1 ตุลาคมของทุกปี เป็น 'วันกาแฟสากล' คิกออฟครั้งแรกเมื่อปีค.ศ 2015 เพื่อแสดงถึงความสำคัญและความหมายในมิติต่าง ๆ ของเครื่องดื่มแก้วโปรดที่เรียกว่า 'กาแฟ'

นับตั้งแต่มีการค้นพบ กาแฟ ในป่าของประเทศเอธิโอเปียเมื่อศตวรรษที่ 9 แล้วกาแฟก็ผ่านเข้าสู่เยเมน,โลกอาหรับ, ตุรกี และยุโรป ก่อนแพร่กระจายความนิยมไปทั่วโลก ก่อเกิดเป็นวัฒนธรรมการบริโภคที่ฝังรากลึกในหลาย ๆ ประเทศ กลายเป็นเครื่องดื่มยอดฮิตตลอดกาล เมนูเอสเพรสโซ่, อเมริกาโน่, คาปูชิโน่ และลาเต้ ได้รับความนิยมอย่างสูง จวบจนมีการก่อตั้ง 'วันกาแฟสากล' หรือ 'วันกาแฟโลก' (International Coffee Day) ขึ้นในเวลาต่อมา เพื่อแสดงถึงความสำคัญและความหมายในมิติต่าง ๆของเครื่องดื่มกาแฟในเชิงการผลิตและการบริโภค

วันที่ 1 ตุลาคมของทุกปี คือวันกาแฟสากล คิกออฟครั้งแรกเมื่อปี ค.ศ 2015 ที่มิลาน ประเทศอิตาลี โดย 'องค์กรกาแฟสากล' (ICO) เพื่อเป็นกิจกรรมร่วมในงานเวิลด์ เอ็กซ์โป 2015 ที่มิลานนั่นเอง ในครั้งนั้น มีการจัดงานอีเวนต์อย่างเป็นทางการขึ้นเป็นครั้งแรกเพื่อเชิญชวนให้ชาวโลกร่วมกันดื่มกาแฟแก้วโปรด ตั้งใจให้เป็น 'วันพิเศษ' ของคนรักกาแฟทั่วโลก นับจากนั้นมาเวลาใครพูดถึงวันกาแฟสากลก็มักนึกไปถึงงา���ปาร์ตี้หรืองานเฉลิ��ฉลองการดื่มกาแฟร่วมกันอย่างสนุกสนาน

แต่��ั่นเป็นเพียงคำพูดหรือข้อเขียนตามเว็บไซต์ต่าง ๆ ที่ตั้งใจให้ดูสวยและหรูหราเท่านั้น เอาเข้าจริง ๆ ก็ไม่ได้มีงานเฉลิมฉลองใหญ่โตอะไรนัก ในวันนั้นผู้คนก็ยังดื่มกาแฟกันตามปกติ จะมีให้ตื่นเต้นอยู่บ้างก็ตรงที่ธุรกิจร้านกาแฟทั่วโลกถือเป็น 'โอกาสทอง' ในการจัดงานอีเว้นต์ เสนอโปรโมชั่นลดแหลกแจกแถมเพื่อดึงลูกค้าเข้าร้าน โดยเฉพาะร้านกาแฟในอเมริกาเหนืออย่างสหรัฐและแคนาดา

นอกจากดึงคนมาดื่มกาแฟกันแล้ว 'ความหมาย'  ที่ซ่อนอยู่ก้นแก้วที่ผู้คนไม่ค่อยจะพูดถึงกันของวันกาแฟสากลนั้นคืออะไร? ต้องการเชิญชวนให้คนมาร่วมดื่มกาแฟแก้วโปรดเพียงประการเดียวกระนั้นหรือ?

