A lot of people are intimidated by thinking they don't have the correct cookware. This is flawed.
All you need to cook is bowls, a few basic tools, and like, a heating element. You do not need to be fancy, you do not need and instapot, and as long as you have a stove, you can feed yourself healthy, simple meals.
However, if you have disposable income for some tech, here are some that I recommend that save time, and you don't have to read the weird booklet that comes with it
An airfryer. Though gimmicky, this functions like a faster convention oven. You can also save yourself the headache of dealing with grease but still getting a fairly crispy results for a lot of frozen food, which you'll be dealing with a bit when I get recipes going. This one from Instapot even have recipes specifically made for using it, meaning less searching and more eating
A rice cooker. You can usually cook more than rice in these things and a few come with a steamer basket. Fantastic for set it and forget it.
A crockpot. Also great for set it and forget it. One often thing new cooks tend to do is leave food on the stove and burn it. You cannot burn food in a crockpot unless you make an effort to do so.
A cast iron pan. These are great for meats, but require care to keep functional. If you aren't down with seasoning and correctly up keeping this pan, you probably shouldn't get it.
An immersion blender. Ones that come with a whisk attachment are your friends. Great for people who don't want to dedicate to a large blender or a massive mixer. This one also has a mini food processor, which is INCREDIBLY useful.

Many single-layer cakes, though, are easy enough to make more frequently—and who doesn't want more cake in their life? Keep it simple enough and you can even enjoy cake on a weeknight, and with the right technique it's easy to make a single-layer cake that is just as satisfying as a fancier one. From chocolate cakes made in skillets and sheet pans to a gluten-free layer cake and romantic lava cake for two, keep reading for 17 of our favorite easy cake recipes.

These first couple of recipes don't even require a cake pan—this simple chocolate cake is baked in a cast iron skillet. The baking soda is activated by acidic ingredients like coffee and brown sugar, meaning that the batter can be made right in the skillet with no whipping, creaming, or beating. This traditional Sephardic cake is closely associated with Passover, but that doesn't stop us from making it year-round. Our Americanized version of the dish combines the typical almond flour and walnuts with grated apple. Chestnuts aren't exactly in season right now, but this is another dessert that I am happy to eat any month. You're probably familiar with pound cake recipes that call for equal weights of sugar, butter, eggs, and flour. That works fine, but definitely leaves room for improvement. Our recipe replaces some of the butter and eggs with sour cream (for better browning), uses a little more sugar than flour (for a more tender crumb), and adds a small scoop of baking powder (to prevent excessive doming).

