Happy World Vada Pav Day 2023
.
August 23rd brings us to World Vada Pav Day, a vegetarian, street side, fast food snack, from Maharashtra, India.
.
Vada pav, alternatively spelt wada pao, is a vegetarian fast food, road side snack, native to the Indian state of Maharashtra. The dish consists of a deep fried potato dumpling placed inside a bread bun (pav) sliced almost in half through the middle. It is generally accompanied with one or more chutneys and a green chili pepper. Although it originated as an affordable street food in Mumbai, it is now served in food stalls and restaurants across India. It is also called Bombay burger in keeping with its origins and its resemblance in physical form to a burger.
.
The most common theory of the vada pav's origin is that it was invented in the erstwhile mill-heartland of Central Mumbai. Ashok Vaidya of Dadar is often credited with starting the first vada pav stall outside Dadar railway station in 1966. Some sources credit Sudhakar Mhatre who started his business around the same time. One of the earliest kiosks selling vada pav is said to be Khidki Vada Pav, located in Kalyan. It was started in the late 1960s by the Vaze family, who used to hand out vada pavs from a window (Khidki) of their house facing the road.
.
The carbohydrate-rich snack catered to the cotton mill workers of what was then known as Girangaon. This potato dumpling (batata vada) placed inside a pav was quick to make, cheap (~10-15 paisa in 1971, and much convenient over the batata bhaji and chapati combination, which couldn't be eaten in overcrowded local trains.
.
The preparation process is very easy. A few boiled potatoes are mashed and mixed with chopped green chilli and garlic, mustard seeds, and spices (usually asafoetida and turmeric). The mass is then shaped into a ball, dipped into gram flour batter and deep fried. The resultant fritter is served by placing inside a bread bun, accompanied with one or more chutneys and fried green chilli.

My favorite nineteenth-century history fact: Millions of women's decisions about how to economize their time and labor was largely responsible for the American industrial revolution. This is a long one, so buckle in, but it's FASCINATING. (Also, I'm calling it "Victorian" because most of it took place during Queen Victoria's reign, even though it began slightly before.) So to begin with: it was really hard to grow wheat in New England because of a fungus in the soil native to that area. So New Englanders grew and ate a lot of corn and rye (many at the time saw oats as fit only for animals.) The problem is, you can't really make traditional bread out of corn, and rye flour is a PAIN to work with, requiring at least four times as much kneading as wheat flour. If you're baking for an entire week at at time for a large family, that's a LOT of kneading and some very sore arms. Many New England women would mix expensive wheat flour (which they had to buy imported from Virginia or other places) with rye to make it a little easier. Then in 1825, the Erie Canal is built and prang! Lots and lots of wheat flour could be imported at low cost from the newly settled lands in Ohio, which was great for growing wheat. A lot of farm families began turning over far less space to growing grain and raised more sheep instead, which they sold to newly developed mills, both locally and in places like Lowell, whose famous water-powered textile factories opened in the 1820s. These mills produced woolens and also, most famously, cheap cotton print fabrics which women quickly realized were A.) more stylish than the homespun linen fabrics they wore most of the time, B.) WAY less labor intensive than making the fabric and thread from raw flax, and C.) a lot less expensive now that they didn't have to be imported from England or India. Household looms and spinning wheels were relegated to storage in attics, and women very quickly transitioned to making most of their clothes from factory-produced cotton. (One problem they unintentionally caused themselves in the process was that they now had to do a lot more ironing. All this new cotton fabric had to be ironed every time they washed it, and linen didn't -- at least not when washed in traditional ways without our modern detergents. So ironing ended up being a big part of the laundry process when hitherto, it hadn't been.) The major industrial cities of the Northeast began in the early 1820s with cottons, and quickly spread to other fabrics, like silks and the aforementioned woolens, and to other products. But they started with cottons, the demand for them driven by women who found ways to use them to make their daily routines a little easier. And who was going to work in those newly-built mills? Women. (continued below)
ok but what are YOUR favorite and probably real victorian funfacts?
