It was the middle of a recession. At the time, only about 1.5 percent of the American population was of Asian descent. Later that year, Vincent Chin, a Chinese-American, was beaten to death in Detroit by two white autoworkers who were reportedly angered by the success of the Japanese car industry. Asian-Americans, a disparate group of many origins that had historically not been recognized as a political force, came together to condemn the killing and speak in a collective voice. Today, as they again confront hate-fueled violence, Asian-Americans are the nation’s fastest-growing racial or ethnic group, numbering more than 22 million, nearly 7 percent of the total population. And there are 102 H Marts across the land, with vast refrigerated cases devoted to kimchi and banchan, the side dishes essential to any Korean meal. They’re part of a so-called ethnic or international supermarket sector estimated to be worth $46.1 billion, a small but growing percentage of the more than $653 billion American grocery industry. Many of these chains have a particular focus (H Mart’s is Korean products), but also attempt the difficult feat of catering to a variety of Asian-American groups with different tastes and shopping preferences. Mr. Kwon’s first store still stands in Woodside, with a blue awning that bears H Mart’s original name, Han Ah Reum. This is commonly translated from Korean as “an armful,” but has a poetic nuance, invoking warmth and care, as in an embrace. H Mart is “a beautiful, holy place,” writes the musician Michelle Zauner, who performs under the name Japanese Breakfast, in her new memoir, “Crying in H Mart,” published last month. The book begins with her standing in front of the banchan refrigerators, mourning the death of her Korean-born mother. “We’re all searching for a piece of home, or a piece of ourselves.” As the 20th-century philosopher Lin Yutang wrote, “What is patriotism but the love of the food one ate as a child?” For an immigrant, cooking can be a way to anchor yourself in a world suddenly askew. There is no end to the lengths some might go to taste once more that birthday spoonful of Korean miyeok guk, a soup dense with seaweed, slippery on the tongue, or the faintly bitter undertow of beef bile in Laotian laap diip (raw beef salad). When Vilailuck Teigen — the co-author, with Garrett Snyder, of “The Pepper Thai Cookbook,” out in April — was a young mother in western Utah in the 1980s, she ordered 50-pound bags of rice by mail and drove 150 miles to Salt Lake City to buy chiles. She had no mortar and pestle, so she crushed spices with the bottom of a fish-sauce bottle. Around the same time, Thip Athakhanh, 39, the chef of Snackboxe Bistro in Atlanta, was a child in a small town in east-central Alabama, where her family settled after fleeing Laos as refugees. They fermented their own fish sauce, and her father made a weekly trek to Atlanta to pick up lemongrass and galangal at the international farmers’ market. The essayist Jay Caspian Kang has described Americans of Asian descent as “the loneliest Americans.” Even after the government eased restrictions on immigration from Asia in 1965, being an Asian-American outside major cities often meant living in isolation — the only Asian family in town, the only Asian child at school. A grocery store could be a lifeline. When the writer Jenny Han, 40, was growing up in Richmond, Va., in the ’90s, her family shopped at the hole-in-the-wall Oriental Market, run by a woman at their church. It was the one place where they could load up on toasted sesame oil and rent VHS tapes of Korean dramas, waiting to pounce when someone returned a missing episode. A few states away, the future YouTube cooking star Emily Kim — better known as Maangchi — was newly arrived in Columbia, Mo., with a stash of meju, bricks of dried soybean paste, hidden at the bottom of her bag. She was worried that in her new American home she wouldn’t be able to find such essentials. Then she stumbled on a tiny shop, also called Oriental Market. One day the Korean woman at the counter invited her to stay for a bowl of soup her husband had just made. “She was my friend,” Maangchi recalled. The H Mart of today may be a colossus, but it remains a family business. Mr. Kwon, 66, has two children with Elizabeth Kwon, 59, who grew up two blocks from the Woodside shop (where her mother still lives) and oversees store design. From the beginning, it was important to her that the stores were clean, modern and easy to navigate, to defy the stereotype of Asian groceries as grimy and run-down. “It’s so emotional, shopping for food,” said her son, Brian Kwon, 34. “You don’t want to be in a place where you feel like you’re compromising.” He never intended to devote his life to the store. But not long after he went abroad to take a job in Seoul — seeking to improve his Korean — his father asked him to come home and look over the company’s books, to make sure everything was running smoothly. It was, as Mr. Kim of the Canadian TV show “Kim’s Convenience” might say, a sneak attack. Once Brian Kwon entered the office, he never left. “My father called it his ‘golden plan,’ after the fact,” he said ruefully. He is now a co-president, alongside his mother and his sister, Stacey, 33. (His father is the chief executive.) For many non-Asian customers, H Mart is itself a sneak attack. On their first visit, they’re not actually looking for Asian ingredients; customer data shows that they’re drawn instead to the variety and freshness of more familiar produce, seafood and meat. Only later do they start examining bags of Jolly Pong, a sweet puffed-wheat snack, and red-foil-capped bottles of Yakult — a fermented milk drink that sold out after it appeared in Ms. Han’s best-selling novel-turned-movie “To All The Boys I’ve Loved Before.” To be welcoming to non-Koreans, H Mart puts up signs in English. At the same time, the younger