From fit to material to the controversial hole, everything you need to know about Morocco’s signature cooking tool
It’s 2004 and I’m sitting at a large round table in my soon-to-be husband’s family home in Marrakech, Morocco. Each of my many offers to help in the kitchen have been promptly and politely dismissed, so instead I’m left alone to wait for lunch.
All at once, dozens of small plates begin to cover the table followed by round loaves of puffy, hot bread. Finally. my now-sister-in-law walks out with the main event: a giant clay tagine that she sets down in the middle of the feast. She removes the cone-shaped lid, releasing a waft of steam infused with the scents of lusty spices into the noontime air.
The bubbling liquid is still sputtering away as everyone tears off a piece of bread, ready to dip in. I go right for the chunk of lamb in the middle that falls apart as soon as the bread touches it, grabbing a fried almond and a slick of sauce before popping it into my mouth. My eyes close as I take in the mixture of sweet and savory. This is how my relationship with the tagine began.
Moroccan cooking is centered around the tagine, a word that refers both to the conical clay cooking vessel as well as the slow-cooked, savory stew inside. The dish itself is a daily staple in most Moroccan homes, where it’s communally eaten using bread to pinch off and scoop up bits of whatever the cook feels like throwing in — meat, vegetables, nuts, and even fruits — all swimming in a sauce layered with freshly ground spices like smoky cumin and sweet paprika.
While the internet is full of ways to replicate a tagine with pressure cookers and crockpots, there’s something special about a slow-cooked tagine made in the namesake pot. The clay itself imbues its own flavor — and picks up others from whatever you’re cooking — and the conical lid is designed to return condensation to bottom of the pot, allowing the spices and herbs to mingle without relinquishing any of that delicious flavor out into the air. And it’s not just for classic Moroccan dishes — any tough cut of meat benefits from braising under the steamy conditions of a tagine, making it a versatile (not to mention cool-looking) tool for any home cook.
For travelers to Morocco, a tagine from one of the many open-air souks is pretty much a requisite souvenir, and will cost you between 20 dirham ($2) and 400 dirham ($40), but you can also score a quality tagine without the plane flight. Either way, there are some things to know before adding another piece of equipment to your repertoire (and already bursting cabinets). Here’s some advice to for picking the right one for you.

What to Look For
The fit: A tagine is made of two pieces that fit together snuggly. So you want to check if your tagine has a good fit by opening and closing the lid a few times to make sure there’s no wiggle room or gaps along the edge.
Hole or no hole? Some tagines feature a controversial opening either in the handle or lid. The idea is that the hole releases steam, which helps concentrate the liquid cooking inside. Traditionalists, however, decry the opening, saying it goes against the whole point of a tagine in the first place. An opening, some say, will slow down the cooking time and dry out the dish faster. It’s a personal choice, but pros recommend going with the classic, fully enclosed style.
Lead: While becoming less of an issue, there is a chance that tagines made in Morocco will contain lead, which — needless to say — you do not want. Ask and/or do a quick lead test with a portable home lead swab if you’re unsure or the seller doesn’t state the lead content, which should be verified before cooking. Glazed tagines are the most common culprits.
Size: Tagines come in a range of sizes, most commonly individual (one or two servings), family-size (four to five servings), and large (six to eight servings). Get the version you think you’ll use the most; overcrowding a too-small tagine will lead to uneven cooking and a lack of space for liquid, while a tagine that’s too large can crack more easily if the moisture level isn’t carefully watched.

Oscillation Speed The oscillation speed of an electric multi-tool is measured in oscillations per minute (shortened to OPM). Most of the oscillating multi-tools that we have in the market right now have variable speed settings. This means that you can cut or sand from a low oscillation speed of 6,000 OPM to as high as 21,000 (and sometimes more) depending on whether you want a smoother cut or finish.  Today, there are only a few single-speed multi-tools in the market. You won’t find a dial in single-speed multi-tools as the machine is automatically programmed to go up to the pre-set oscillation speed the moment you turn it on.  Accessory Changing System There are oscillating multi-tools that need an Allen wrench so you can change the cutting blade and other attachments. This can be a hassle if you’re in a hurry to finish the job or you’ve somehow misplaced the compatible Allen wrench. The good news is the majority of oscillating multi-tools you can find today have tool-less blade changing systems. All you have to do is lift or release the clamp or lever on the tool’s nose, install the blade, and lock the clamp back into place. The design of the clamps vary by manufacturer, but in general, this tool-less blade changing system is more user-friendly than ones that need an Allen wrench.  Oscillating Angle Oscillating multi-tools move from side to side to cut, sand or grind a surface. How far the blade travels from one side to another is called the oscillation angle.  Tools that have a wider oscillation angle are generally more aggressive and can cut faster than those with a smaller oscillation angle. If you’re partial to cordless models and you’re planning on working all day, then make sure that you have a spare in your tool bag. Weight A good multi-tool is not just one with a powerful motor, variable speed setting, and a good oscillating angle. How much it weighs and how it feels in your hand are also important especially if you’re going to use it throughout the day. The ideal multi-tool should weigh 3 lbs. or less to prevent operator fatigue. Anything more and you’ll need to stop frequently to give your hand rest in between tasks.   Number and Quality of Attachments Included High-quality multi-tool blades and other attachments are not exactly known for being cheap. A single Dremel Multi-Max Wood and Metal Blade, for example, currently costs $9.85, while the brand’s Universal Carbide Cut Blade can set you back nearly $20. As a Community Emergency Response Team (CERT) member, I had to take a training class on properly using a fire extinguisher. Unfortunately, most people don’t get that kind of training, which is why we included the Fireman Fire Extinguishing Spray on our list.
The Fireman is a portable aerosol can with a trigger nozzle, making it super easy to operate. (If you’re still unsure, it also has clear instructions on the back.) It sprays a non-toxic wetting agent that’s A, B, C, and K certified, and cleaning up the residue requires only soap and water.