There genuinely were some doctors who thought riding in trains would cause uterine prolapse [uterus falling out], when trains were new. The concern was that the vibrations from travelling so fast would break the fibers connecting the uterus to the abdominal wall. Unsurprisingly, this did not stop women from riding in trains. Because fuck that noise- trains!!!
One time in the 1840s a bunch of doctors shellacked live horses and rabbits and concluded, when the animals died (probably from heat exhaustion after being unable to sweat), that they had suffocated and that mammals breathed partially through our skin.
Some beauty manuals of the era may have created accidental sunscreen. Occasionally you see advice to wear cold cream on your face when going out, to prevent sunburn. This probably mostly didn't work- but some cold cream recipes contained zinc oxide for a "white foundation" effect, due to beauty standards favoring very light skin, which may have created a low-level SPF. Other manuals also advocate sealing the cold cream in with powder...which even more frequently involved zinc oxide.
A dentist may have gotten away with a malpractice death by blaming tightlacing. A 23-year-old maid named Annie Budden, of Preston, England, went to have a tooth pulled in January of 1895 and suffocated after the procedure, during which she had been dosed with nitrous oxide. The dentist said she was tightlaced and therefore the coroner ruled that he was not at fault- however said dentist claimed that her natural waist was 23" and her corset measured 18". Presumably that's the closed measurement, and corsets were commonly worn with at least a 2" lacing gap at the time (one corset ad I've seen mentions that women liked to give the theoretical closed measurement of their corset as their waist measurement, to make it sound smaller, while actually wearing it with the customary gap). Ergo, she was only laced down about 2-3 inches, a difference unlikely to cause asphyxiation. The fact that she worked as a maid similarly calls the assessment into question- how could she have successfully done physical labor while laced down in a way that diminished her lung capacity so much? Her employer vouched for her good character and excessive tightlacing was seen as vanity- and would have been noticed by making Miss Budden look out-of-proportion physically. That doesn't add up either, to me. The dentist went on to become mayor of the town where this all happened.
That thing above started as a fun fact about the only credible death due to tightlacing and then I looked into it more and now I'm just mad.
Justice For Annie Budden
Sorry this has gotten off-track but I'm still mad about the whole Annie Budden thing

The Freshness Factor: Why It Matters for Corn Flour Production
Freshness is essential in corn flour production, impacting its flavor, nutritional content, and usability. Fresh corn flour provides the rich, natural taste that enhances recipes, retaining key nutrients often lost when corn is processed or stored improperly. Corn flour suppliers like Mittal Conezza understand the importance of freshness in every batch, setting themselves apart from competitors by focusing on rapid, efficient production methods that lock in this freshness.
Quality Control from Field to Flour: The Mittal Conezza Approach
At Mittal Conezza, quality control begins from the moment the maize is harvested. As one of the top corn flour manufacturers in India, the company collaborates with trusted farmers to source high-quality maize. Once harvested, the corn is transported directly to Mittal Conezza’s facilities for immediate processing. This field-to-factory approach minimizes the time between harvest and milling, helping to preserve the corn’s nutritional value and natural moisture.
To further ensure product consistency and freshness, the company implements strict quality checks at every stage. Each step of the milling process is monitored closely to prevent any loss of quality, ensuring that each batch meets the high standards Mittal Conezza has set as a trusted corn flour supplier.
Advanced Production Techniques to Ensure Freshness and Quality
Mittal Conezza’s corn flour production process uses advanced milling and packaging technology designed to retain the flour’s freshness for as long as possible. The company’s milling facilities employ precision grinding and sifting techniques that maintain the corn’s integrity while enhancing the flour's consistency.
Once milled, the flour undergoes rapid, airtight packaging that helps to lock in the product’s natural freshness. The use of high-quality packaging materials also prevents any moisture or contaminants from reaching the product. Through these advanced techniques, Mittal Conezza ensures that each bag of corn flour remains as fresh as the day it was milled.