I don’t know about you, but pork has always been the most challenging meat for me to cook perfectly in the oven.  When cooked properly, a nice thick pork chop can be an incredibly delicious, tender, juicy, and versatile cut of meat.  But when overcooked — which can happen in a matter of seconds — pork regrettably becomes the meal that you’re going to wish was over, chop-chop.  Oof.  Nobody likes a dried out pork chop.
Here’s the great news though — it’s actually surprisingly easy to cook pork chops perfectly.  And since “the other white meat” happens to also be one of the most affordable and versatile and lean proteins at the store, it’s definitely worth the effort to learn!  All you need is this simple basic method plus a few important tips.  I’ll show you. ♡
Baked Pork Chops Ingredients & Kitchen Gear:
To make this baked pork chops recipe, you will need:
Thick-cut pork chops: When it comes to purchasing pork chops, there are three important qualities to look for that I highly, highly recommend:
Thick-cut: Ideally, between 1 to 1.5 inches thick.  Thick-cut pork chops much easier to cook correctly than their thinner counterparts.  If your grocery store only offers really thinly-cut chops, just go to the meat counter and ask if they can double-cut them (cut them a bit more thick) for you.
Bone-in: I much prefer bone-in pork chops (specifically, rib chops or loin chops) because they have the most flavor.  But if you prefer the leaner boneless pork chops, those will work too.  Just be extra-careful not to overcook them.
Fresh: Be sure to also buy the freshest pork that you can find.  In general, you want to look for pork that is a deep reddish-pink or reddish-purple color, not grayish or white.  And the fat should be white and creamy, not dotted with dark spots.  It should also be pretty firm, and not soft and squishy.
Olive Oil: Or whatever your preferred cooking oil may be.
Kosher Salt: An essential ingredient in our brine, and also to season the pork.
Seasonings: I typically like to use a simple garlic powder, salt and black pepper seasoning blend with pork.  And then serve it up with lots of fresh lemon slices, to brighten up the flavors.  But feel free to use whatever other dry seasonings you like.
You will also need (affiliate links included):
An oven-proof skillet: I absolutely recommend a cast-iron skillet (or a cast-iron Dutch oven) if you have one, which will hold heat and cook the pork more evenly.  But if not, any oven-proof skillet that can sustain high heat will do.
Tongs: These will be essential for flipping the pork as it is searing.  I recommend these 12-inch tongs from OXO.
An instant-read thermometer: I really feel like this is a must with this recipe.  A cooking thermometer is the best way to ensure with 100% accuracy that your pork is not over- or under-cooked.  And it is just as helpful with cooking many other proteins besides pork too.  I recommend this:
Instant-read cooking thermometer: which I have owned and used for years when cooking pork, which retails for about $9.99 on Amazon. (Only downside is that it cannot be used inside the oven.)
Dual-probe wireless meat thermometer: which I also own and love because it can be used inside of a hot oven (especially helpful for baking pork, salmon, steak and chicken), which retails for about $24.99 on Amazon.
How To Make Baked Pork Chops:
As much as I would love to say that you can make perfectly baked pork chops by just popping them directly in the oven, I’ve just never had good luck with that method.  Instead, I’ve learned over the years that the secret is taking an extra 15 minutes (at least) to brine the pork.  Then giving it a quick sear on the stove before roasting it in the oven.  And then, as I mentioned above, using the help of a cooking thermometer to measure the internal temperature of the pork and ensure that it has reached the magical 145°F (62°C).  It may sound complicated, but I promise you — it’s easy peasy.  Simply:
Brine the pork.  In a large mixing bowl, combine warm water and kosher salt (about 1 tablespoon per cup of water) and stir until the salt is dissolved.  Submerge the pork chops in the saltwater and soak for at least 15-30 minutes, or up to 4 hours.  Remove the pork chops and rinse them off with cold water.  Then pat them dry with paper towels and place on a clean plate.
Season the pork.  Brush the pork chops on both sides with olive oil.  Then sprinkle with your desired dry seasonings.  (I like a mixture of garlic powder, kosher salt and black pepper.)
Pre-heat your skillet. Meanwhile, as you’re seasoning the pork, heat your skillet over high heat for about 5 minutes, until it is super-hot.  Once your pork is seasoned and your skillet is ready…
Sear the pork on one side.  Place the pork chops in the hot skillet (carefully, so that the oil doesn’t splatter).  Then give the tops of the pork chops a gentle press down with a spatula, so that the full bottom surface of the pork chops makes contact with the pan (instead of accidentally curving up).  Cook for 2-3 minute, or until the bottom of the pork chops are golden.  Then flip the pork chops over to the other side, and quickly…
Transfer pan to the oven and bake.  Carefully use an oven mitt to move the entire pan to the oven, where the second side of the pork will continue to sear.  Then bake for 3 minutes, flip.  And continue baking for 3-5 minutes more, or until the pork reaches an internal temperature of 145°F (62°C).  Remove the pan from the oven, and transfer the pork to a clean plate.  Use a pastry brush to brush any of those extra juices in the pan onto the pork chops (that’s where so much of the flavor is hiding!).  Then tent the plate with aluminum foil and…
Rest the pork.  Let the pork rest for 3-5 minutes, to lock those juices in.  Once the pork is ready to go…
Serve warm!  And enjoy!
Once the pork has been baked, it can be stored in a sealed container in the refrigerator for up to 3 days.  Or you can freeze it for up to 3 months.  (<– I recommend shredding, dicing or slicing the pork before freezing for easier use.)
**Also, one important note — the pork chops will definitely be pretty smoky as they are cooking!  So be sure to turn on an exhaust fan above your stove (if you have one) or open a window.
How To Season Baked Pork Chops:
Similar to chicken, pork does a brilliant job of adopting whatever flavors you choose to use in your seasonings. I’m a big fan of the simple garlic powder/salt/pepper mix in the recipe below, which goes with just about any cuisine.  But if you’d like to mix things up, feel free to sub in any of your favorite dry seasoning mixes, such as:
Italian Seasoning
Cajun Seasoning
Za’atar Seasoning
Taco Seasoning
Curry Powder
Caribbean Jerk Seasoning
And of course, feel free to also toss the baked pork chops with your favorite finishing sauces as well.