Mr. Kwon said, “We don’t want to be the gentrified store.” So while some non-Asians recoil from the tanks of lobsters, the Kwons are committed to offering live seafood. Deuki Hong, 31, the chef and founder of the Sunday Family Hospitality Group, in San Francisco, remembers the H Mart of his youth in New Jersey as “just the Korean store” — a sanctuary for his parents, recent immigrants still not at ease in English. Everyone spoke Korean, and all that banchan was a relief: His mother would pack them in her cart for dinner, then pretend she’d made them herself. Later, as a teenager, he started seeing his Chinese- and Filipino-American friends there, too, and then his non-Asian friends. Spurred by postings on social media, young patrons would line up to buy the latest snack sensation — “the snack aisle is notorious,” Mr. Hong said — like Haitai honey butter chips and Xiao Mei boba ice cream bars. (The current craze: Orion chocolate-churro-flavored snacks that look like baby turtles.) In “Mister Jiu’s in Chinatown,” a new cookbook by the chef Brandon Jew and Tienlon Ho, Mr. Jew, 41, recalls Sunday mornings in San Francisco with his ying ying (paternal grandmother in Cantonese), taking three bus transfers to traverse the city, on a mission for fresh chicken — sometimes slaughtered on the spot — and ingredients like pea shoots and lotus leaves. He still prefers “that Old World kind of shopping,” he said, from independent vendors, each with his own specialties and occasional grouchiness and eccentricities. But he knows that the proliferation of supermarkets like H Mart and 99 Ranch makes it easier for newcomers to Asian food to recreate his recipes. “Access to those ingredients leads to a deeper understanding of the cuisine,” he said. “And that in turn can become a deeper understanding of a community and a culture.” These days, even mainstream markets carry Asian ingredients. Ms. Teigen, who now lives in Los Angeles, often buys basics like fish sauce, palm sugar and curry paste from the Thai section at Ralph’s. Still, she goes to 99 Ranch for coconut milk, whole jackfruit and, above all, garlic in bulk — “a giant bag that I can use for months.” (Garlic is an urgent matter for Asian-Americans: Ms. Zauner, 32, writes in “Crying in H Mart” that the store is “the only place where you can find a giant vat of peeled garlic, because it’s the only place that truly understands how much garlic you’ll need for the kind of food your people eat.”) But Meherwan Irani, 51, the chef of Chai Pani in Asheville, N.C., and Atlanta, feels that something is lost when you buy paneer and grass-fed ghee at a Whole Foods Market. You miss the cultural immersion, he says, “getting a dunk and having horizons broadened.” “An Indian grocery is not just a convenience — it’s a temple,” he said. “You’re feeding the soul. Come in and pick up on the energy.” In the TV special “Luda Can’t Cook,” which premiered in February, Mr. Irani takes the rapper Ludacris to Cherians, an Indian supermarket in Atlanta. Once Mr. Irani had to scrounge for spices like cumin and turmeric at health food stores; now, surrounded by burlap sacks stuffed with cardamom pods and dried green mango, he tells Ludacris, “This is my house.” The writer Min Jin Lee, 52, remembers how important H Mart was to people working in Manhattan’s Koreatown in the ’80s, when it was still called Han Ah Reum and “tiny, with almost no place to negotiate yourself through the aisles,” she said. (It has since moved across West 32nd Street to a larger space.) Her parents ran a jewelry wholesale business around the corner, and relied on the store for a cheap but substantial dosirak (lunch box) that came with cups of soup and rice. She sees the modern incarnation of the store as a boon for second- and third-generation Korean Americans, including thousands of Korean-born adoptees raised by white American parents, who “want to find some sort of connection to the food of their families,” she said. “There aren’t gatekeepers to say who’s in or who’s out.” Maangchi moved to Manhattan in 2008, and used to buy most of her ingredients from one of the H Marts in Flushing, Queens. (These days she just walks to Koreatown.) To save money, she would take the subway, bringing an empty backpack and her own shopping cart, then walk for 20 minutes. “Once I get there, my heart is beating,” she said. On the way home, she’d stop at a barbecue spot and drink soju. “Come home drunk,” she said with a laugh. Sometimes when she’s at H Mart, one of her more than five million YouTube subscribers recognizes her and flags her down. Those seeking advice (or a photo op) are mostly non-Korean. But, she said, there are also “old ladies who come up to me and say, ‘I forgot everything — I left Korea long ago.’” Recently, with the rise in incidents of violence against people of Asian descent, her fans have been sending her messages: “Maangchi, I’m so worried about you these days.” This is the paradox: that at a time when Americans are embracing Asian culture as never before, at least in its most accessible forms — eating ramen, drinking chai, swooning over the K-pop band BTS — anti-Asian sentiment is growing. With visibility comes risk. Dried Legumes (beans, lentils, peas): cheap, wholesome source of protein (canned beans are especially convenient)
Salt
Vinegar: (wine and cider are most useful) brightens the taste of most foods, also aids in food preservation
Oil: regular olive oil is indispensable in most kitchens, but households that often fry foods at high temperature might also want one with a higher smoking point (you can use regular olive oil in baking and no one will ever know)
Pasta: one might argue that whole grains fill this role, but there are times when an hour is too long to wait for dinner, and its cost is hardly prohibitive
Preserved Vegetables: canned tomatoes, corn, beans, can be combined for a quick meal, or for emergency provisions

