CHEF ILONA: CREAMY EDAMAME DIP
Edamame Dip:
Edamame are the young, green soybeans which are harvested while they are immature. This dip is entirely plant-based and gets its creaminess from silken tofu, and this dip packs an herbaceous punch with both basil and cilantro. I love this dip with rice crackers or as a flavour base in a lettuce cup.
Silken tofu is a great ingredient for making vegan dips due to its unique texture and nutritional profile. Here's why:
Creamy Texture Silken tofu has a smooth and soft consistency, making it an ideal base for creamy dips like ranch, spinach-artichoke, or hummus-like blends. It can easily mimic dairy-based dips when blended.

Edamame Dip
Serves 8-10
1 package silken tofu, drained
2 cups shelled edamame, plus ¼ cup for garnish
½ cup cilantro, roughly chopped
1 cup basil, torn
1 jalapeno, halved, seeded, and roughly chopped
4 green onions roughly chopped
¼ cup olive oil
juice of 2-3 limes
¾-1 Tbsp salt, season to taste
Put everything into a food processor minus the tofu and begin to blend on high. When the puree is almost completely smooth, add in the tofu. Blend the mixture until the mixture is smooth. Refrigerate the dip for at least an hour before serving, but the dip is best served after being chilled overnight.
Garnish options: whole edamame beans, gochugaru, scallions, basil, cilantro, pistachios, olive oil

CHEF ILONA: Festive Whipped Feta Dip w/ Cranberry Chutney
Creating a festive and delicious spread that will guarantee an experience that is merry and bright for your guests can be low-stress and even fun by curating a graze comprised of a selection of versatile dips. My dips can be used as a flavour foundation for a canape, a crunchy lettuce wrap, or in its natural state as a dip.
How to serve whipped feta dip: Top my whipped feta dip with homemade cranberry chutney, toasted pistachio, and honey for the ultimate sweet-salty combination. You can get creative here. The toasted pistachios add an incredible crunch to your dip but leave them off if you’re not a fan. Don’t feel like turning on the stove? Top this dip with our cranberry relish instead or jam you made in the summertime.
Feta’s salt and tang make it a versatile cheese that can both contrast and enhance other flavors.
For the best pairings:
Balance its saltiness with sweet fruits, mild grains, and fresh greens. Complement its acidity with earthy, robust flavors like nuts, olives, and roasted vegetables. Enhance its Mediterranean character with herbs, olive oil, and spices like oregano and dill. These pairings allow feta’s unique qualities to elevate both simple and complex dishes, adding brightness, richness, and a delightful contrast in texture and flavor.
Whipped Feta Dip
Cranberry Topping:
Juice and zest of 1 orange
3 Tbsp. honey
1 ½ cups fresh or frozen cranberries
1 sprig thyme, plus 2 tsp. chopped fresh thyme leaves
In a small saucepan over medium heat, whisk orange juice and honey until combined and bring to a boil.
Add cranberries and thyme sprig and return to a boil.
Reduce heat to medium-low and cook, stirring occasionally just until cranberries burst and
become saucy; approximately 7 to 8 minutes.
Remove the thyme sprig, and then stir in orange zest and chopped thyme leaves.
Whipped Feta:
6 oz. feta in brine, cut into small cubes and drained
1 clove garlic, grated or minced
1/4 tsp. crushed red pepper flakes (my preference is Aleppo pepper flakes or gochugaru)
1 cup cream cheese, room temperature
3 Tbsp. extra-virgin olive oil
In a food processor, pulse feta, garlic, red pepper flakes, and chopped thyme until feta is broken up into small crumbs.
Add cream cheese and pulse until combined.
With the food processor running, drizzle in oil and blend until mixture is smooth and fluffy.
Transfer dip to a serving dish and top with cranberry topping.
Garnish options: Toasted chopped pistachios, chopped parsley, additional orange zest, additional drizzle of honey, walnuts, and fresh thyme.
