“WHAT DIFFERENCE IS THERE BETWEEN A GLASS OF ABSINTHE AND A SUNSET?” —OSCAR WILDE
I call this DIY green-gold herbal libation the Gold Fairy in homage to that notorious spirit of the fin de siècle period, absinthe, which was known as la fée verte (the green fairy) because of its luminescent colour and mind-altering effects. This copycat version induces a similar languorous state of “lucid glow,” but I promise it won’t rot your brain. Quite the opposite. This Gold Fairy is a veritable life-enhancing elixir—consumed in moderation of course!
Absinthe is an intense dark-liquorice-flavoured drink traditionally made by infusing fennel, anise, and wormwood in distilled spirits, supplemented with herbs such as angelica, lemon balm, and peppermint. Originally a folk remedy and cure-all tonic, absinthe was first bottled and sold by an intrepid French entrepreneur in 1792. By the late 19th century it was so popular across Europe that the time between five and six p.m. was known as l’heure verte—the green hour.

Treasured by artists and writers from Oscar Wilde and Ernest Hemingway to Henri de Toulouse-Lautrec, Édouard Manet, and Pablo Picasso for its inspirational qualities, it was banned in 1915 in most of Europe as addictive, hallucinogenic, and responsible for criminal behaviour. While blame fell on the “brain damaging” chemical thujone found in the bitter herb wormwood, recent studies suggest the real culprit behind absinthe’s deleterious effects were the dyes, solvents, and chemicals often added to colour cheap absinthe. Wormwood is a key ingredient in many herbal spirits and liqueurs (such as vermouth), all of which are commonly consumed without madness.
My Gold Fairy stays true to the flavors and herbs of the original but is more of an Absinthe Light. Normally created by infusing herbs in distilled spirits twice, the final alcohol content of absinthe can be as high as 85 percent. My Gold Fairy dials that down by skipping the distillation process altogether. I simply infuse roughly chopped herbs in vodka for a few days to extract enough flavor and chlorophyll to give it absinthe’s characteristic taste and light green colour.
I start with plenty of fresh lush emerald fronds of wild fennel to give my Gold Fairy both colour and flavour. This highly aromatic anise-flavoured herb originates from the Mediterranean and has now naturalised as a weed across the world. Look for it growing in your neighbourhood or in hot sunny spots at the seashore. I also add a few leaves of the garden herb sweet cicely, some leaves and chopped stems of angelica for floral perfume, peppermint and lemon balm leaves for herbal deliciousness, and of course a small sprig of wormwood to bring touch of bitter depth.
All these herbs are renowned as anti-inflammatory and hormone balancing, plus they support digestion and boost the immune system. So I infuse my mixture longer—two weeks total—to enhance the flavour and extract more of the plants’ medicinal qualities. This will darken the liquid to a deep gold colour.
Since all the herbs in my Gold Fairy support digestion, it is an ideal aperitif or after-dinner digestif. And the herbs share another important quality: They are aromatics that possess both relaxing and stimulating properties. In other words, this Gold Fairy is the perfect relaxing tipple on sultry summer evenings. Just a few sips bring on that special glow—without putting you to sleep!
Most of these are common garden herbs that can be purchased at your local farmers’ market or herb store. Don’t worry if you don’t have them all, and feel free to throw in other aromatics that inspire you! You can use dried plant material, but I like herbs fresh-picked and glowing with all the magical viriditas of summer.
You can sip your Gold Fairy straight up, add a little water to dilute, even stir in a little sugar or honey to sweeten. It’s up to you. Salut!

Ingredients
1 750 ml bottle of vodka 1½ cups fennel, roughly chopped 1 tablespoon anise seeds 1 sprig wormwood or mugwort. How big is up to you—remember it’s bitter! ½ cup roughly chopped lemon balm 3 or 4 sprigs of peppermint ½ cup angelica leaves and stems, roughly chopped
Directions Roughly chop your herbs.
Place chopped herbs in a large mason jar and pour in the bottle of vodka. Press down on the herbs with a fork or spoon so they are fully submerged.Cap and let sit in a dark spot for three to four days, or up to two weeks if you’d like the stronger version.Strain the plant material with a sieve.Then restrain through a coffee filter or fine muslin cloth to remove any remaining particulate.Store in a dark place. When exposed to light, the chlorophyll will gradually oxidise, deepening the colour to a darkish golden brown.