Sustainability in Freshness: Sourcing and Packaging Innovations
In addition to freshness, Mittal Conezza emphasizes sustainability in its sourcing and packaging practices. As a forward-thinking maize flour manufacturer in India, the company works closely with farmers who practice sustainable agriculture. By sourcing maize from farms that prioritize eco-friendly methods, Mittal Conezza supports responsible farming practices and ensures access to high-quality, fresh maize.

The Unseen Cultural Significance of Wheat Flour in Indian Cuisine
In the diverse culinary landscape of India, one ingredient stands out for its versatility and cultural significance—wheat flour, commonly known as chakki atta. Its influence transcends daily meals, embedding itself in traditional dishes, festive celebrations, and the country's agricultural heritage.
The Historical Roots of Wheat Flour in India
Wheat flour's history in India dates back thousands of years, with ancient texts mentioning its use in various forms. It was not just a staple but a symbol of sustenance and prosperity. Archaeological evidence suggests that wheat cultivation in the Indian subcontinent began as early as the Indus Valley Civilization, around 3000 BCE.
Wheat Flour's Role in Traditional Indian Dishes
In Indian cuisine, wheat flour is indispensable. The most common use is in making rotis, chapatis, and parathas—flatbreads that accompany almost every meal. Each region in India has its own unique recipes and techniques for utilizing wheat flour, reflecting local traditions and flavors.
Chakki Atta vs. Modern Milling Techniques
Traditionally, wheat flour in India is ground using a stone mill, or chakki, which preserves the nutritional content and imparts a distinct texture and flavor. Modern milling techniques, while efficient, often strip away essential nutrients. This makes chakki atta a preferred choice for health-conscious consumers.
Health Benefits of Premium Quality Chakki Atta
Premium quality chakki atta is rich in nutrients. According to Bagaria Food LLP, a leading manufacturer in Kolkata, their chakki atta is infused with high fiber and essential vitamins, promoting healthy physical and cognitive development. Bagaria ensures the quality of their product through stringent quality control measures and advanced packaging technologies.
Wheat Flour in Indian Festivals and Rituals
Wheat flour is also integral to Indian festivals and rituals. During Diwali, for instance, sweets like laddoos are made from finely ground wheat flour. Similarly, during Makar Sankranti, a harvest festival, wheat flour is used to make various traditional dishes that celebrate the season's bounty.
The Socio-Economic Impact of Wheat Flour Production
Wheat farming and flour production are vital to India's economy. Small and large-scale farmers alike rely on wheat cultivation as a primary source of income. The flour milling industry, therefore, plays a crucial role in sustaining local economies and providing employment.
Case Study: Bagaria Food LLP
Bagaria Food LLP, based in Kolkata, exemplifies the integration of tradition and modernity in wheat flour production. With over 20 years of experience, Bagaria has established itself as a reputable brand, known for its premium quality chakki atta. Their commitment to quality and sustainability is evident in their use of advanced machinery and adherence to non-GMO practices.
Nutritional Value and Dietary Importance
Chakki atta is lauded for its high nutritional value. It contains essential carbohydrates, vitamins, and fiber, making it a balanced addition to any diet. According to Bagaria Food LLP, their chakki atta helps maintain metabolism, supports digestive health, and provides the necessary fuel for daily activities.
FAQs About Chakki Atta
What factors should I consider when choosing the best wheat flour supplier?
Look for quality certifications, customer reviews, and sourcing practices. Ensure the supplier complies with rigorous quality control standards.
Is chakki atta good for making rotis?
Yes, chakki atta is ideal for making soft and delicious rotis due to its texture and nutritional content.
Are there any additives in Bagaria's wheat flour?
No, Bagaria's wheat flour is free from artificial additives and preservatives, ensuring a pure and healthy product.
