Aeroponic purple cauliflower ready for harvest and grown on a #TowerGarden 💜🌱💜 Purple cauliflower’s color is naturally occurring and originates from an antioxidant called anthocyanin, which can be found in red cabbage and other purple veggies. Purple and orange cauliflowers are recent discoveries, dating back to 1970, when farmers in Canada noticed an unusually colored plant growing in a white and-green cauliflower field. Scientists then bred the colorful anomalies into distinct varieties, improving upon taste, color and hardiness.

Like traditional cauliflower, purple cauliflower is a great source of vitamin C, vitamin K, vitamin B6, folate, fiber, and antioxidants. Cruciferous vegetables such as cauliflower are known for their high levels of cancer-fighting phytochemicals know as glucosinolates. Purple cauliflower also goes by the variety names Sicilian Violet, Violet Queen and Grafitti cauliflower.
