Sopapillas
I went into the tag to look for more sopapillas and all I found was blasphemy. What is all of this cinnamon sugar nonsense?

THESE ARE SOPAPILLAS
Puffed pillows of love and fried dough. You bite the corner off to put honey in. Or if you're feeling frisky, you can stuff them with chicken or beef or beans and smother that sumbitch with green or red chile. Or put ice cream in there. Sky's the limit.
Here's the recipe for you, for I am a generous Katie.
Equipment
1 cast iron skillet or medium pot
1 spider or strainer to help remove the sopapillas from the oil
Ingredients
2 cups all-purpose flour
1 tablespoon baking powder
1 tablespoon granulated sugar
2 teaspoons kosher salt
1 tablespoon honey
3/4 cup whole milk
Canola oil, peanut oil or lard for frying
Instructions
To Make the Dough:
In a large bowl, whisk together the flour, baking powder, sugar and salt. Next, create a well in the center of the dry ingredients and pour in the honey and whole milk.
Using a spoon or your hands, mix the dough together until it forms a sticky mass. Cover the bowl with a clean kitchen towel and allow the dough to rest for about 20 minutes.
To Fry the Sopapillas:
I know frying this is a bit of a bummer but I’ll say that with these it’s needed and worth it.In a cast iron skillet (or medium pot), add enough oil so it reaches 3-inches up the sides of the skillet/pot. Heat up your oil to around 300 degrees. (Right before we fry them off, we’ll heat it up even further.)
Lightly flour your work surface and rolling pin. If the dough is at all sticky (it shouldn’t be after it rested) feel free to sprinkle it with a bit of flour so it doesn’t adhere to the surface.
Dump the dough onto the counter and roll the dough into a thin (1/8-inch thick) square. (It doesn’t have to be a perfect square either, just do your best.) Cut the sopapillas into 4 x 3-inch rectangles. Again, the measurements don’t have to be exact, you can definitely eyeball this.
Before you fry them up, be sure to get your honey ready. Line a baking sheet or plate with a few layers of paper towels or clean kitchen towel. Heat the oil up again to 375 degrees F.
Drop the sopapillas in the hot oil, frying two to three at a time, for about a minute, flipping them over at the halfway point. (If they don’t puff up, they’ll still be tasty! But it may mean the dough isn’t rolled thin enough.)
They should be lightly golden brown—not too crispy. Transfer them to the bed of paper towels to drain. Repeat with the remaining sopapillas.
These taste best straight from the fryer to a plate to being consumed but if you want, you can keep the sopapillas warm in an 200 degree pre-heated oven while you fry up the rest.
Serve them alongside some honey and apricot preserves.

Tips and Tricks:
Test a single sopapilla. I always do a test to make sure the oil is the right temperature. If the first one doesn't puff up, it means it's not rolled thin enough. A simple fix with the rest of them!

Loxley the Honorable Thief Warframe
Here's a fun fact for you, many of you who follow my blog will already know that Loxley was the first frame I had fully planned for this season, but he was also the entire reason for the Duviri melee weapon poll. I knew I wanted him to be a Duviri frame and I knew I wanted him to add a new Duviri melee weapon. He got the glaive. Glaive is the melee I would be most excited to see added to Duviri because I think it would make the Duviri gunplay suck a lot less.
To obtain Loxley players will have to play The Duviri Experience. Neither The Lone Story nor The Circuit will do. During The Duviri Experience players will be able to approach the various courtiers, and in each playthrough one of the five - Mathila on her farm, Lodun in Upperhaven, Bombastine in The Agora, Luscinia in the Chamber of the Muses, and Sythel in her home - excluding the one that currently holds dominion of the spiral will have knowledge of Loxley's whereabouts. Players will have to first find which of the courtiers currently knows Loxley's location and ask them about him. After a short lore dump the courtier will mark Loxley's current position with a pip on all players' HUDs. This location will spawn a new optional objective to defeat Loxley. In his enemy form Loxley will use limited or modified versions of his abilities and weapons and will be immune to damage until a player lands an overcharged shot on him, rendering him vulnerable to damage for the next 18 seconds. When Loxley is defeated he will drop a Lionheart Crest, or two in Steel Path mode. These Lionheart Crests can be exchanged with Lodun in his courtier form in Upperhaven during any spiral other than Anger. Lodun's Lionheart Crest exchange options are as follows:

Passive: Loxley is a master thief and can open lockers with both green and red locks. Lockers with black locks still cannot be opened. Loxley is also guaranteed one extra item drop from every locker he opens.
