# **Tofu and Pineapple**
### **Ingredients**
**Sauce:**
- [ ] 3 tablespoons soy sauce
- [ ] 1 tablespoon rice wine vinegar
- [ ] 2 teaspoons sesame oil
- [ ] 3 tablespoons tomato paste
- [ ] 1 tablespoon maple syrup
- [ ] 1 tablespoon grated fresh ginger
- [ ] 3 garlic cloves, minced
- [ ] 1 teaspoon lemongrass paste
**Main:**
- [ ] 300g extra-firm tofu
- [ ] 2 tablespoons arrowroot or cornstarch
- [ ] 2 cups cubed pineapple
- [ ] 2 spring onions, sliced
- [ ] 2 tablespoons chopped fresh cilantro
### **Instructions**
1. Preheat oven to 205°C (400°F) and line a baking tray with parchment paper.
2. Drain tofu and press it by wrapping in a clean tea towel and placing a heavy weight on top for at least 10 minutes.
3. Cut pressed tofu into 1cm cubes and place in a dish.
4. Make marinade by combining soy sauce, rice wine vinegar, sesame oil, tomato paste, maple syrup, ginger, garlic, and lemongrass paste in a small bowl.
5. Pour marinade over tofu and let it marinate for at least 30 minutes.
6. Remove tofu from marinade (reserve the marinade) and place in a zip-lock bag with arrowroot or cornstarch. Toss until evenly coated.
7. Spread tofu in a single layer on the prepared baking tray. Bake for 15 minutes, flip pieces over, then bake for another 10–15 minutes until golden.
8. While tofu bakes, combine the reserved marinade and pineapple in a saucepan over medium heat. Simmer until pineapple softens, about 5 minutes.
9. Add baked tofu to the saucepan with pineapple mixture and toss to combine.
10. Garnish with spring onions and cilantro. Serve with rice.

🇩🇰 Khmer Cuisine, Copenhagen
🍚🐄 Char Kroeung Beef (119 DKK, $23.30)
Beef stir fried with bell peppers, broccoli, carrots and snap peas. A good salty stir fry. Hits the spot.
🍜 Num Banh Chok Somior Kari Morn (119 DKK, $23.30)
Mild coconut curry soup. It's a soupy consistency rather than curry. It's comforting with a nice mild hit of spices. Would probably try making this one day!
🍵 Lapsang Souchong (60 DKK, $11.75)
Smokey black tea with a very smokey taste. Nice to have once in a while but maybe not all the time
Thank you to the uncle running the shop. Hope the shop is thriving. Would want to go back for dinner to try the eggplant one day.
