One thing that I’ve noticed since starting my 8WW adventure, is how much more colorful the food I am eating is. The dishes I’m eating aren’t only really delicious (honestly!), they look really good, too. I’m using a lot of new spices and adding tons of different vegetables to my diet. I am having fun being adventurous with my food choices and putting my own spin on traditionally unhealthy recipes.
One of my new favorites is Buffalo cauliflower. I love spicy foods and this fits the bill. It’s super-easy to make, uber-healthy, and really tasty. I’ve also discovered that throwing some cut vegetables on the George Foreman and grilling them gives them a lot of extra crunch and flavor.
What has really worked for me is planning ahead a little bit. When I make egg white muffins, I do them two dozen at a time. They keep and reheat really well, and are easy to grab-and-go. I can toss turkey bacon or chicken sausage in them with some tomato and onion or spinach. This keeps me from walking out the door without breakfast, or grabbing something that I really don’t want to eat. I’m also a big fan of the crock pot. I can make a huge batch of veggie chili and use it throughout the week in several different dishes. It also freezes rather nicely.
The money that I’m saving on not eating out several nights a week, combined with not buying packaged/processed/or prepared foods, actually lowered my weekly food budget. This was something I didn’t expect. I’m not only feeling 150% better than I felt only 3 weeks ago, I’m saving money by making better food choices. Pretty cool, huh?
