Aloo Parantha.. Whole Wheat Indian Flatbread with spicy mashed potato filling, shallow fried and served with pickles and yogurt. 
  Today I bring you the recipe for one of the most popular Indian Flatbread and breakfast item from North India, Aloo Ka Parantha.
Aloo Ka Parantha, needs no introduction to many.. It is one of the most popular Indian flatbread from North India. Considered mainly as Punjabi food but it is equally popular in other North Indian states of Uttar Pradesh, Haryana. In fact people from Western U.P are so fond of it that it is a regular breakfast item in many households.
Other popular and common  breakfast dishes from Western Uttar Pradesh are.. Bedmi Poori with Rassewale Aloo, Mix Veg. Daliya, Ajwain Ke Paranthe, Besan Chilla,  Bread Pakoras and Samosas with Jalebis.
Aloo Parantha for Breakfast
Easy to make and loved by all the age groups , aloo paranthas are one of the most common breakfast items.These stuffed breads also ideal to pack in kids lunchbox as kids love these and finish in no time. Family gatherings or weekend breakfast, you will always find Aloo Paranthas on the menu of most of the North Indians.
Pipping hot paranthas topped with butter are a common scene in almost all of the North Indian Dhabas. If you have visited roadside dhabas in Northern India, in mornings you will notice many people from the neighbouring cities and towns especially flock to these eateries on weekends  to enjoy these pipping hot paranthas.
I love Aloo Paranthas made by mom. It is one the dishes after Kadhi Pakodi, that I ask my mom to make whenever she visits us or we go to their place. Hers are perfect crispy and flaky paranthas filled with generous aloo filling..
How to make Perfect Aloo Paranthas..
Do you too struggle in making paranthas. Fillings tears out or the dough is too dry or wet?? If keep just a few basic points in mind while preparing and making paranthas, trust me you will get crispy at the same time flaky stuffed paranthas. Over years and guidance from mom my paranthas come out quite well now..
Make smooth pliable dough with just enough to feel lukewarm water. It will give soft dough. Leftover Paneer Whey( water left after making paneer at home) is one thing I use for kneading dough and dough kneaded with it gives very soft and fluffy chapatis and paranthas.
You can add 1-2 tsp of oil to dough while kneading but that is optional, it helps to keep the dough soft and fresh for a long time.
Do not over boil potatoes. It takes around 10 mins on medium flame to boil potatoes in stove top pressure cooker. You can also boil potatoes in Instant Pot.
Take the potatoes out from the pan/water once these are boiled. If left in water for long, these soak water and get water logs which makes the filling very moist.
Boiled potatoes should be cooled completely before mashing and adding spices. 
Add salt and spices just before starting to roll out the paranthas.
Everyone loves generous filling in paranthas but do not overload. Take the right amount just enough for the dough portion taken for rolling.
Seal the edges completely before rolling the paranthas.
Griddle should be hot enough to fry paranthas.
Let’s start preparing potato the filling and making Aloo Paranthas..
For Potato Filling..
Take medium sized potatoes. Wash them nicely to clean off all the dirt. If potato size is big, cut into half. To speed up the cooking process, I use pressure cooker. You can boil potatoes in open pan too but these take time. One can microwave potatoes too. Will update the methods in a separate post.
Once the potatoes are boiled as per the method used, let these cool completely. Peel and mash potatoes.
Just before starting with rolling paranthas, add spices (see the recipe card for details), finely chopped cilantro leaves and salt as per taste. Mix nicely.

Many people like to grate boiled potatoes but I keep it simple mashed with hands, with coarse texture. You can also add onion and ginger paste, finely chopped green chillies. I skip these as we like plain aloo paranthas. I add green chillies separately in my filling.
Making Dough
Take Whole wheat flour. Add a tsp of salt to it. You can also add caraway seeds as these are good for digestion.
Make a soft but firm dough with slight lukewarm water. The should not be too hot or too cold. Knead it nicely till you get a soft dough.
Cover and keep aside till you make the paranthas.
Divide it in portions before you start making paranthas.

Rolling the dough with filling and Frying
Take a portion of the dough roll it slightly to make a small flat disc(not very thin) , take enough filling for the portion and keep it in the center. Refer pics below.
Seal the edges nicely and then pat it in slight whole wheat flour and roll it with light hands into a circular disc around 6″ in diameter. Do not put much pressure while rolling.