องค์กรกาแฟสากลหรือที่บางท่านเรียกว่าองค์กรกาแฟระหว่างประเทศ ก่อตั้งขึ้นเมื่อปีค.ศ. 1963 ในกรุงลอนดอน ประเทศอังกฤษ ภายใต้การอุปถัมภ์ของ 'สหประชาชาติ' (ยูเอ็น) เนื่องจากเห็นว่ากาแฟมีบทบาทสำคัญต่อเศรษฐกิจโลกอย่างสูง สมาชิกประกอบด้วยผู้แทนของรัฐบาลแต่ละประเทศที่ส่วนใหญ่เป็นชาติจากแหล่งปลูกกาแฟตามทวีปต่าง ๆ นั่นเอง ประชุมกันปีละ 2 ครั้ง ในเดือนมีนาคมกับกันยายน

นอกจากมีภารกิจด้านการส่งเสริมและพัฒนาอุตสาหกรรมกาแฟในระดับโลกแล้ว ยังเป็นเวทีปรึกษาหารือเพื่อรับมือกับความท้าทายที่ภาคธุรกิจกาแฟเผชิญอยู่จากต้นน้ำไปถึงปลายน้ำ ตั้งแต่ระดับผู้ปลูก, นักโปรเซส, มือคั่ว, บาริสต้า, ผู้จัดการร้าน และเจ้าของธุรกิจ ไปจนถึงผู้บริโภค ผ่านทางความร่วมมือระหว่างประเทศ

เป้าหมายแรกเริ่มของการจัดตั้งวันกาแฟโลกนั้น องค์กรกาแฟสากลโฟกัสความสำคัญไปที่เรื่องการส่งเสริมให้มีการยกระดับ 'คุณภาพชีวิต' ของเกษตรกรผู้ปลูกกาแฟ, ผลักดันการค้าที่ 'เป็นธรรม' ในอุตสาหกรรมกาแฟ และขับเคลื่อนให้กาแฟเป็น 'เครื่องดื่มสากล' ที่ได้รับความนิยมเพิ่มขึ้นทั่วโลก

สำหรับผู้��ลงใหลการดื่มกาแฟทั่วโลกนั้น วันกาแฟสากลถูกใช้เพื่อ 'สื่อความหมาย' ไปในแง่มุมของการแบ่งปันความรักในตัวเครื่องดื่มและสนับสนุนเกษตรกรนับล้านคนที่วิถีชีวิตขึ้นอยู่กับพืชเศรษฐกิจหอมหวลชวนดื่มอย่างกาแฟ อย่างไรก็ตาม วาระหลัก ๆ ในการขับเคลื่อนขององค์กรนี้ก็เปลี่ยนแปลงไปตามสถานการณ์และปัญหาที่มองกันว่ากำลังส่งผลกระทบและต้องรีบเข้าไปช่วยกันดูแลแก้ไข

อย่างปีค.ศ. 2022 องค์กรกาแฟสากลโฟกัสเรื่องธุรกิจกาแฟจาก 'เศรษฐกิจแบบเส้นตรง' (Linear Economy) สู่ 'เศรษฐกิจแบบหมุนเวียน' (Circular Economy)  ต้องการสื่อสารออกไปว่า การนำทรัพยากรมาผลิตสินค้านั้น เมื่อเลิกใช้แล้วจะถูกทิ้งโดยไม่นำกลับมาใช้อีก เศรษฐกิจแบบเส้นตรงจึงส่งผลกระทบต่อโลก โลกจึงต้องเปลี่ยนแปลงไปสู่เศรษฐกิจหมุนเวียน ใช้สิ่งของหรือทรัพยากรที่มีอยู่ให้คุ้มค่าที่สุด มีการวางแผนให้สิ่งของที่ใช้สามารถคืนสู่สภาพเดิมหรือพร้อมนำไปรีไซเคิลเพื่อกลับมาใช้ใหม่ได้อีกครั้ง