Ability 1: Nightshade, 25 energy. With a flourish, Loxley brandishes and then throws up to 10 throwing knives dipped in a cocktail of toxins. Each knife hits an enemy within a 6 meter radius around him or in a 30 degree, 30 meter cone in front of him. Each enemy struck is put to sleep for up to 20 seconds. Sleeping enemies are vulnerable to melee finisher attacks. During this sleep each affected enemy takes 50 times 1+X (where X is equal to the enemy's level divided by 10) gas damage once every two seconds with a guaranteed gas status proc. Gas damage dealt by Nightshade does not contribute to enemies' wake-up threshold.
Ability 2: Highwaymen, 50 energy. Loxley confuses enemies by summoning a pair of body doubles, flanking him on his left and right at a distance of 6 meters. The two Highwaymen have double Loxley's health and shields but no armor and draw enemy fire. The two Highwaymen will also mimic Loxley's actions, aiming in the same location as he does. The Highwaymen only deal 10% of Loxley's damage with weapon attacks but can apply critical hits and status, and when Loxley casts Nightshade his Highwaymen will cast a lesser version of the ability which only throws a maximum of five knives and aims their targeting cones at 90 degree angles to Loxley's. Highwaymen last for up to 20 seconds or until killed. When one of the body doubles summoned by Highwaymen dies it is guaranteed to drop either a primary ammo pickup, secondary ammo pickup, or health orb.
Ability 3: Subterfuge, toggled ability, drains 3 energy per second. Combining stealth and explosives the guerilla tactics offered by Subterfuge can be used in both open combat and infiltration missions. While Subterfuge is active Loxley becomes invisible to enemies and gains the ability to turn various objects into deadly traps. By approaching an object such as a locker, destructible crate, or console and pressing the interact key Loxley sets up an explosive trap upon it for a cost of 10 energy which lasts up to 20 seconds or until triggered. When any enemy comes within 8 meters of the trapped object it detonates, dealing 500 times 1+X (where X is equal to the enemy's level divided by 10) blast damage with a guaranteed status proc to all enemies within 20 meters. While lockers and crates are booby-trapped they cannot be opened. Firing a non-silent weapon will temporarily break the cloak. Loxley will re-cloak shortly after firing the weapon.
Ability 4: Band of Merry Men, 100 energy. Loxley summons his Merry Men to overwhelm his foes with sudden and brutal force. When cast Loxley summons a platoon of uncontrolled, stationary archers at his location. They will begin rapidly firing a stream of arrows aimed at the point indicated by Loxley's crosshairs when the ability was cast. The stream of arrows lasts for 10 seconds, has a height of three meters, a width of twelve meters, and infinite range. All enemies caught in the Band of Merry Men's arrows takes 250+X (where X is equal to the enemy's level) each of impact, puncture, and slash damage every half-second with 25% status chance.
Subsumed ability: Nightshade.