Meanwhile heat a griddle/tawa on medium flame. Put the rolled parantha on it. Let it cook one side for few seconds till golden brown spots appear. Flip the side,  then let it cook for few seconds. Add oil/ghee to the upper side, then turn the other side up, add oil/ghee on this side too and cook nicely till both the sides are light brown.

Aloo Paranthas
Hot Crispy Aloo Paranthas. Indian Flatbread with spicy potato filling, shallow fried. Popular as breakfast item.
For Dough
1.5 Cups Whole Wheat Flour
1 Cup Water to knead the dough (use less or more as required)
1 tsp Salt
½ tsp Caraway Seeds/Ajwain (optional)
Potatoes Filling
2-3 Medium Sized Potatoes(Boiled)
2 tsp Coriander Powder
1 tsp Cumin Powder
1 tsp Chaat Masala Powder
½-1 tsp Red Chilli Powder
2 tbsp Finely chopped fresh Cilantro Leaves.
1-2 Finely chopped Green Chillies (optional)
Knead the dough
In a mixing bowl, take flour, add salt and caraway seeds.
Make a well in the center and add just enough water, slowly mixing the dough.
When the dough is just mixed leave it for 1-2 minutes, then knead it into a smooth pliable dough.
Cover the dough covered in an air-tight container.
Boiling Potatoes
Wash potatoes very nicely cleaning off all the dirt,add water in pressure cooker, add potatoes, cover the lid and cook on medium flame till 2 whistles. Let the pressure go of naturally.
Immediately drain out the water carefully as it will be hot and keep potatoes to cool.
Once the potatoes are cooled completely, peel and mash. You can mash with hands or use a potato masher.
Add all the spices along with salt, finely chopped cilantro leaves and mix well.
You can make portions of fillings as per the dough portions taken out for rolling.
Rolling out the dough and Frying Paranthas
Divide dough into equal portions .
Roll to a smooth ball.Pat some flour on it. Roll it or with your hands flatten into a small disc.
Add the filling to it. Seal the edges and roll the disc to a circular disc of around 6" in diameter or depending on the thickness you want. You can use little flour to dust while rolling out parantha.
Put the rolled parantha on it. Let it cook one side for few seconds till golden brown spots appear. Flip the side, then let it cook for few seconds. Add oil/ghee to the upper side, then turn the other side up, add oil/ghee on this side too and cook nicely till both the sides are light brown.
I use desi ghee for frying paranthas, you can use oil. 
When fresh fenugreek leaves are available you can add some handful of finely chopped leaves in filling. Paranthas taste flavorful with it. 
Serve crispy hot paranthas the way you like. Masala/Adrakwali Chai or and yogurt preparation like raita, lassi or even plain curd. Kids love these with Chilled shakes like Mango shake, Strawberry shake in summers.

Prepare the dough:
1.Mix flour, salt, oil (if needed), ajwain and water to make a soft pliable dough (not sticky). Let it set as you prepare the stuffing.

4.Make sure the stuffing should not come out, for that seal the sides with some water on the edges so the stuffing does not come out.
5.Heat a tawa and drizzle few drops of oil.

1.1. Make a soft dough with the specified ingredients.

How to Make Kulcha Super Suvai Tamil recipes

2.Leave in a draught-free place to froth.

4.When risen and doubled, punch and knead again and leave to rise again.