Important note: store your onions, garlic, and potatoes separately. The onions will cause the potatoes and garlic to sprout and eventually rot. It isn't economy if you have to keep throwing food away because it's gone bad.
Cold Storage:
Cabbage: Can be served cooked or raw, seasoned in any number of ways, and lasts for weeks when kept cool, even if pieces are cut off. The edges will discolor after a few days, but pare off the discolored part and the rest will be fine. Only discard when it starts to feel soft.
Carrots: delicious, nutritious, inexpensive, and last for weeks
Lemon Juice: Versatile for cooking, but a splash of it makes tap water more palatable
Eggs: an ingredient in many recipes, but a quick meal in their own right
Worcestershire Sauce

Spices and Herbs: Seasonings are expensive, but they last for a long, long time and add vital variety to the most boring diet. I consider the following essential. Others might disagree. My list excludes dill and tarragon because I dislike the taste, but many people would consider both essential.

Wrap "protein" foods first in kitchen foil to exclude air from the surface to prevent freezer burn, then bundle like items together in large resealable bags. Label all food going into the freezer with the contents and the date. Some food is best if you cook it straight from the freezer (frozen pizza, anyone?), but for solid foods that need defrosting, thaw food rapidly and safely in cold water. For larger items such as a whole chicken, put the item in a large bowl, cover with cold water, and thaw in the refrigerator. It will still thaw faster than it would in the refrigerator without the water, and much more safely than it would at room temperature.
A well-stocked pantry can get you through just about anything from surprise guests to an unexpected month without income. Just be sure to rotate your stock so you aren't using the carrots you just bought while last month's gets moldy in the crisper drawer.