Signature Weapons Marian: Loxley's iconic sidearm, the Marian, is a silent secondary weapon categorized as a crossbow. After the Marian's blueprint is purchased from Lodun it is crafted at the cost of 1 Ballistica, 100 Rune Marrow, 100 Saggen Pearl, and 250 Lamentus as well as a cost of 20,000 credits. Marian has a semi-auto trigger and very high damage for a secondary crossbow at the cost of slower attack speed and a larger magazine at the cost of a slower reload. As a glaive the Lionheart can be dual wielded with the Sirocco by the Drifter while in Duviri, and by warframes alongside any single pistol secondary weapon. Lionheart deals mostly slash, moderate puncture, and low impact damage with above-normal values of both status and crit. Lionheart has fairly normal attack speed and per-hit damage for a glaive. Unlike other Duviri weapons the Lionheart's special attack is not triggered by guarding heavy attacks but instead by mid-air detonation after throwing. Mid-air detonations always apply a forced slash status proc in a 6 meter explosion, and on a 30 second cooldown will also cause affected enemies to become Lifted for six seconds. Melee kills decrease the cooldown on the thrown detonation's lifting effect by 1 second. In Loxley's hands melee kills decrease remaining special attack cooldown by 1.25 seconds.
Closing Notes: Loxley ended up being a bit hard, I didn't want him to end up with too much overlap with other frames. I don't think there's anything wrong with him but I do think that this is overall not one of my more special designs. Once again aside from obvious references to the Robin Hood mythology there's no Easter eggs here worth pointing out.

Howl's Moving Castle Word Crawl

Posting again the word crawl I made. It’s long, so it’s best to break it up into bits.
Howl’s Moving Castle word crawl! Follows the plot of the book by Diana Wynne Jones.
In the land of Ingary, where such things as seven league boots and cloaks of invisibility really exist, it absolutely sucks to be the eldest of three. Based on your writing speed, pick where in the birth order you line up.
Youngest: Slower Middle: Medium Eldest: Faster
Your stepmother decides that the only way to keep the family millinery open is to send you and your sisters off to apprentice somewhere profitable. You get stuck in the hat shop. Even though they’re not satisfied with their assignments, your sisters, at least, get to leave the house. Sprint for ten minutes, because your life surely isn’t going anywhere.
If you reached the word count below, you overhear about the mysterious Wizard Howl and how he kidnaps beautiful girls to eat their hearts, and that will never hold significance for you. If you don’t reach it, sprint for seven minutes while your stepmother teaches you how to sell a hat to a customer.
Youngest: 375 words Middle: 685 words Eldest: 950 words
Making hats is boring. You talk to them as if they were people, because yeah, like you’re going to step outside.
• If you chose the hat that was all veiling with hidden twinkles, you have a mysterious allure. Write 550 words. • If you chose the creamy hat with roses under the brim, you have to marry into money. Write 700 words. • If you chose the mushroom pleated bonnet, you have a heart of gold, and someone in a high position will fall in love with you. Write 1000 words.
You’re a little depressed that none of them look nice on you. On May Day, you decide to go see your sister Lettie, who was sent to apprentice at a local bakery. You’re scared stiff. You run into a pretentious blond, and you dash into the crowded bakery. Write to the next multiple of 300 while you push your way to the front counter.
Lettie pulls you aside to tell you that she’s not Lettie. Using magic to disguise themselves, she and your sister Martha swopped places of apprenticeship. Sprint for 15 minutes while you jump to conclusions.
If you reach the word count, you take Martha’s advice to stand up for yourself when you get home. If you fail, you stumble around your words in a pathetic way. Type for five minutes with your eyes closed.
Youngest: 580 Middle: 880 Eldest: 1250
A glamourous woman walks into your shop. Her tastes are too highfalutin for your shop. You’re tacky, and she hates you.
• If you are the youngest or middle child, you try to sell her the mushroom hat. Allow your writing to suck for a solid 25 minutes. • If you are the eldest child, you sass her despite her henchman’s nervous gesturing behind her back. You done screwed up, son. Write 2500 in 30 minutes.
Oh, mother—that was the Witch of the Waste, the most diabolical mind this side of paradise, and she’s cursed you with old age. You now have the body of a 90-year-old, and you can’t let your family know about this. Your joints may ache, but you’ve got to go out into the world to make your fortune. Man, these hills are unforgiving. Write for a leisurely 35 minutes as you slowly head out into the waste.
If you reach the word count, you happen upon Howl’s castle. If you don’t you write 300 words while you wander about in the mist.
