile dal colore tra il giallo pallido e il bruciacchiato, come si pensava fosse il colorito delle "strie" (streghe in dialetto). Veniva cotta nel forno a legna dopo aver cotto il pane, quando il calore del forno ormai era moderato. Fatta farina, acqua, sale, olio e strutto, poi si stendeva la pasta sottile in una teglia unta e la si metteva nel forno fino a quando non faceva una crosta dorata. Oggi viene venduta dai panifici della bassa.