Pisces February Imbolc – A New Beginning

Celebrated on February 2nd, Imbolc or Imbolg, (pronounced “IM-bulk” or “EM-bowlk”), also called Oimealg, (“IM-mol’g), by the Druids, is the festival of the lactating sheep. It is derived from the Gaelic word “oimelc” which means “ewes milk”. Herd animals have either given birth to the first offspring of the year or their wombs are swollen and the milk of life is flowing into their teats and udders.
It is the time of Blessing of the seeds and consecration of agricultural tools. It marks the centre point of the dark half of the year. It is the festival of the Maiden, for from this day to March 21st, it is her season to prepare for growth and renewal. Brighid’s snake emerges from the womb of the Earth Mother to test the weather, (the origin of Ground Hog Day), and in many places the first Crocus flowers began to spring forth from the frozen earth.
The Maiden is honoured, as the Bride, on this Sabbat. Straw Brideo’gas (corn dollies) are created from oat or wheat straw and placed in baskets with white flower bedding. Young girls then carry the Brideo’gas door to door, and gifts are bestowed upon the image from each household. Afterwards at the traditional feast, the older women make special acorn wands for the dollies to hold, and in the morning the ashes in the hearth are examined to see if the magic wands left marks as a good omen.
Brighid’s Crosses are fashioned from wheat stalks and exchanged as symbols of protection and prosperity in the coming year. Home hearth fires are put out and re-lit, and a besom is place by the front door to symbolise sweeping out the old and welcoming the new. Candles are lit and placed in each room of the house to honour the re-birth of the Sun.
Another traditional symbol of Imbolc is the plough. In some areas, this is the first day of ploughing in preparation of the first planting of crops. A decorated plough is dragged from door to door, with costumed children following asking for food, drinks, or money. Should they be refused, the household is paid back by having its front garden ploughed up.
In other areas, the plough is decorated and then Whiskey, the “water of life” is poured over it. Pieces of cheese and bread are left by the plough and in the newly turned furrows as offerings to the nature spirits. It is considered taboo to cut or pick plants during this time.
As with all the Sabbats it is a time to celebrate the changes in the land around us. It is important to be outside to see, feel, smell, and appreciate the way that nature is changing, to pay our respects to the Gods and to seek their guidance for the coming season.
You can either take a walk to a favourite place, where you will be able to appreciate the changes around you, or as this is a time of new beginnings, it can be interesting to take a new route. Whichever your choice, take with you a small amount of spring water, or collected rain water. As you go, take care to notice the signs of new life and growth and wherever you see new shoots, buds, or leaves sprinkle a few drops on the plant and give thanks to the Goddess.
If you should come across a well or a spring, take the time to make an offering to the waters within. If you have finished the water you brought then your offering should be something which will not contaminate the water in any way. Where a tree grows close to this water you can also tie a single hair to one of its branches and ask for a Blessing for yourself or someone close to you.
If you should be lucky enough to pass grazing land look out for the first lambs of the year. If you see your first lamb of the year on this day you can make a wish.
As this is a time of new life and growth, it is appropriate to plant bulbs or flowers or to sow seeds. However, you will need to use your judgement and some local knowledge to decide whether to actually do so at Imbolc or whether to wait a week (or several) until the last frosts have passed. Of course seeds can often be started indoors and planted out a month or so later.
A word of caution here – if you are unlucky and your seedlings or plants fail, try not to read anything ‘significant’ into this. Unless and until you are an experienced and seasoned gardener, or unless you naturally have ‘green fingers’ you are quite likely to have a less than impressive success rate the first few times.
If you don’t have access to a garden, you can always choose an indoor plant to nurture. Many of the herbs that Witches use in their Magic, as well as their kitchen, will grow quite happily on a window sill. Rosemary and lavender are perhaps the two most useful, as well as having a pleasant scent all year round.
