These vanilla cupcakes with caramel butter frosting are a delightful treat for movie nights or any special occasion. The sweet caramel filling and fun movie treats on top make them a perfect indulgence.
Ingredients: 1 1/2 cups all-purpose flour. 1 1/2 tsp baking powder. 1/4 tsp salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 2 tsp vanilla extract. 1/2 cup whole milk. 1/4 cup caramel sauce.
Instructions: Preheat the oven to 350F 175C and line a cupcake tin with paper liners. In a mixing bowl, whisk together the flour, baking powder, and salt. Set aside. In a separate bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract. Gradually add the dry ingredients to the wet mixture, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined. Fill each cupcake liner about 2/3 full with the cupcake batter. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean. Let the cupcakes cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Once the cupcakes are completely cool, use a small spoon to make a small hole in the center of each cupcake, and fill it with caramel sauce. For the caramel butter frosting, beat together 1/2 cup of softened unsalted butter and 2 cups of powdered sugar until creamy and fluffy. Pipe the caramel butter frosting onto the cupcakes using a pastry bag or a Ziploc bag with a corner snipped off. Decorate the cupcakes with fun movie treats like popcorn, mini candy bars, and colorful sprinkles. Serve and enjoy!