พอพูดถึงประเด็นนี้ ผู้เขียนนึกถึง 'กากกาแฟ' ก่อนเป็นสิ่งแรก ๆ ซึ่งก่อนหน้านี้เคยถูกทิ้งให้เป็นขยะจำนวนมหาศาลในแต่ละปี ดังนั้น การนำไปรีไซเคิลเพื่อใช้ประโยชน์ต่อทั้งในระดับครัวเรือนและอุตสาหกรรม จึงเป็นทางเลือกที่ดีกว่าทิ้งลงถังขยะแล้วฝังกลบหรือเผาทำลาย ไม่จำเป็นเลยสำหรับการตั้งคำถามว่าขยะจากกากกาแฟมีมากน้อยขนาดไหนกันเชียว หากทราบว่ายอดบริโภคกาแฟทั่วโลกในปัจจุบันนั้น มีตัวเลขสูงกว่า 10 ล้านตัน

ไม่ใช่กากกาแฟเท่านั้นที่เป็นความท้าทายของโลก แต่ 'แก้วพลาสติก' แบบใช้ครั้งเดียวทิ้งก็เป็นปัญหาใหญ่ในเชิงระบบ ที่ผ่านมาธุรกิจร้านกาแฟตกเป็นกลุ่มเป้าหมายสำคัญที่หลาย ๆ ฝ่ายช่วยกันผลักดันให้ลด-ละ-เลิกการเสิร์ฟเครื่องดื่มด้วยแก้วพลาสติก หวังเป็นตัวช่วยแก้ปัญหาขยะพลาสติกในสภาพแวดล้อม

ในปีค.ศ. 2023 นี้ ธีมวันกาแฟสากลประจำปี พุ่งเป้าไปที่ 'ความยั่งยืน' ในกาแฟทุก ๆแก้วที่ชงดื่มกัน ตอกย้ำถึงความสำคัญของการผลิตและการบริโภคกาแฟที่ยั่งยืน

ถ้าคลิกเข้าไปชมในเว็บไซต์ขององค์กรกาแฟสากล www.ico.org จะพบว่ามีการรณรงค์แคมเปญ #CoffeePeople และมีการเปิดประเด็นขึ้นมาในหัวข้อ 'การส่งเสริมสิทธิที่จะมีสภาพแวดล้อมการทำงานที่ปลอดภัยและดีต่อสุขภาพในซัพพลายเชนหรือห่วงโซ่อุปทานกาแฟ' เพื่อให้คนทั่วโลกได้แสดงความคิดเห็นร่วมกัน

องค์กรกาแฟสากลระบุอีกว่า เพื่อเฉลิมฉลองความหลากหลาย, คุณภาพ และความทุ่มเทในทุก ๆ ภาคส่วนธุรกิจกาแฟ ดังนั้น วันกาแฟสากลจึงเป็นโอกาสสำหรับคนรักกาแฟในอันที่จะแบ่งปันความหลงใหลในตัวเครื่องดื่ม(กาแฟ) ตลอดจนตระหนักถึงและสนับสนุนการทำงานของเกษตรกรผู้ปลูกกาแฟหลายล้านคน รวมถึงทุก ๆ คนที่มีส่วนร่วมในการผลิต, จำหน่าย, ขายปลีก และให้บริการเสิร์ฟกาแฟ

แต่เนื่องจากคนอเมริกันเป็นผู้ชื่นชอบการจดบันทึกสถิติอะไร ๆ ที่เป็นครั้งแรกบนโลกใบนี้เอามาก ๆ เช่น สร้างหรือผลิตเป็นครั้งแรกดังนั้น คำว่าวันกาแฟสากลหรือวันกาแฟโลก ย่อมหนีไม่พ้นที่ถูกเว็บไซต์ในลักษณะที่เป็นสารานุกรมและเว็บไซต์ข้อมูลข่าวสารเครื่องดื่มกาแฟ ขุดค้นหาข้อมูลในอดีตมายืนยันการันตีกันว่า เคยมีการนำมาใช้เป็นครั้งแรกก่อนหน้าองค์กรกาแฟโลกหรือไม่ แล้วก็ไปเจอข้อมูล 'ครั้งแรก' ของวันกาแฟสากลอยู่หลายชุดด้วยกัน