Youngest: 750 Middle: 999 Eldest: 1300
You barge into the moving castle, which is a bit of a dump, and Howl is out. Instead, you meet his apprentice, Michael. You also meet a fire demon, Calcifer, who can tell that you’re under a spell. He convinces you to break his contract with Howl in exchange for breaking your curse. For some reason, Calcifer tells you that Howl is quite heartless. You didn’t need to be told; have you seen the inside of this castle? It’s filthy. Clearly someone who treats a castle like this would be heartless. Anyway. Do a three digit challenge while Michael tries to get you to leave.
In the morning, you bully Calcifer into bending down his head for you so that you can cook breakfast. No one but Howl is supposed to be able to do that. You’re distracted by the bacon, so you don’t notice Howl come in until it’s too late—and oh no he’s hot. You say Calcifer hired you as the cleaning lady. Write for 10 minutes while Howl moans about how much he loves the filth.
You’re determined to be the very best cleaning lady, like no one ever was, but you get distracted by his magical door.
• Porthaven Door: The king sends his thanks for the seven league boots. Write seven times the last two digits of your word count. • Kingbury Door: A girl shows up for the safety spell for her dad’s boat. Write for 15 minutes using precise phrasing, because you’re going to spread rumours about being a witch if you don’t stop saying the wrong things. • Market Chipping Door: Your stepmother can’t know you’re here. Write 849 words, which is how many times in the past month she’s ignored your opinion. • What the Frick Frackle’s Behind That Door, Howl?: Death. Death and destruction. Death, destruction, and Secret Wales. Write to the next multiple of 3000.
Howl doesn��t want you to clean anything. The filth is his friend. He loves the spiders. You think he’s a sick jerk. Sprint to 350.
The girl who bought the mushroom hat has run off with a count—like you with your word count. Write for 20 minutes without using be verbs. If you chose the mushroom hat earlier, you may skip this step.
Calcifer and Michael tell you about Howl’s romantic exploits. He’ll start courting a girl, and then he’ll get bored with her as soon as she returns his affections. Calcifer then goes into Howl’s beauty routine, and he uses more products on his face than you do. Howl rushes downstairs from the bathroom and yells at you for organising his bathroom supplies, because now his hair is ginger. He calls upon the spirits of darkness. Sprint for 15 minutes while you try to fix this.
When Howl is in his right mind, he tells you that he’s in love with Lettie, who is, as you found out earlier, actually Martha. Not your sister, dang it! Plus, there’s this mad scarecrow following the castle. What luck. Take a leisurely twenty minutes as you make a plan.
But Howl isn’t in love with Martha, it turns out. Michael shows up with a cake from the bakery and says that he’s in love with Lettie. Lettie from the cake shop. You’re so confused. Huh. Howl tells you that he’s weaselled out of finding the lost prince over a piece of cake. You decide to go visit the real Lettie at her magic apprenticeship, and you steal some seven league boots. Write 475 words.
The real Lettie knows that Howl is courting her, and she’s knows exactly what she’s doing. Oops. You go home to help Michael with a spell that is suspiciously like John Donne’s “Song”. Howl is pissed at you for trying to catch a fallen star, just as the poem says. Sprint to 500.
Howl takes you to through the fourth door to Secret Wales. His family is rotten, but he loves them. You track down Miss Angorian, who tells you another part of “Song”. She makes you feel uneasy, especially when she talks about her missing fiancé, Ben Sullivan. 10 minute word war!
Howl wants to avoid responsibility, so he sends you to blacken his name. You go to an old teacher and the King of Ingary. Write for an hour.
If you hit the word count, you successfully make Howl seem like a terribly lazy and irresponsible person, which he is. If you don’t, you run into the Witch of the Waste and have to double back. Write until you’ve doubled what you wrote in the hour.
Youngest: 1000 Middle: 3000 Eldest: 5000
After a brawl in town. The Witch of the Waste has caught up with Howl. He hurriedly forces Calcifer to move the castle, and the red setter that you’ve picked up does not like the magic. Calcifer is rooted in this rock-like object when Howl moves him, and moving the castle means more doors!