Baked Pork Chops
My favorite baked pork chops recipe — easy to make, nice and juicy, and easy to customize with your favorite seasonings.
Total Time: 40 mins
Prep Time: 28 mins
Cook Time: 12 mins
Ingredients:
4 bone-in, thick-cut pork chops (ideally about 1 to 1.5-inches thick)
2 tablespoons olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly-cracked black pepper
1/2 teaspoon garlic powder
optional: lemon wedges, for serving
Directions:
Brine: To brine your pork chops, fill a large bowl with 1 quart of warm (not hot) water and 1/4 cup kosher salt.  Stir to combine until most of the salt is absorbed.  Add the pork chops and let them sit in the mixture to brine for 15 minutes.  Or you can also also cover the bowl and refrigerate for up to 6 hours.  Remove the pork chops from the brine, rinse with cold water, then pat them dry with some paper towels.
Cook: Preheat oven to 375°F.
Brush the pork chops on both sides with olive oil
In a separate small bowl, whisk together the salt, pepper, and garlic powder until combined.  Sprinkle the mixture evenly on both sides of the pork.
Meanwhile, heat a cast iron skillet (or oven-safe sauté pan) on the stove over high heat for 5 minutes.  Once the pan is super-hot, add the pork chops and use a spatula to press them evenly into the pan, so that the entire bottom surface of the pork chops makes contact with the pan.  Cook for 2-3 minutes, or until the under-sides of the pork chops are golden brown. Carefully use tongs to flip the pork chops.  Then use an oven mitt to carefully transfer the skillet to the oven.  Continue baking for 3 minutes.  Then flip the pork chops once more, and continue baking for 3-5 minutes more, or until the pork reaches an internal temperature of 145°F (62°C).
Once the pork is ready to go, immediately remove the pan from the oven, and transfer the pork to a clean plate.  Brush any of the pan juices onto the pork chops.  Then loosely tent the plate with aluminum foil and and let the pork rest for at least 3 minutes.
Serve warm.  Or, refrigerate in a sealed container for up to 3 days, or freeze for up to 3 months.

Don’t expect a lengthy warranty on small tabletop models. In most cases, you’ll find that the warranty is three to six months long, but most low-priced models will not come with any type of warranty. When you’re backpacking, you’ll need to be more careful with your resources. The last thing you want to do is waste fuel, food, or water. When you’re setting up your camp, make sure you keep the stove on an even and smooth surface. Boiling pots can vibrate right off the surface of the stove and hit the ground. 
Some campers are on a tight budget, so it makes sense to save costs by cooking packaged food that’s purchased from a local grocery store. These foods are usually partially cooked instead of instant. 
If you’re dealing with foods that are tough to cook, such as whole grain pasta or parboiled rice, then try presoaking the food before using your stove. This can save big on fuel. The food should be soaked in cold water for ten to fifteen minutes. If you want to avoid wasting water, then use the same water that the food is presoaked in to boil it. You can use less water than what the package instructs. You can also try boiling the water first and then adding the ingredients, instead of presoaking.
Always set your stove up in a sheltered area. Even if your stove has a good windbreak system in place, cooking in a sheltered area can also help to prevent the flames from going out. 
The size of the pot you use also matters. Always use a pot that’s slightly wider or similar in size to the width of the stove’s burner. Narrow and tall pots can result in flames that spill over the sides of the pot. This will burn your cookware and can waste a lot of fuel. Cooking pots that are shallow with broad bottoms are a better bet. 
If you’re preparing dried ingredients, make sure that the water is boiling rapidly before you add them. 
When you’re boiling ingredients or just a pot of water, try to avoid lifting the lid to see if the water has reached a boil. This will allow the heat to escape and it will take longer for the pot to boil. This results in fuel waste.

My Review Of Cast Iron Skillets

Have you ever used a cast iron frying pan? Do you remember cast iron frying pans? Once, everyone had them and used them for all types of everyday cooking. Then aluminum and lightweight steel arrived, plus Teflon, and cast iron was tossed, well, on the scrap heap. However, in the last few years there has been a renaissance of thinking and cast iron frying pans are considered a must for a modern kitchen.
What Is Cast Iron?
Cast iron has been around for centuries and has been used for cooking just about that long. The process for making cast iron hasn't really changed, it's only more mechanized. Cast iron is made by blending steel and iron. The material is melted and certain chemicals are added to increase the carbon level. The molten material is poured into a mold and cooled. Once the metal has cooled, the mold is broken and the pan is smoothed to make it ready for cooking. Just think about how durable this material is. Iron and steel, two of the strongest materials on earth. Part of the resurgence in interest is because cast iron will last a long, long time. It used to be common to have pans passed down from generation to generation. Except for an occasional outbreak of rust (which can be treated) the pans never failed. Recently there have been some health concerns about different types of materials being used in modern cookware. Teflon and other non-stick treatments are being studied for any long term affects for ingesting the product (yes, you may have actually eaten Teflon). Anodized aluminum is known to give off emissions at high heat and copper cookware has been linked, unofficially, with certain heavy metal issues.
Seasoning A Cast Iron Pan
You have probably heard the phrase "seasoning the pan" when you have looked at cast iron. Seasoning is quite simple but quite necessary for the successful use of cast iron. Even if you have purchased an already seasoned pan, it never hurts to give it any treatment. First, wipe the pan clean and make sure the inside is perfectly dry. Next, soak some paper towel with vegetable oil and wipe every inch of surface inside the pan. Don't miss any spots, you will end up with areas that are constantly having food stick to it. Last, place the pan upside down on a baking sheet and place on the highest rack in your oven. Set the oven at 500 degrees and leave the pan in for one hour. After it has cooled, wipe down the inside again with a very light coat of oil. You have just seasoned your pan an it is ready to be used or stored.