Celebrating Imbolc can be as easy as saying a prayer or as complicated as doing an elaborate ritual. The thing to remember is that it be meaningful and done with intent. Remember also that the Imbolc season runs through the actual day of Imbolc until the Spring Equinox; if you miss the exact day, you haven’t missed out on celebrating. The following is a list of activities to do alone, with a partner, or with your child to honour nature and deity as we travel ever closer to spring.
Activities for Imbolc:
Create a family Imbolc altar, using the correspondences for Imbolc
Pick a God or Goddess that is traditional to the season, and create a page about him/her for your book of shadows.
Create an art journal page for your chosen deity.
Help your children create a poster about the season to display.
Create a feast using the traditional ingredients of Imbolc
Imbolc is a time of new beginnings. It’s also a good season for divination. Choose a form of divination you are interested in, and start learning how to practice it.
At sunset on Imbolc, light as many lights, lamps and candles as you can, to inspire the sun to shine and spring to come.
If you still have greens in your home from Yule, now is the time to add them to your ritual fire.
Leave buttered bread out in your home on February 1st to feed the faeries who are travelling on this night. Dispose of the bread in the morning, as the essence of the bread has been consumed. (This is especially fun for kids, similar to leaving cookies out for Santa.)
Create a door decoration containing three ears of dried corn, representing the Maiden, the Mother and the Crone. Leave it up until Ostara.
Make a wand. Priapic wands (those topped with an acorn) are especially traditional.
Make dream pillows for each member of your home.
Take the kids out for a walk, and look for signs of spring: bulbs starting to come up, birds or squirrels out, grass starting to grow, etc..
The goddess Brigid is said to walk the earth on Imbolc Eve. Leave out strips of cloth outside to receive her blessing. The cloth is said to then contain the powers of healing and protection.
Rake the ashes in the hearth smooth before bed on Imbolc Eve. It is said that if the ashes are disturbed in the morning, Brigid has visited to give her blessings.
Make candles for the year.
Anoint your candles for the rest of the year with consecration oil. A simple, all-purpose anointing oil can be create with 2 parts frankincense essential oil, and 1 part myrrh essential oil.
Make a corn doll.
Create Bride’s bed (also known as “Brede’s bed, or Brighid’s bed). Bride’s bed is a small box or basket in which you place a cloth liner and a corn doll. Bride’s bed can be left on the altar throughout the festival or left out until Ostara. Between seasons, it can be placed in the home for protection. The attic of the house is a perfect spot to place the bed.
Spring clean your home and follow with a ritual cleansing or smudging.
Cleanse and reconsecrate your ritual tools.
Bless seeds that are headed for the garden in spring.
Do fertility work.
Cleanse and consecrate your gardening tools.
Do weather predictions (see box).
Cleanse and consecrate your divination tools.
Make and display Brigid’s Cross.
Help your kids make butter and discuss the importance of dairy on this sabbat.
Imbolc is a time of new beginnings; a great time to start new family traditions involving the sabbats and seasons. Whether you use the above suggestions or create something new, getting family and kids involved can make the sabbat even more meaningful and joyous.

Hi everybody! I just uploaded a new YouTube video! Woohoo!
Vlog #3 essentially captures everything that I did and ate leading up to my one-year vegan anniversary, which was Friday, August 24th, the official day I became vegan and the start of not eating anymore animal products for good! Just to clarify, vegan anniversaries are a special commencement that vegans alike love to celebrate annually. The first day of being a vegan is very important to us because it marks such a wonderful life change!
This video really highlights the food and includes some bits and pieces of my potato face and awkward personality, so you can enjoy that too. Oh yes, and I’ll admit that lately I have been obsessed with Luis Fonsi’s music. No shame! 😉 I highly encourage you to watch the video, but if you want a more in-depth peek into my week, then keep scrolling down (fortunately for you all, there won’t be any cringey dancing involved)!