First Alert Tundra Fire Extinguishing Spray: Portable Pick 
Like The Fireman, the First Alert Tundra Spray comes in a compact, portable aerosol can, but it got bumped down lower on our list because it doesn’t have the easy-to-use trigger nozzle. You have to press down pretty hard to get it to spray, but when it does, it covers a wider area than the Fireman.5
It’s also nontoxic, and it leaves a dry residue that you can wipe up easily. Like the Fireman, it’s rated for class A, B, C, and K fires, so it’s great to keep in the kitchen.
Kidde ABC Multipurpose Home Fire Extinguisher: Disposable Pick
While we found the Kidde ABC Multipurpose Home Fire Extinguisher among the easiest to use, our firefighting friend said it’s not always reliable.
It’s made of aluminum, like the First Alert Standard Home Fire Extinguisher, so it’s lightweight and portable, but unlike the First Alert, it’s considered disposable—no recharging. Still, at around $20, the Kidde Fire Extinguisher is one of the least expensive fire extinguishers on our list, so you can stock up.
Things to Consider Before You Buy
Types of Fires and Extinguisher Ratings 
Before you purchase a fire extinguisher, it’s important to understand the different types of fires. Chemical fire extinguishers are filled with different fire suppressants, and choosing a type of extinguisher with the wrong contents could actually make a fire worse (like throwing water on a grease fire).
Household fires fall under three classifications, depending on the type of fuel burning. The most common fire extinguisher classifications are A, B, C, and K.
Class A: Solid combustible materials that are not metals, like wood, paper, cloth, plastics, and rubber.
Class B: Flammable liquids, like gasoline, oil, grease, and paints.
Class C: Electrical equipment, like appliances and outlets.
Class K: Cooking oils and greases, animal fats, and vegetable fats.
ABC fire extinguishers will handle most household fires, but just to be on the safe side, it’s smart to also have a K-rated fire extinguisher on hand for your kitchen.
Extinguisher Placement
Once you’ve selected the best fire extinguishers for your home, placement is important. You might want to store your extinguisher right next to your stove, but fire extinguishers shouldn’t be subjected to high temperatures. Also, if your stovetop bursts into flames, you won’t want to be near it.
Instead, place fire extinguishers in locations no closer than 5–8 feet from potential fire sources like deep fat fryers, fireplaces, or clothes dryers. This way you can access them quickly and safely in case of a fire. Make sure that there is always a fire extinguisher no farther than 40 feet away from any location in your home.
Practicing Extinguisher Use 
After your fire extinguishers are in place, don’t just set them and forget them. Make sure everyone in your household knows where they are and how to use them.
Take the time to read their labels, and rehearse the steps you would need to take to operate them in an emergency.

Aim the extinguisher at the base of the fire,
Squeeze the trigger
And Sweep the spray across the base of the fire.
Maintenance 
The National Fire Protection Association (NFPA) recommends installing a fire extinguisher on every floor of your home and having it inspected annually. The US Department of Agriculture (USDA) takes that counsel even further, recommending that you install separate fire extinguishers in your kitchen, garage, basement, and car. Put them in plain view, within easy reach of adults—though out of reach of children—and near an escape route.
Follow these guidelines for regular maintenance on your fire extinguishers:
Check the pressure regularly. The pressure gauge needle should be in the green zone. Replace or recharge any extinguishers if the needle is in the red zone.
Monitor for damage. Make sure the pin and tamper seal are intact. Check for dents, leaks, rust, or other signs of wear.
Shake it. If you have a dry chemical extinguisher, many manufacturers recommend shaking it monthly so the powder does not settle.
Get it tested. Get your extinguisher pressure-tested every few years by a professional, as per the manufacturer’s recommendation.
Recharge. No matter how much (or how little) was used, if you discharged an extinguisher, it needs to be recharged. Your local fire department may offer this service, or you can find a professional recharging company in your area.
Discard. All disposable extinguishers must be discarded after use.
IMPORTANT
For your safety, never attempt to use a fire extinguisher to put out a fire that is larger than an office-sized trash can. Fires double in size every 30 seconds, and once a fire gets taller than the space between your feet and your knees, it can get out of hand much quicker than you might expect. Rather than trying to put it out, immediately exit the home or get a safe distance away from the fire and call 911.