Ashish Kadian celebrates this birthday exclusively with his mother this lockdown

The ongoing lockdown is all about learning new activities and reviving lost hobbies such as painting, cooking, singing, etc. it was also about celebrating memorable moments with your near and dear ones. We always dream of having lavish birthday parties with our close pals, but this year Ashish Kadian who plays Indresh in &TV’s Santoshi Maa Sunaye Vrat Kathayein had a very simple yet memorable birthday. 
The charming Ashish Kadian has a grand celebration on his birthday every year and he eagerly awaits this special day. However, this year it was extra-special as he celebrated it with his mother at home.  Speaking of his lockdown birthday Ashish Kadian shares, “My day started with an enriching yoga session with my mother followed by a special breakfast spread that included all my favourite Punjabi dishes like puri-aloo, aloo paranthas and special chutney. Even though I am not a chai lover, I really like the one that my mother makes for me. This was followed by a hearty lunch which included Rajma-Chawal, Chole Bhature and a lot of other favourites of mine. But the highlight of my entire day was the ‘Aate ka Halwa’ the classic delicacy made by my loving mother. As children who grew up in a Punjabi household, we have loved having this halwa on festivals and special occasions, this one dish will always be close to my heart no matter how many cakes and fancy desserts I have.” 
Instead of celebrating his birthday in a modern way by cutting a cake, Ashish took the traditional route by devouring the yummy halwa that his mother specially made for him. Adding more on this he says, “This birthday was by far the best one that I celebrated ever since I got to know what birthday celebrations mean. Though I could not see a lot of my close friends, but it has never happened that I got to spend an entire day exclusively with my mother. From starting the day with great food, discussing some of the best childhood memories of my birthdays and watching some of my favourite movies together, this say was more than perfect. This was indeed a well-spent birthday after such a long time.” 
Lockdown has seen many birthday celebrations, some excited to be home and some disheartened as they had to cancel their lavish birthday plans. For all those who are upset for celebrating their birthday this way Ashish Kadian would like to say, “This lockdown we should learn how to cherish these occasions and make them special as these days will not come back. Once we all start working, we will miss these days dearly.”

Cutlets are one of the most easy and quick to make snacks and packed with veggies, with or without lentils. Cutlets can be deep fried or shallow fried or baked in oven Now with the ease of Air-fryers, you can conveniently make the low oil version and relish it guilt freely!!
Health Benefits of Rajma and Spinach
Rajma or Red Kidney beans are one of the most nutritious beans. Rajma Masala a hot favourite among North Indians, is a also our favourite weekend brunch. Whenever I make Rajma Masala, I always take out boiled beans so that I can make cutlets or wraps, fried rice or stuff in parantha for kid’s lunch boxes. 
These beans are widely used not only in Indian Cuisine but also in Mexican cuisine too. You can add boiled beans to pilafs/fried rice , make soup( like this Vegetarian Nachos Soup where you can replace Black Beans with Red Kidney beans), Dal Makhani .
Rajma or Red Kidney beans are rich in fibers and iron along with other important vitamins and minerals. For Vegetarians like us these provide a rich source of protein , a kind of substitute for red meat.
It is always advisable always to soak Rajma beans before cooking for a couple of hours and then to properly cook beans else, one can have flatulence problems with it. Also, as the elders in my family always suggested having yogurt/curd like Chaas or Indian Buttermilk or Raita along with it. They said it helps in proper digestion of beans.
Spinach or any winter greens adds on to the nutrition  and since it’s winter time why not make the best use of these greens. Spinach s rich in iron, calcium and other essential mineral and vitamins. Make full use of this fresh green lefy vegetable when it is is season..like in Palak Paneer or Kale and Spianch Saag with Paneer Koftas
One can use Spinach in so many varied ways like in Palak Paneer Parantha, Lehsuni Dal Palak(Spianch with Lentils), in dips and raita (Spinach and Mint Dip, Spinach and Pomegranate Raita, or this wholesome Palak aur Kabuli Chane Ka Pulao(Spianch and Chickpeas Pulao).

How to make Healthy Rajma aur Palak Tikkis
You can also add some fresh methi leaves or any other veggie like shred carrot, cabbage, sweet potato with or in place of spinach. Even coriander leaves add on to the flavor when added to these cutlets.
Ingredients for Rajma aur Palak Ki Tikki
To make these cutlets we need boiled Rajma. Leftover beans from Rajma Masala can be used to make these cutlets.
When making with fresh Rajma beans, soak beans 4-5 hrs or overnight. Pressure cook beans till soft. You can cook beans in stove top pressure cooker or Instant Pot. For Stovetop method refer Rajma Masala Recipe. In Instant Pot cook beans on Pressure cook mode for 20 minutes or Bean mode.(will soon update Instant Pot Rajma Recipe)
When using Canned Beans, drain and rinse beans before adding.
I have used Flax meal for binding along with boiled potato. You can also add grated paneer(Indian cottage Cheese). Rolled oats can also be added to a more fibrous and nutritious cutlet.
Flax meal is not only a good egg replacer but also a great binding agent. Use it to thicken soups, making chapatis, pancakes or savoury Indian Crepes(Instant Ragi Dosa). Instead of bread crumbs often use flax meal or a mix of flax meal with foxnut powder for binding cutlets (Aloo Makhana aur Kaju Pops).
Finely chop Spinach before adding to cutlet mix.
You can skip green chilies if making for kids. For a no-onion garlic cutlet recipe, skip onion and garlic.
Stepwise detailed Method..
Mix in all the ingredients along with spices and salt expect oil. Add a tsp of oil when making in air-fryer. It prevents the cutlet to come out dry. Adds on to the moistness and softness.
Make cutlets of the required size. You can make bigger patties too for burgers.
Coat in flax meal.
Refrigerate tikkis  for at least 30mins, before cooking.
Stove-top Method for making Red Kidney Beans and Spinach Cutlets
Heat an non-stick pan or heavy bottomed pan. Add some oil to it and shallow fry cutlets for till done from both sides.

