A Good Doctor’s Lagniappe
Sinner's Sazerac
“Just a little somethin' we have here in Louisiana. Little parlor trick, don't worry.”
30.43% ABV | Yield: 3.08 fl oz | Themed Cocktail, Fandom Cocktail. Classic, Pre-Prohibition, New Orleans . Improved Cocktail, 19th Century
2 oz or 60ml Brandy
2 tsp or 10 ml demerara syrup
3-5 dashes Peychaud's Aromatic Cocktail Bitters
1 Lemon twist
Express oils from lemon peel and regal stir*, strain into chilled neat glass that you have rinsed with or spritzed with absinthe verte.
Drink your sins and follow with
Retour de la Mort
“-I HOPE you’re SATISFIED! But if you ain’t-- don’t blame me...”
15.51% ABV | Yield: Approx 1.5 fl oz | Themed Cocktail, Fandom Cocktail, Champagne Cocktail, Chaser/Back, Shooter
Soak sugar cube with absinthe verte in shot glass or pony glass; To boost color, 1-2 drops of Midori can be used as well.
Pour brut-style sparkling wine in and serve on a tray next to Sinner’s Sazerac.
•Lagniappe[lan-yap] is "a little something extra". Usually, its meant like a little extra something good, a bonus, you know, something to sweeten the deal. What’s sweeter than a spoonful of absinthe and some sugar?
•Facilier is clearly a Cognac Sazerac guy, I just don’t see the rye version in his hand. But, he's a fraudster. So we use can use American Brandy. Honestly, E&J is ubiquitous in America for barely $10 a bottle, so go with E&J Grand Blue for a sweeter drink, and E&J XO for a easier to sip, “smoother” drink. Alternatively, ignore me and use your favorite Cognac -- I like Ansac VS, the cheap Raynal VSOP blend is amazing, Martell VSOP, and honestly everything I’ve had from ABK6. Hennessy leans more on a bitter orange note than I prefer. Literally, this is a drink designed to feature the spirit and just give a little je ne sais quoi. Pick a brandy you’d like to drink, not just a bottle that had a huge marketing budget.
•The back is essentially Death In The Afternoon scaled down, hence the name, which most literally reads “Return of Death” i.e. -- A Death-Back. Remember, 'brut-style' -- no AOC Champagne required. An extra dry Cava is preferable to a Prosecco here. Remember -- drink the spirits you like the way you like to drink them, but when it comes to champagne cocktails, you really don’t need to spend much. Its a vehicle, the things you modify with are the drivers.
For a drink with a sidecar, honestly, it’s totally up to you if you shot the back or if you alternate between sips of the main drink and the shooter. Genuinely, give it a go however you like. I tend to do the latter, and its a great contrast here, but symbolically, shooting the champagne back is more accurate to symbolize how the song goes.
This is dedicated in part to Doug Ankrah, who created the most defining champagne sidecar drink in the Pornstar Martini. RIP[REST IN PORN] my good dude.
*Regal stir or regal shake is to include a piece of zest in the stage of cocktail creation wherein you are introducing aeration, chilling and dilution to the cocktail. This is essentially lightly muddling it and releases the flavonoids stored in the lipid cells, just like when you twist a piece over a drink -- but this integrates them with more nuance on the tongue as opposed to primarly affecting aroma.
Why the regal stir for this version? Why -- he’s a royal on his mother’s side, you know.

Chilling With Pineau des Charentes
P&T, photograph via Lydia Lee/Sopexa
In August, as I’m basting within the New York Town warmth and humidity, I will’t consider sipping the rest that may’t take an ice cube. Happily that leaves many possible choices, however one in all my fresh favorites is if truth be told somewhat of a reacquaintance, a refreshing sipper I first met in my wine retail days, Pineau des Charentes. I used to be presented to this distinctive fortified wine via a chum who had simply visited France for the summer time, the place it were served to her via her hosts as an apéritif at the rocks. In the ones days (the early 2000s), there was once little or no of it on the USA marketplace and what was once to be had was once difficult to search out, nonetheless regarded as one of the crucial best possible stored secrets and techniques of Cognac. Now extra manufacturers and importers are prepared to percentage the affection. It’s scrumptious neat, with a sit back (as you could possibly a wine bottle), in cocktails or with a touch of tonic.