เช่น ชื่อ 'วันกาแฟสากล' ถูกใช้ครั้งแรกโดยพิพิธภัณฑ์อาหารและเครื่องดื่มภาคใต้ ในนครนิวออร์ลีนส์ มลรัฐหลุยเซียน่า ซึ่งจัดให้มีการแถลงข่าวเมื่อวันที่ 3 ตุลาคม ปีค.ศ. 2009  เพื่อเฉลิมฉลองและเพื่อประกาศเทศกาลกาแฟนิวออร์ลีนส์เป็นครั้งแรก

ไต้หวันก็เคยจัดงานวันดังกล่าวเป็นครั้งแรกเช่นกันในปีค.ศ. 2009

ขณะเดียวกันก็มีข้อมูลเพิ่มเติมว่า ดูเหมือนองค์การกาแฟสากล สาขาประเทศจีน เคยจัดงานอีเว้นต์วันกาแฟสากลในรูปแบบของตนเองมาตั้งแต่ปีค.ศ. 1997 เข้าใจว่ามีเป้าหมายเพื่อส่งเสริมให้ชาวจีนหันมาเพิ่มการดื่มกาแฟแทนชา

นานไปกว่านั้น พบข้อมูลว่า ต้นกำเนิดของวันกาแฟสากลอาจย้อนหลังไปถึงปีค.ศ. 1983 เมื่อสมาคมกาแฟแห่งญี่ปุ่น จัดงานเทศกาลในประเทศแล้วประกาศว่าเป็นวันกาแฟสากล

จะโดยบังเอิญหรือตั้งใจก็ตาม 'วันพัมพ์กิ้นสไปซ์แห่งชาติ' (National Pumpkin Spice Day) ยอดเมนูประจำฤดูใบไม้ร่วงสุดป๊อปปูล่าร์ของสตาร์บัคส์ ก็ถูกกำหนดขึ้นในวันที่ 1 ตุลาคมของทุกปีเช่นเดียวกัน และเริ่มใช้ครั้งแรกเมื่อปีค.ศ. 2015 เช่นเดียวกั��วันกาแฟสากลเป๊ะ ๆ โดยมิได้นัดหมาย

นอกเหนือจากวันกาแฟสากลแล้ว ยังมี 'วันกาแฟแห่งชาติ' (National Coffee Day) เข้ามาเพิ่มเติมอีก เรียกว่ามีทั้งระดับโลกและระดับประเทศกันเลยทีเดียว ประเทศที่ประกาศจัดตั้งวันกาแฟแห่งชาติจนถึงวันนี้ก็มีร่วม ๆ 50 ประเทศ การกำหนดวันก็ให้ประเทศนั้น ๆ เป็นผู้ตัดสินใจกันเอาเอง

ส่วนใหญ่นิยมใช้วันที่ 29 กันยายน เช่น สหรัฐ, แคนาดา, สวีเดน, นอร์เวย์, อินเดีย, เกาหลีใต้ และฟิลิปปินส์ ส่วนวันที่ 1 ตุลาคมวันเดียวกับวันกาแฟสากลก็มีไม่น้อย เช่น ออสเตรเลีย,ญี่ปุ่น,มาเลเซีย,สิงคโปร์,เม็กซิโก,อังกฤษ และนิวซีแลนด์

สำหรับวันกาแฟแห่งชาติในประเทศไทย ผู้เขียนเข้าใจว่ายังไม่ได้มีการกำหนดขึ้นมาแต่อย่างใด ถ้าผิดพลาดเรื่องข้อมูลตรงนี้ไป ก็ขออภัยด้วยครับ

