Chinese New Year Cake
2 cup water 2 pcs slab sugar (I used 0.5 pc) 1 tbsp palm sugar (I used 1 cup) 1 tbsp coconut powder (I pumped it up to 5tbsp) 1 cup wheat starch 2 cup glutinous rice powder (It needed to cool down first, failed first time, succeeded 2nd time) Oil to grease the cake tin
Melt slab sugar and water, add palm sugar When cool, mix in all the dry ingredients. Grease the cake tin and steam for 1 hour If skewer test comes out clean it’s done Decorate with red dates etc

LEMON CHEESE CAKE
- condensed milk x 1 tube (less, to taste) - cream cheese x 1 bar (226g) - lemon x 2, juice and rind - biscuit x 1.5 pack - butter 80g (wet sand texture) - pinch of cocoa powder, coconut powder, cinnamon
Take out cream cheese to soften Melt butter, crush biscuit, mix herbs Pat down firmly on dish Chill for 1hr Mix cream cheese, lemon juice, condensed milk until lump free Pour on top; decorate with lemon peel

TERIYAKI GRILLED BITTER MELON
- bitter melon x 1 pc (sliced in 2cm pcs)
- mirin, soy sauce, water 2.5 tbsp each
- sugar
Method:
- middle to low heat, grease pan, grill melon with lid on until brown (1 min)
- flip and repeat on the other side
- low heat, sprinkle sugar on the inner ring of all melon pieces, cover lid (1 min) (careful not to burn the caramel)
- spoon liquid sauce on the inter rings
- tilt pan to evenly spread the sauce, cover lid (4 mins)
- let it cool or chill in the fridge for 1hr before serving