Wine will have to chiller, qu’est-ce que c’est?
Pineau des Charentes is the results of contemporary grape juice added to Cognac eau-de-vie (each percentage the similar territory alongside the Atlantic Coast of France). The tale is going overdue 16th century wine grower by chance tossed grape will have to right into a barrel containing Cognac eau-de-vie. When it was once tapped, the liquid that got here out was once clearly reasonably tepid as a brandy, however those that tasted the straw-gold coloured aggregate weren’t mad at it both. Through the early 20th century, the Charentais gave PdC the similar focal point and ability as that of Cognac, with sufficient manufacturers stepping up the standard such that it bought Appellation d’Origine Contrôlée standing via 1945.
photograph via Lydia Lee/Sopexa
Below the AOC high quality tips, the grapes for the juice and the Cognac will have to all be sourced from the similar vineyards. Essentially the most conventional PdC is made out of white grapes (often ugni blanc, folle blanche and/or colombard, although from time to time sémillon, sauvignon blanc and montils), that are pressed straight away after harvest within the early fall. Grapes for the crimson selection (cabernet franc, cabernet sauvignon, malbec and merlot) are macerated for a number of hours prior to urgent. Subsequent is a mixing degree referred to as mutage, in which Cognac eau-de-vie that may be a minimal of 1 yr outdated with a minimum of 60% alcohol is added to the contemporary grape juice in a three to one ratio, which stops fermentation. White Pineau is elderly for a minimum of a yr and a part with at least 12 months in oak barrels; the crimson is elderly a minimum of a yr with at least eight months in oak. The ensuing ABV is most often 16 – 17%, and all bottling will have to happen inside Charentes. Excellent information for all you purists in the market: underneath regulations of its high quality keep watch over not anything will also be added to it – no sugar, no coloring, no further preservatives.
Serving Tips
When PdC first got here stateside, it was once incessantly discovered on eating place menus and retailer cabinets within the dessert wine segment. Whilst it could actually indisputably do the trick, there’s a freshness to it that lends extra versatility. Ms. Franky Marshall – who is going via the name Modern Bartender, NY and is a licensed trainer at the class – is interested in its adaptability. “It’s extraordinarily flexible as a cocktail factor and works as a base, modifier, and seasoning. It’s a wonderful apéritif, an extended drink, AND additionally shines after dinner with dessert.”
photograph via Lydia Lee/Sopexa
Marshall provides every other false impression is “… the perception that it’s ‘in point of fact candy’. It’s certainly fruit ahead, however the most efficient Pineau des Charentes will also be inebriated instead of different wines, as a result of they have got acidity to stability them out and don’t seem to be cloying in any respect.” In spite of everything, like wine, PdC is to be had as a crimson, white or even rosé types, and it fits meals in a similar way. To begin off, Marshall makes those ideas: “Pair a tender white with foie gras, an older white with more than a few cheeses, and a crimson with a chocolate fondant.”
Ones to check out
Pineau Blanc
Domaine de la Margotterie Pineau Blanc Tradition: This more youthful, access stage PdC has a mature perspective, tasting of ripened, baked culmination with a blank, honeyed end. Right here’s one that might do double responsibility as an apéritif or served with fruit tarts and creamy cheeses. $18
Réviseur Vieux Blanc: Produced at Domaine Abecassis (additionally house of NY International Spirits Competition medal winners ABK6 Cognac), that is a full of life variation (“vieux” signifies it’s elderly at least five years) with juicy pear and nectarine flavors that finishes with vibrant acidity. The flavors emerge much more when served chilled or at the rocks, however additionally it is a very good cocktail base. Check out it with a plate of charcuterie and light-weight tapas. $28
Rosé
photograph via Lydia Lee/Sopexa
Marshall warns this taste of PdC will also be more difficult to search out, however price somewhat of looking out. She suggests Jean Fillioux Très Vieux Rosé. “This one is slightly complicated as a result of they promote it as a crimson, nevertheless it says “rosé” proper at the label.” The age is 10 years, indicated via the “Très Vieux” (Very Outdated) at the bottle. This expression, best possible served chilled, can do double responsibility as an accompaniment to summer time culmination and picnic snacks or with chocolate truffles. $30

This garnet-colored gem is pleasant served at the rocks with a citrus twist and may just even stand in for vermouth in cocktails. $28
