dal baati churma.also known as Wheat Roll and Churma, is a traditional Rajasthani dish made from powdered wheat, also known as Dal. It is usually served for lunch or dinner with crushed baati topped with ghee and dal. It is also popular in the Malwa regions of Uttar Pradesh and Madhya Pradesh.
Perhaps one of the oldest regional Indian dishes that comes from the cuisine of Rajasthan. Mixed Dal Curry, Baked Wheat Balls, and Mixed Wheat Ball Powder are the three components of this dish. Usually, it is served for lunch when the weather is extremely cold.
to be honest, i am not particularly fond of dal baati recipe as i find it very filling and heavy. but this is my family members favorite recipe, and they got the taste from my friend from rajasthan who makes it a lot. I actually got this recipe from her family, and I sincerely appreciate it. but as the traditional baati recipe is made in oven, i have added an appe pan twist to this recipe. as it is easily available in many households, i find the appe pan recipe more realistic and practical. Also, Indian cooking can be used to prepare Baati. While this can be equally efficient, the process can be time consuming.
While applying the dough for Baati, first of all keep in mind that it should be hard and tough. You can accomplish this by adding small amounts of water little by little while kneading the dough. secondly, use ghee to make dal baati churma. Ghee, which enhances the taste and flavor of dal baati, traditionally plays an important role in the recipe. last but not the least, the lentils used in the dal recipe for this dish include moong dal, masoor dal and chana dal. however, it can also be served with a straight dal recipe if none of these dals are combined.
Ingredients of Dal Baati Churma:-
For Baati:
2 cups wheat flour
¼ tsp salt
¼ tsp baking powder
¼ cup ghee
water for kneading
For Churma:
3 bati fried
2 tbsp ghee
3 tbsp sugar powder
2 tbsp chopped cashews and almonds
¼ tsp cardamom powder
For Dal:
½ cup green moong dal
¼ cup masoor dal
¼ cup chana dal (soaked 30 minutes)
3 cups water
3 tsp ghee
1 tsp mustard seeds
1 tsp cumin
2 pinch hing
1 finely chopped onion
1 tsp ginger garlic paste
1 green chilli slit from the center
1 finely chopped tomato
¼ tsp turmeric
½ tsp Kashmiri red chili powder
¼ tsp garam masala
1 tsp salt
1 cup water
2 tbsp coriander
Method to make Dal Bati Churma:-
Make Rajsthani Dal-
1. To make Rajasthani Dal, take a pressure cooker and put green moong dal, red lentils and soaked gram lentils in the cooker.
2. Now put 1 tsp ghee and 3 to 4 cups of water in the cooker and cook till 4-5 whistles come.
3. Now take a big pan and heat 2 tsp ghee. Add mustard seeds, cumin and asafoetida and crackle.
4. Now fry the finely chopped onions, garlic ginger paste and green chillies well.
5. Now we have to add finely chopped tomatoes and cook the tomatoes by adding salt. Add salt along with tomatoes so that tomatoes cook quickly.
6. After this, add turmeric, chili and garam masala and roast well till the spices become fragrant.
7. Now put the lentils in the pan and cook it by adding 1 cup of water. Cook the dal on high flame for 5 to 7 minutes and then turn off the gas.
8. Now add finely chopped coriander to the pulse and keep it aside. Now prepare the Baati.
Make bati-
9. To make Baati, first of all take wheat flour in a big bowl. Take ¼ tsp salt, ¼ tsp baking soda, now add ¼ cup ghee to the flour and mix it well.
10. Knead the dough once and see if the dough is binding then the dough is suitable for Baati, otherwise add some more ghee and mix.
11. Now add water to the flour and knead the dough like puri and the dough should be a little hard.
12. Now you have to take dough equal to one puri and make a ball out of it and with the help of hands mark the center of the ball.
13. Then roll it lightly. Now put a mark of x on it. So that our appe will cook evenly in the pan.
14. Now you have to prepare all the batis in the same way.
15. Now we have to take an appe pan and heat the appe pan by applying ghee in it. When the pan gets hot, we have to put the batis one by one in the appe pan as many molds as there are in the pan.
16. Now cover the pan and cook on low flame for 15 minutes. Now flip the bati and cook for 15 minutes.
17. Now your bati is cooked well from both the sides and inside. Now put the bati in melted ghee and leave it soaked for 15 minutes if you are not on the calorie tour. Otherwise, you can take it out only after dipping it in melted ghee.
18. Only dry wicks have to be saved. Now prepare churma.
Make churma-
19. To make churma, we will take a jar of a mixie and add crushed bati in the jar, as well as add 2 tablespoons of cashews and almonds after chopping them.
20. Now everyone has to grind it coarsely. When the mixture is ready, add ghee and sugar powder as required and mix it and your churma is ready.
21. Now you can enjoy Dal Baati Churma at home with everyone and fill your holiday with joy. At the same time, time will also pass to talk to everyone on this pretext.

Instructions:
Wash the eggplants and make a cross-shaped slit on each eggplant, ensuring not to cut them into two pieces.
In a pan, dry roast the grated coconut, sesame seeds, coriander seeds, fennel seeds, cumin seeds, and mustard seeds for a few minutes until they turn aromatic best cooking oil for diabetes. Remove from heat and let it cool.
Once the roasted spices have cooled down, grind them to a coarse powder in a blender or mortar and pestle. Add turmeric powder, red chili powder, and salt to the ground mixture and mix well.
Stuff each eggplant with this prepared spice mixture and keep the remaining spice mixture aside best healthy cooking oil.
Heat oil in a pan or kadhai and fry the stuffed eggplants until they turn golden brown. Remove the fried eggplants from the pan and set them aside.
In the same pan, add chopped onions and sauté until they turn translucent. Add ginger-garlic paste and green chilies and cook for another minute.
Add chopped tomatoes and cook until they become soft and mushy most healthy cooking oil.
Add the remaining spice mixture (from step 3) to the pan and mix well.
Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix everything together and cook for a few minutes.
Add water as needed to achieve the desired consistency of the gravy. Cover the pan and let the gravy simmer for about 10 minutes.
Gently add the fried stuffed eggplants to the gravy and coat them well with the masala. Cover the pan and let it cook for another 10 minutes on low heat is mustard oil healthy.
Finally, sprinkle garam masala over the dish and garnish with fresh coriander leaves.
Serve Baingan ki Lonje hot with rice or roti.