Wednesday started off perfectly with two juicy nectarines and an incredible workout that followed this snack! I have been hooked on peaches and nectarines lately, and I will be devastated when they go out of season! I might miss them even more than figs, which says a LOT!
Post-workout munchies really started to kick in around four hours later and I wanted something really quick and easy. This meal took less than ten minutes to make! Everything is basically cooked edamame spaghetti that I sauteed with two LARGE handfuls of spinach, a bit of curry powder, and a splash of low sodium organic soy sauce! Even though this dish is really simple, it’s going to get its own recipe post because it’s insanely delicious! This kept me so satiated until I headed out to hang out with Cory (follow him on Instagram too!)!
Just HAD to sneak in another nectarine. Yep, I’m addicted.
Pomegranate was the main destination my dad dropped me off at so I could see my vegan Instagram pal Cory! Basically, Pomegranate is a completely plant-based cafe that serves deli and hot-bar items, as well as a small selection of desserts! Unfortunately, Cory and I were under the impression that Pomegranate was mainly a bakery, not a cafe, hence we were very underwhelmed with the array of desserts provided. However, we did not leave empty-handed–I bought this “sweet” chocolate cake that happens to be completely sugar free! WHAT?! Anyways, overall, had I known that this cafe serves more lunch-based items than desserts, I would probably have had a better experience. I will definitely come back to try more, but because we were disappointed with the small selection that day, we hopped in Cory’s vehicle and drove to an old favorite, Pressed Juicery.
On the way to Pressed, Cory and I tried some of the miso almond cookies that he bought from Pomegranate! This cookie was absolutely to die for–slightly salty and tangy from the miso, but sweet and mild with a nutty aftertaste as well. Definitely on the smaller side for a cookie, but it’s totally worth a try!
Looks like we were made to come to Pressed Juicery, because it had this amazing $1 deal for their smallest size (they only have two sizes: one is 4-6 ounces and the other is 8-10) that day! My first size 1 consisted of their vanilla freeze with strawberries and a little pink sea salt, which I paired with the sugar free chocolate cake!
Combination-wise? Oh. My. Goodness. The cake was really creamy and slightly firm from its different layers of goodness! It’s definitely richer than sweetener, so if you are sensitive to bitterness, this is not the cake for you. However, the sweetness from the dates in the vanilla freeze balances out the bitter chocolate in the cake, so do have the cake with something sweet!
Had a lot of fun topping everything off!
Ever tried leave-in-the-oven-and-go-do-something-else-while-it-bakes meals? Well, this is exactly what those meals are! Anyways, I roasted some organic firm tofu and heaps of Brussels sprouts at 450F for around forty minutes, and then paired everything with organic and low sugar sweet and sour sauce. This was absolutely to die for, even though this dish is incredibly simple! Problem is, the Brussels sprouts left quite a stench in the kitchen. Remember: roasted Brussels sprouts are parent-disapproved.

Farewell, nectarine. Hello, workout! As a quick pre-workout snack, I demolished the last nectarine in our fridge! As you can see, I’m absolutely obsessed with stone fruits. My workout went really well as always. I haven’t had a sucky workout in a long time, and I think having a little fruit or carby snack really helps! (Obviously, everyone works differently. You might need more or less food!)
Talk about EPICNESS here. I made this AMAZING chocolate cake made with oat flour and butternut squash! No egg substitute, oil, nor gluten necessary! But yes, the chocolate is necessary. Otherwise, it’s not a chocolate cake. 😉