Low winter temps are quickly spreading across our country. The other day I was so cold nothing seemed to warm me. I pulled a packet of hot cocoa from my cabinet and added hot water. The heat permeating from the cup began to warm me but after the first sip… I was so disappointed. TOO sweet! Soon after finishing the cup I could feel a headache approaching, one that lasted throughout the following day. This experience inspired a DIY hot cocoa, to my preferred sweetness and flavor, for the perfect winter-warm-up!! And…SUCCESS after a few failed attempts. While enjoying a cup of cocoa and considering many other flavored options, an idea to host a Hot Cocoa Bar came to mind to share the creative sweetness and fun, for all ages! This post will share how you can make your own individual serving of hot cocoa or whip-up a party size pot for guests to customize to their palate! Let’s look at the origins of hot cocoa to appreciate this traditional winter cozy drink and then enjoy reading through the unique options for hot cocoa creations!
The Cocoa Drink Debut 
The credit for hot cocoa goes to the Mayan civilization, dating back to 500 BC made from ground cocoa seeds and water. At that time, the drink was enjoyed cold and it was made with spices and chili peppers. Cortez, the explorer, brought cocoa seeds to Spain in the 1500’s where the cocoa drink became popular among the elite and the first to serve it hot without chili. It wasn’t until the 1700’s that it became trendy in London and the cocoa was mixed with milk instead of water, served warm as an after-dinner drink. In the early 1900’s it became a drink cherished by Americans, served in most coffee houses and also enjoyed today as a blended café mocha experience.
My homemade test batch that came out great!
Raspberry Almond Cinnamon Hot Cocoa – Individual serving is best using a small sauce pan. Add the following ingredients 1 through 6 below.
1 cup Light Almond Milk (Love the creamy texture! I use Silk Brand Light Almond Milk sold at most grocery stores. If concerned about nut allergies use regular milk or soy.)
1 Tablespoon Cocoa (I use Hershey’s Cocoa.)
1 Teaspoon Brown Sugar
1/8 tsp almond flavoring (or 1 drop from a dropper)
1/8 tsp Raspberry flavoring (or 1 drop from a dropper)
1/8 tsp cinnamon
2-3 white chocolate morsels to melt in the cocoa
Add toppings such as mini marshmallows or whip cream with shaved white chocolate and sprinkles.
Simmer 1-6 on low heat until it begins to slightly bubble. DO NOT BOIL. Turn off burner. Add the white chocolate morsels and toppings.
Party Size Raspberry Almond Cinnamon  – Serving for 16
2 each 1/2 gallon containers of Light Almond Milk or your preferred milk.
1 cup Cocoa (I used Hershey’s Cocoa.)
1/3 cup Brown Sugar
2 teaspoons almond flavoring
2 teaspoons raspberry flavoring
2 teaspoons cinnamon
Toppings – whip cream, shaved chocolates (white and dark) and any other on the list below.
Hot Cocoa Party Bar – LOVE this idea for the holidays!
Make a basic party size batch noted in green bold above.
Use bowls for the larger size toppings. Glass Mason jars are perfect for the smaller size toppings and spices. You can get fancy with your Cocoa bar. MODIFY, however, is about keeping things simple so it’s OK to use shakers from the original packaging to save time when using glass jars.
Flavorings and toppings to consider:
Flavorings, Non-Alcohol
Extracts – Suggest 1/8 teaspoon or 1-2 drops from a dropper per cup of hot cocoa. Best priced extracts and flavorings I have found are at Walmart. Winton or McCormick brands available in 2 oz sizes. CLICK HERE for available flavor listing. Suggest using a dropper to add flavors into the cocoa. Glass droppers are available at most craft stores and Amazon.com. Plastic soap droppers are great and less expensive. Michael’s carries plastic droppers, 5 droppers per package at $1.99. CLICK HERE for link. Suggest tossing the plastic droppers after the Cocoa Bar party is over.
Flavors to consider…Raspberry,  Anise,  Vanilla, Peppermint, Almond, Banana, Orange
Torani Syrups – Suggest 1 teaspoon or 3+ drops from a dropper per cup of hot cocoa. Select a few FUN flavor options for your party such as Crème de menthe, English Toffee or Shortbread. World Market sells a 3 pack sample size , which would be perfect for a Cocoa Bar. Smart and Final , Walmart, , and Amazon also carry Torani syrups.
Non-Dairy Creamers – Suggest 1 tablespoon per cup of hot cocoa. Any of the seasonal flavored non-daily creamers will work to top off your hot cocoa. Gingerbread, Pumpkin Spice, Peppermint, Hazelnut, to name a few.
Flavorings, Alcohol – Suggest 1 teaspoon per cup of cocoa.

Whip Cream (I prefer ReddiWip available at most grocery stores).
Since many of the toppings and flavorings are already sweetened, it is not necessary to add sugar to a cup of cocoa. Let your guests sweeten their cups, if needed, after their toppings have been added, by having a small bow of brown or granulated sugar available. Also suggest a sign offering measurement suggestions for the flavorings. An example… such as 1 drop for the extract flavorings or 1 tsp for liquors, etc.  You might also have a few recipes for each category, to help guests, too. Here are a few recipe options:
Raspberry Almond Cinnamon (recipe shared above), topped with whip cream, raspberry syrup drizzle and shaved white chocolate
Torina Shortbread, topped with whip cream, shaved milk chocolate, and sprinkles
Gingerbread non-daily creamer, topped whip cream, sprinkled with cinnamon and drizzled with caramel syrup
Grand Marnier, topped whip cream and shaved milk chocolate
Rum, with whip cream, topped with crushed toffee, drizzled with caramel syrup
