I think there’s probably a tendency to see Dean working everything out and deciding that he believes Crowley in 5.20 as hypocritical simply because Crowley is a demon, but Dean was actually the first one in the family to knowingly strike up a budding friendship with a demon—in 3.04 “Sin City” with Casey, who Dean wanted to spare but Sam killed without hesitation. When Sam compared Casey and Ruby in 3.09 and asked what was so different, Dean said “she wasn’t stringing me along like a fish on a hook”. Dean had an incredibly ability to see right through Ruby’s motives to straight up predicting “Lucifer Rising” way back in 3.16. But with demons like Casey and Crowley? Dean sees something different even though he also sees them both as slippery. And he gives Ruby the chance to show him something different too, at the end of 3.09, but finds he isn’t convinced.
What is it about Crowley and Casey that’s different from Ruby? Is it that Ruby is a bad actress? Is it that her motivations for helping them feel too good to be true—too vague? Ruby insists in 3.09 that she’s helping them because she was human once and she still remembers what it was like. Crowley says he’s helping them because it benefits him and maybe that’s easier for Dean to swallow. He can’t work out how a double cross (at least in the context of 5.20) would benefit Crowley, but the fact that Crowley frames his motives as selfish (which they are) also automatically makes Dean less skeptical and more confident about when and how Crowley would enact a betrayal.