• Market Chipping Door: You’re back in your childhood home. Write a scene that is inspired by something in your childhood, because write what you know, you know? • The Mansion: Weed killer time! Delete that fluff you wrote out of desperation. • Meadow on the Edge of the Waste: Look at all these flowers, man. So pretty. Put a bouquet of flowers into your next scene. • Secret Wales Door: Howl plays rugby? Oh, er. Okay. Write for six minutes about something about which you know nothing.
Howl starts courting Miss Angorian to avoid looking for the lost prince, and you figure out that Calcifer was once a falling star that Howl caught. The scarecrow won’t leave you alone, and it creeps you out. Do a three digit challenge.
The red setter you picked up is actually a human under a curse. You call him Percival. Percival says the Witch of the Waste had his head on a shelf for a long time. By all accounts, it makes no sense. And then Howl goes to say that he knew you were cursed all along! What the heck? That jerk. Sprint for 20 minutes while you insult him with everything you’ve got.
Howl goes out drinking with his Rugby team and comes home, as he so eloquently phrases it, “cone sold stober”. The scarecrow catches up with Percival, for whom he has been looking, and says something about missing parts. In his inebriated state, Howl has been tricked by the Witch of the Waste, and she now has Miss Angorian as captive in the Waste. Write 3 percent of your word count.
You go to the Witch’s lair to save Miss Angorian. You dodge some vicious, orange blobs, and the Witch shows you a headless body. She tells you it’s a perfect conglomeration of the bodies of the missing prince and missing Wizard Sullivan. All she needs now is the head of Howl to make the perfect King of Ingary, and the Witch shall be his queen. Do a Fifty Headed Hydra to effectively inform her that she’s mad, which you do by fighting her with a stick.
Holy crap it worked thank God. Howl shows up, and the two of you figure out not only that Percival is made of body parts of the prince and Sullivan (lol I know) but also that Miss Angorian is a demon working for the Witch. You rush back to the castle to find her squeezing Calcifer—attached to Howl’s heart—in her hand. All of the “Song” spell has come true. You have to break the spell to save Howl and Calcifer. Write until you hit the next checkpoint below.
Youngest: the next 2,000 word checkpoint Middle: the next 5,000 word checkpoint Eldest: the next 10,000 word checkpoint
You break the spell and put Howl’s heart back in his chest. Calcifer lives. Howl thinks he has a hangover, and by breaking Howl’s spell, you broke your own. You are your proper age. You should have noticed that the prince and the Wizard Sullivan are their normal selves again, but you’re too focused on how in love with Howl you are—that jerk. Write for 5 minutes using only polysyllabic words.

Makes one 9 by 13-inch (23 by 33-cm) slab pie; Serves 12 to 16
3 recipes single-crust All‑Butter Pie Dough (see below)
1¼ pounds (560 g) fresh rhubarb stalks, cut into ½-inch (1.5-cm) pieces
2½ cups (300 to 375 g) fresh strawberries, halved
1 cup (200 g) granulated sugar
Finely grated zest and juice of ½ large lemon
Pinch of salt
2 teaspoons pure rose extract or 2 tablespoons rose water
2 tablespoons plus 1 teaspoon cornstarch
3 tablespoons all-purpose flour
Pinch of ground cardamom
To assemble:
1 large egg
1 tablespoon whole milk
Granulated or turbinado sugar, for sprinkling
Let 1½ discs of the chilled pie dough soften at room temperature for 10 to 20 minutes.
On a lightly floured surface, roll out the pie dough to an 11 by 15-inch (28 by 38-cm) rectangle, ⅛ to ¼ inch (3 to 6 mm) thick. Sliding your forearms under the dough, carefully lift and place it in a 9 by 13-inch (23 by 33-cm) jelly-roll or quarter sheet pan. Fit the dough into the pan. Trim the excess dough, leaving a 1-inch (2.5-cm) overhang on all sides.