Bake in oven
Preheat oven to 400°F or 200°C.
Brush Cutlets with oil and bake for 10 min. first. Then turn cutlets and bake for another 10 minutes, or till light brown and baked.

1 Cup Boiled Rajma /Red Kidney Beans
3/4 Cup Finely Chopped Spinach
1 Boiled Potato(medium)
1/2 Cup Flax Meal(Ground Flax Seeds)
1-2 tsp Ginger and Chili Paste
Spices
1 tsp Cumin Seeds/Jeera
1 tsp Chaat Masala
½-1 tsp Red Chilli Powder
Salt to taste
Oil to Shallow fry Cutlets
Mix all the ingredients together, except oil.
Form a coarse mixture.
Form small patties or cutlets.
In a dish ort plate take flax seed meal and coat cutlets in it.
Heat oil in a pan on medium heat, add cutlets and fry till light brown on both the side.
Bake in Oven
Preheat oven to 400°F or 200°C.
Brush Cutlets with oil and bake for 10 min. first. Then turn cutlets and bake for another 10 minutes, or till light brown and baked.
Serve hot with any chutney or dip of your choice.
You can make these without spinach also. Or, add other shredded veggies like cabbage, carrots or beetroot.
Serve hot with any chutney(Coriander Mint Chutney), Dip like Mint Yogurt Dip, Spinach and Mint Dip or Tomato Ketchup. 
Do try these yummy and nutritious cutlets with the goodness of beans and spinach greens. You can make wraps or use these as patties for burgers and sandwiches. These cutlets can be frozen for about a month.

PARANTHA BITE IS A LOVELY DIET..

Now-a-days everyone is very fond of eating Parathas especially children those who live in hostels and rarely gets an option to eat varieties of Parathas. One such famous Paratha is Aloo ka Paratha and many of us thoroughly enjoy eating Gobi ka Paratha too. The Punjabis in their sharp way have designed this flavourful mix that everybody can enjoy. Boiled and mashed aloo and Gobi are combined with the essential Punjabi masalas to make this superb Punjabi Paratha. Utilizing entire wheat flour rather than plain flour or Maida makes this Parathas healthy and tasty. Just a little oil has been utilized to cook the Parathas however for those of you who need experience Punjabi sustenance in the entirety of its magnificence, including a touch of ghee or new home-made butter would be an incredible choice! Try this simple and easy recipe and serve with pickle or curd.
Tips to make your Paranthas soft and stuffed up from each and every corner….
·       The dough should be soft but not too soft, which makes it difficult to roll.
·       The stuffing should not be watery.
·       Cool the stuffing completely before using.
·       When you stuff the filling inside the dough, make sure you seal it well before rolling again else it will spill out.
·       Cook on a medium flame with ghee or oil till both sides are nicely cooked and golden brown in colour.
                  Preparation Time: 10minutes    |   Cooking Time: 20minutes
                    Total time: 30minutes     |   Makes: 6 Paranthas
Ingredients required to make Aloo Gobi Stuffing :  (BUY ALL THE INGREDIENTS FROM GROCIO AT NOIDA.)
·       1 cup boiled , peeled and mashed potato
·       1/2 cup grated cauliflower
·       2 tbsp oil
·       1/2 tsp cumin seeds (jeera)
·       2 tsp ginger-green chilli paste
·       1 tsp coriander (dhania) powder
·       1/2 tsp turmeric powder (haldi)
·       2 tsp chaat masala
·       salt to taste
 For The Dough
·       1 cup whole wheat flour (gehun ka atta)
·       1 tsp oil
·       salt to taste
��       2 to 3 drops of oil for kneading
 How to make Aloo Gobi Stuffing :
·       Heat the oil in a broad non-stick pan and add the cumin seeds.
·       When the seeds crackle, add the ginger-green chilli paste and cauliflower and sauté on a medium flame for 2 to 3 minutes.
·       Add the coriander powder, turmeric powder, chaat masala and salt, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
·       Add the potatoes, mix well and cook on a medium flame for 1 minute, while stirring occasionally. Keep aside to cool slightly.
 For the Dough
·       Combine all the ingredients in a deep bowl and knead into a soft dough using enough water.
·       Add oil to the dough and knead well.
·       Divide the dough into 6 equal portions and keep aside.
  How to begin Parantha making :
·       Divide the aloo Gobi stuffing into 6 equal portions and keep aside.
·       Roll a portion of the dough into a 100 mm. (4") diameter circle using a little whole wheat flour for rolling.
·       Place one portion of the aloo Gobi stuffing in the centre, bring together all the sides in the centre and seal it tightly.
·       Roll out again into a 125 mm. (5") diameter circle using a little whole wheat flour.
·       Heat a non-stick tava (griddle) and cook the paratha on a medium flame, using a little oil, till golden brown spots appear on both the sides.
·       Repeat steps 2 to 5 to make 5 more parathas.
·       Serve hot with pickle and curds.