An assist handle is the small grip across from the regular handle. You will be surprised at how often you use this. It's great for lifting the skillet from the stove to the table or when taking the skillet out of the oven.

-Made in the USA. Lodge is a family run business. -Pre seasoned with vegetable oil. You might want to season it again before using but it is ready to go out of the box. -A well designed handle. It's long enough to keep your hand away from the flame but not so long that the balance is bad. -The assist handle is a great feature.

-No lid. A lid is available but has to be purchased separately. -Pre seasoning may be erratic. Again, it's always a good idea to season any pan.

This large, pre seasoned cast iron skillet is part of the Amazon Basics collection. It's extremely well made, has both an assist handle and pour lips and is over 2" deep.

At 15" this is a very large skillet. If you are just looking to make a couple of eggs you may find this to be too large and heavy. However, if you are making 4-5 burgers or a couple of steaks, this is a great sized skillet.
Product Features
Another sturdy, durable cast iron pan. With a 2" depth you can deep fry most foods quite easily. The pour lips are useful for those times that you need to pour out a liquid and the assist handle is solid.
Advantages
-15" diameter allows for cooking of most any type of food. -An assist handle as well as pour lips on both sides of the skillet. -Pre seasoned at the factory.
Disadvantages

A different sized pan, this heavy duty 12" frying pan is rated safe to 500 degrees. Most people will never cook anything for any length of time at that temperature but this pan is tough enough to handle high heats.

One of the unique features of this cast iron frying pan is that it is seasoned with 100% non-GMO flaxseed oil. No artificial sprays or treatments, the company uses a safe, natural oil that is a good seasoning ingredient for cast iron. At 12" this pan is between a skillet and a frying pan (descriptions always vary when discussing diameters of pans). It's a perfectly sized pan for most cooking and the handle design is outstanding. The balance is perfect and this pan is easy to handle, even when filled with food.
Advantages
-Seasoning is done with non-GMO flaxseed oil. -This pan has an assist handle as well as 2 pour lips for convenience. -An extremely well designed handle. Even though this pan weights 6 pounds it is very easy to handle.
Disadvantages
-Again, no lid. Glass lids are supposed to be available within the next year. -While seasoned with flaxseed oil, some customers report that the coverage is erratic. -Not quite as deep (under 2") as some other frying pans.

Best Cast Iron Frying Pans Buying Guide
Should you buy a cast iron pan? The short answer is yes. They are inexpensive, easy to use and last forever. The longer answer is still yes but there is a bit more work involved with cast iron as opposed to other cookware made with different materials.
Kitchen Utensils
No matter what you hear, never use metal utensils with a cast iron pan. There are some who claim that they have been using a metal turner or pancake flipper with no problems. Ignore them. You can gouge the pan easily using metal tools. For best results with cast iron cooking you should always use wooden or silicone rubber kitchen utensils. They may take a bit more work when it comes to scraping your pan but in the long run your pan will be much better for the effort.
Cleaning
No dishwasher for you cast iron pan. Ever. Never, ever, ever. Warm water and an occasional drop of dish washing soap will take care of your pan. The best way to clean cast iron is to wipe it clean. We have become so germophobic that some people shudder at the thought of not putting a cooking tool into a 300 degree dishwasher and using a pound of disinfectant. Your pan will be clean and safe to use with a thorough wiping and a quick rinse with warm water.
Rust
It's cast iron, it might rust. Don't panic, a bit of rust doesn't mean the pan is worthless. If it is just a flake or two, wipe the rust off and season the pan again. If there is a lot of rust, get some steel wool and rub the rust off. Season the pan and you are ready to cook. We really like cooking with cast iron and, even though it takes a bit more work, the results are fantastic. Just make sure to take good care of your new (or old) cast iron pan and it will take care of you for years.