Let the remaining 1½ discs of the pie dough soften at room temperature for about 10 minutes.
Put the rhubarb and strawberries in a large bowl and toss with the sugar, lemon zest, lemon juice, salt, and rose extract. Add the cornstarch, flour, and cardamom and stir until combined. Tip the mixture into the dough-lined pan. Leave about a ½-inch (1.5-cm) gap between the top of the filling and the rim of the pan to keep the juices from overflowing.
On a lightly floured surface, roll the remaining pie dough into a large oval about the same size as the pan and ¼ inch (6 mm) thick; the longest section of the oval should be 15 inches (38 cm) long. Using a pastry cutter or paring knife, cut 13 strips of dough, about 1 inch (2.5 cm) wide and of various lengths. Cut 6 skinny strips; working with 3 skinny strips at a time, pinch the strips together at the top and gently braid them to create a pair of long braids.
Create a lattice over the top of the pie. Start by laying the longest pieces across from corner to corner. Use the braids in place of 2 strips in the classic lattice. Fold the overhanging dough of the bottom crust up and over the ends of the lattice strips and crimp to secure. Chill in the refrigerator for at least 30 minutes.
Preheat the oven to 425°F (220°C) with a rack in the lowest position.
Bake the pie
When ready to bake, gently whisk together the egg and milk to make an egg wash. Brush the egg wash over the pie with a pastry brush and sprinkle the pie with sugar. Place the pie on a baking sheet and bake for 25 minutes. Lower the oven temperature to 375°F (190°C) and bake for 25 to 30 minutes more, until the crust is golden brown and the juices are bubbling.
Let the pie cool completely before slicing, at least 2 hours. Store leftovers covered with foil or plastic wrap at room temperature for up to 2 days or in the refrigerator for up to 3 days.
Note: To serve an even larger crowd, try baking the pie in an 18 by 13-inch (46 by 33-cm) sheet pan. Just double the filling and use 2 recipes double-crust All-Butter Pie Dough. Rolling out the pie dough to those dimensions may seem ambitious and slightly scary, but you got this! Remain cool, calm, and collected. And definitely roll the dough between two large pieces of parchment paper to keep it from sticking and make it easier transport to the pan. Alternatively, for the bottom crust, roll out two medium pieces and press them together in the pan
RECIPE: All-Butter Pie Dough
Makes one disc, enough for one 9-inch (23-cm) single-crust pie or tart
1⅓ cups plus 2 tablespoons (180 g) all-purpose flour
1½ teaspoons granulated sugar
¼ teaspoon salt
9 tablespoons (130 g) unsalted butter, diced, very cold
¼ cup (60 ml) ice plus ½ cup (120 ml) water
In a large bowl, combine the flour, sugar, and salt. Add the butter. Using your fingertips, a pastry cutter, or a pair of forks, cut the butter into the flour mixture. Continue by rubbing the butter into the flour between your fingertips until the butter ranges in size from small peas to the size of a walnut. Do not overmix.
Create a small well in the center of the bowl. Add about half of the ice water and stir with your fingertips. Continue adding water, 1 tablespoon at a time, until most of the dough sticks together when given a firm squeeze with one hand. (You’ll use about 6 tablespoons [90 ml] ice water total for the single crust or about 8 tablespoons [120 ml] for the double crust.)
Dump the dough onto a clean work surface, gently gather it, then flatten it out into a rectangular shape with the palms of your hands, with one narrow side facing you. Using a bench scraper, scoop under the top third of the dough and fold it to the center. Repeat with the bottom third to make a tri-fold (like a business letter). Don’t worry if the dough is rather crumbly at this point. Rotate the dough 180 degrees and repeat two or three more times. Flatten the dough into one disc for the single crust or divide into two discs for the double crust, wrap well in plastic wrap, and refrigerate for at least 1 hour or up to 3 days.
Pie dough can be wrapped well in plastic wrap and stored in the refrigerator for 2 to 3 days or in the freezer for up to 2 months. Thaw frozen pie dough in the refrigerator overnight before rolling or using.