How to Make Aloo Paratha samayal super suvai tamil
1.1. Make a soft dough with the specified ingredients.
2.2. Divide the dough into balls, as per the required size.
3.3. Chop the onions, green chillies and the coriander leaves. Then boil the potatoes; remove the skin and mash.
4.4. Add the rest of the ingredients and mix well. Take each portion of the dough, flatten it on palm.
5.5. Stuff the filling in the dough and roll into balls. With a rolling pin, flatten the balls into 1/2" thick round parathas. Try these recipes super suvai tamil

How to Make Shahi Tukda samayal super suvai tamil
1.Cut the bread slices into half, lengthwise, and deep fry in hot ghee, till crisp.
2.Dissolve the sugar in the milk and bring to a boil, and keep aside till cool enough to handle.
3.Dip the bread in the milk and sugar solution, and arrange the pieces in a serving dish, in one layer.
4.Mix the rose water in the `rabri' and spoon it over the bread slices, to cover all of them.
5.Spoon the malai or cream over the center of each slice.

Ingredients of Gobhi Ka Paratha samayal super suvai tamil
2 Cups Whole Wheat Flour (made into dough)
1/2 cup Ghee
For the Filling:
2 cups Cauliflower, grated
2 tbsp Coriander leaves, chopped
1 tsp Ginger, finely chopped
1 tsp Green Chillies, finely chopped
1 tbsp Salt
1 tbsp Lemon juice
How to Make Gobhi Ka Paratha recipes super suvai tamil
1.Break the dough into small pieces, shape into round balls and flatten.
2.Pinch the edges to form a cup, and place some gobhi mixture in the centre.
3.Wet the edges and bring together to enclose the filling. Pinch to seal.
4.Roll out this stuffed ball to smoothen, dip in dry flour and roll out as thinly as you can without tearing, like you roll a chapati, being careful not to tear it.
5.Heat the tawa till very hot, lower the heat and place one parantha over it.
6.When the edges start lifting, take some ghee and make a trail along the outer edge of the parantha, and some on the surface.

Oven temp: 400F-204 C
2 Cups Refined flour
1 tsp Dry yeast
1/2 tsp Sugar
1 tsp Salt
1 tsp Oil
1 Egg yolk (beaten, mixed with a little milk to glaze)
How to Make Paav Super Suvai Tamil recipes super suvai tamil
1.Dissolve sugar in 1/2 cup lukewarm water and sprinkle yeast over it.
2.Leave in draught-free place to froth (about 10 minutes).
3.Mix the salt and oil into the flour and knead it to a smooth soft dough, using lukewarm water.
4.Place in a bowl and cover with cling film and leave in a draught-free place to rise.
5.When it rises (at least doubles), knock down and leave again to rise.
6.After second rising, knead a little more and shape into 4-6 rounds.
7.Grease a square tin which will take in all the rolls placed about 1" apart--when they rise, the rolls should be touching each other, so you can get those dents.
8.Cover again and leave to rise, after brushing them with the egg yolk mixture.
9.After 15-20 minutes, bake in a pre-heated oven for 15-20 minutes.