Keto Pizza
  We have tried a few keto pizza recipes and we will only share our favorites with you after a lot of trial and error.  The first time I made a keto pizza, the crust was flimsy and although we liked it a lot, I felt it could be improved.  This is one version of our new and improved keto pizza crust so read on and you won’t be disappointed.  We think it is better than takeout!

  Working with cauliflower rice to make your keto pizza crust can be a little tricky at times.  The first time I made it, I took the bag of crumbled cauliflower I bought from the store and microwaved it for 4 minutes just like I do when making our cauliflower mash.  There is a lot of water in cauliflower so when you microwave it , the cauliflower becomes very moist.
  Most keto pizza recipes call for you to put the microwaved cauliflower on a clean dish towel and wring out the water over the sink.  I have tried this and it definitely helps but it is just one extra step and who’s got time for that?
  This time, I poured the cauliflower rice (not microwaved) straight into our cast iron skillet and cooked it for about 6 minutes.
  The moisture from the cauliflower evaporates into the air and is also absorbed into the cast iron skillet.
    Next, beat one egg with a fork.
  Add one cup of shredded Parmesan.  We keep Trader Joe’s in business just by buying this alone on a weekly basis.
    Add your  cauliflower rice, any spices you like (I used Italian seasonings) and mix the ingredients together until it forms a dough.  If you feel the dough is too dry, try adding half of another egg.  Put a piece of parchment paper (these pre-cut parchment paper sheets are great) on your pizza stone and spread out the dough to form a circle.  Poke several holes in the crust with a fork to prevent bubbling of the crust.
    Bake for  approximately 20 minutes at 350 degrees Fahrenheit until the crust is a golden brown.

  Now for the toppings.  We have been making the meat lovers keto pizza for the additional protein but are looking forward to trying all kinds of varieties like chicken and spinach with a cauliflower and Parmesan white sauce or a simple caprese low carb pizza. I just can’t tell you how happy it makes me to find a good low carb pizza crust because pizza is one of my all time favorite foods.
      While the pizza crust is baking, cook your Italian sausage (we like it HOT) until brown and add diced fresh green pepper.
  Be sure you are reading the labels of your pizza sauce you are buying.  The carb count can vary from 11 grams to 4 grams and the sugar content can be on the high side as well.
  Out of all the pizza sauces on our grocery shelf, I found that Roselli’s pizza sauce was the lowest in carbs and sugar.
    Spread the pizza sauce on your dough then add your mozzarella cheese and other toppings.
  NOTE:  Most shredded cheeses contain cellulose.  Cellulose is used to prevent clumping of the shredded cheese.  It is basically plant fiber, and one of the most common sources of wood pulp.  You can read more about Cellulose here.
There are a lot of opinions on cellulose used in our foods so do your research if it matters to you.
  On the Keto diet, it is recommended not to eat processed meats if possible.  Let’s face it, there isn’t any real value to anyone eating processed meat whether you are keto or not.  When possible, buy uncured meats. You can find uncured pepperoni at the grocery store.
  NOTE:  Cured meats basically use chemicals and additives.  Uncured meats use natural salts and flavorings.  It’s all about how manufacturers preserve meat.
  Add a little more mozzarella cheese to the top and bake another 5-10 minutes until the cheese is melted.
    Even with all these “heavy” toppings, the cauliflower crust was still firm enough to hold a slice in your hand to eat.
      This size of pizza should serve 3-4 people.  We usually get 6 slices and have left overs.  By the way, I found these cute pizza food storage baggies on Amazon for your leftover slices that are so oddly difficult to store.
  So the next time you think of ordering a pizza from Domino’s with 25 grams of carbs in one slice, think about making your own keto friendly, low carb pizza with approximately 5 grams per slice.
  Keto Pizza
Cauliflower crust.  A low carb alternative
1 tsp. Italian seasoning
1 cup Parmesan cheese (shredded)
1 egg
1 bag cauliflower rice or crumbles
1 cup pizza sauce (low carb and low sugar)
1/2 cup uncured pepperoni slices
1 cup ground Italian sausage
2 ounce sliced black olives
1 green bell pepper
Cook cauliflower rice in skillet for 6-8 minutes
Beat egg in medium sized bowl
Add one cup of Parmesan to egg
Add spices and cauliflower rice to egg and cheese and mix together to form dough
Place parchment paper on pizza stone
Form and spread dough in a circle on your pizza stone.  It will be about 10-12 inches round. The crust should be about 1/4 of an inch thick and about half an inch thick on the sides.  Poke several holes in the crust with a fork to prevent the crust from bubbling.
Bake 20 minutes or until golden brown at 350 degrees Fahrenheit.
Add pizza sauce, cheese and toppings
Bake another 5-10 minutes until cheese melts