To frost the cake, I used one packet of Nutiva chocolate plant protein with 30 superfoods! With an amazing nutritional profile, this protein tastes wonderful! It’s definitely not very sweet, so you will have to add some Stevia or any kind of sweetener to taste. Texture-wise, it’s in between creamy and downright grassy, so I would say it’s around average when weighing in for vegan protein. Not my favorite in terms of palatable-ness, but the ingredients and macronutrients are A+!
My protein was used in my two-ingredient chocolate protein frosting recipe that I’m obsessed with, and went on top of the cake along with some goji berries and Nature’s Path pumpkin flax granola, which I bought in bulk at Costco!
Stay tuned, because I will be creating the recipe in a separate post very soon! But this cake was incredible–I had NO complaints whatsoever. You bet I ate the entire cake too.
Kettle corn has to be my favorite kind of popcorn! After a few hours, my mother and sisters came back from Whole Foods and bought some Boom Chicka Pop! light kettle corn and finished the last of the bag as a midday snack. This treat was really crunchy, perfectly sweetened, and had just the right amount of saltiness!
Corn-flake cravings started to really kick in, hence I made a bowl of corn flakes but mixed in some of that same Nutiva chocolate superfoods protein blended in water and liquid Stevia! Even though this snack was so simple, I absolutely love the taste of it! Crunchy with a hint of chocolate goodness–YES. That’s all I can say.
Twisted things up around dinnertime when my mother decided to boil and chill some buckwheat soba, which I paired with nori, black and white sesame seeds, and some Japanese-style spinach (unpictured). If I had to pick a favorite type of grain (or seed?) based pasta, buckwheat soba would definitely win. But I have tried quinoa pasta before, and that is also absolutely delicious!

While protein “mylk” with cereal is much more popular as a post-workout meal among fitness influencers, I actually whipped it up half an hour before exercising! This tasted as delicious as it did the previous day. Also, is it weird that I actually like cereal that’s slightly soggy? Of course, there has to be some crunchiness, but the softness in the majority of the flakes really appeal to my tastebuds! Call me crazy, but I love soft cereal!

For DAYS, I had to fend off a pizza craving I couldn’t satisfy because I didn’t have my car to drive anywhere nearby to buy ingredients or order one for myself! Once I peeked at the menu, I decided to create my own masterpiece. I stuck with their signature thin crust, which was spread with spicy tomato sauce, green bell peppers, red onion, spinach, pickled jalapenos, cherry tomatoes, basil, garlic, mushrooms, vegan sausage, and cilantro! Yes, I felt like eating gluten today. Yes, this pizza was SUPER spicy. No, I regretted nothing.

During my trip at Target in the local shopping mall, I bought a whole box of Health Warrior dark chocolate chia bars to taste! Honestly, they are now one of my favorite flavors EVER. Think of a brownie with a chia seed base. The bar is rich, fudgy, decadent, crunchy from the chia seeds and dark chocolate chips, and scantly sweet. Chocolate peanut butter probably still ranks #1, but watch out, because dark chocolate is climbing to the top fiercely!
Tofu makes a glorious appearance once again, but in the form of a lovely tomato dish! This recipe was actually inspired by the tomato fried tofu I gobbled all up back in Vietnam when we visited some family. Instead of frying the tofu, my mother and I decided to keep it plain and tossed it in a puree of tomatoes, garlic, and onions! Even though the result looks more like a stew than a stir-fry, taste and appearance are both incredible. I might like this one even more!

Dessert actually turned out to be my middle sister’s leftover vanilla Pressed Freeze! I was so grateful that she allowed me to finish it all, because I am addicted to this stuff. Everything was garnished with goji berries and more pumpkin flax granola, and I took pictures while impatiently waiting for the freeze to thaw out.
Can’t end a perfect vegan anniversary without chocolate, right? Hence, I made some more protein frosting with Nutiva chocolate protein and corn flakes to have on the side! I wouldn’t say that this protein tastes like Nutella, but hey, it does the job. I went to bed, absolutely grateful of everything I’ve had and experienced this day. Happy One-Year to me!