ในตลาดสหรัฐ ร้านกาแฟ, ร้านสะดวกซื้อ และร้านฟาสต์ฟู้ด นิยมทำแคมเปญ 'ส่งเสริมการขาย' แบบควบรวม 3 วันติด ตั้งแต่ 29 กันยายน-1 ตุลาคม แบรนด์ใหญ่น้อยต่างแข่งขันกันจัดโปรโมชันเครื่องดื่มกาแฟกันแบบคึกคักสุด ๆ เป็นประจำทุกปี ทั้งลดราคาเครื่องดื่มหน้าร้าน, แจกคูปองส่วนลดตามแอพพลิเคชั่น และแจกฟรี(แบบมีเงื่อนไข) ถ้าเป็นสมาชิกแบบผูกขาดของทางร้าน ก็ยิ่งได้ส่วนลดแหลกแจกแถมมากยิ่งขึ้น สุดแล้วแต่จะคิดแคมเปญดึงเงินลูกค้ากันขึ้นมาได้

รายใหญ่ ๆ ก็ประกอบไปด้วย ดังกิ้น โดนัท, แมคโดนัลด์, คริสปี้ ครีม, เวนดี้ส์, ทิม ฮอร์ตันส์, เคอริก, เซอร์เคิล เค และอื่น ๆ อีกมาก รวมไปถึงร้านกาแฟพิเศษอย่างบลู บอทเทิ่ล และพีสท์ คอฟฟี่ ก็ไม่พลาดเช่นกัน

ที่คึกคักไม่แพ้กันก็คือกลุ่มรีวิวเครื่องดื่มทางออนไลน์และสื่อท้องถิ่นประจำรัฐต่าง ๆ กลุ่มนี้มีภารกิจที่จะต้องรายงานว่า ร้านหรือคาเฟ่แห่งไหนเสนอส่วนลดแบบจัดหนักจัดเต็มอย่างไรให้ลูกค้ากันบ้าง แล้วก็นำไปเปรียบเทียบว่าโปรโมชั่นของค่ายใดคุ้มค่ามากที่สุดที่จะเดินเข้าไปซื้อเครื่องดื่มเพื่อเฉลิมฉลองวันกาแฟดังกล่าว เรียกว่าเป็น 'ข่าวไฮไลต์' ที่สามารถเรียกยอดไลค์ยอดแชร์ได้มากทีเดียว

จะอย่างไรก็ตาม ไม่ว่าจะเป็นวันกาแฟสากล, วันกาแฟแห่งชาติ หรือวันไหน ๆ ก็ตาม ก็ขอเพียงมีโอกาสได้ดื่มกาแฟกันอย่างมีความสุข ที่สำคัญขอให้มีการผลิตและการดื่มกาแฟอย่างยั่งยืนตลอดไป ตามคำขวัญคำประกาศขององค์กรกาแฟสากล

1 October is International Coffee Day. Celebrate with the 77 Member States of the ICO and dozens of coffee associations from around the world.

International Coffee Day is a celebration of the coffee sector’s diversity, quality and passion. It is an opportunity for coffee lovers to share their love of the beverage and support the millions of farmers whose livelihoods depend on the aromatic crop.

Many countries around the world celebrate their own national coffee days at various dates throughout the year. In March 2014, the Member States of the ICO agreed to organize International Coffee Day on 1 October to create a single day of celebration for coffee lovers around the world.

On International Coffee Day 2024, the International Coffee Organization Invites the Coffee Sector to Embrace Collaboration for Collective Action with the Message: ‘Coffee, Your Daily Ritual, Our Shared Journey”

In 2023, the International Coffee Organization (ICO) launched the #CoffeePeople campaign in partnership with ILO (International Labour Organization), a collaborative effort aimed at promoting safer and healthier working conditions for coffee workers globally.

The campaign, officially launched on International Coffee Day (1 October 2023), was embraced by the International Coffee Organization (ICO), with its Council designating “Joining forces for a safer coffee supply chain” as the official theme of its 2023 promotional activities.

𝗞𝗘𝗬 𝗠𝗘𝗦𝗦𝗔𝗚𝗘𝗦

The campaign emphasized several key messages:

1. Every coffee worker deserves a safe and healthy workplace.

2. Work-related injuries and diseases in coffee production are preventable.

3. Safe working conditions are essential for decent work.

4. Recognizing gender perspectives is crucial, given that 70% of coffee labourers are women.

5. Collective action and social dialogue are necessary to find solutions.
