A tasty sandwich with grilled chicken that has been marinated in a sour chimichurri sauce, fresh tomato, crisp lettuce, creamy avocado, and zesty red onion.

Ingredients: 2 boneless, skinless chicken breasts. 4 slices of sandwich bread. 1/2 cup chimichurri sauce. 1 avocado, sliced. 1 tomato, sliced. 1/4 red onion, thinly sliced. Lettuce leaves.

Instructions: Marinate chicken breasts in chimichurri sauce for 30 minutes. Grill or pan-sear chicken until cooked through, about 6-8 minutes per side. Toast sandwich bread slices until lightly golden. Spread chimichurri sauce on one side of each bread slice. Place grilled chicken on one slice of bread. Top with avocado slices, tomato slices, red onion, and lettuce leaves. Cover with another slice of bread. Slice sandwich in half and serve.
