100Gourmet at Mitzo
100Gourmet is a monthly dining event where an award-winning overseas chef is paired with two top Singapore-based restaurants to create a collaborative 3-course lunch meal ($100++ for 2 persons) and 6-course dinner meal ($100++ for 1 person).

From November 6th to 9th, Michelin-starred Chef Rolf Fliegauf of Ristorante Ecco in Switzerland, an expert at European haute cuisine, was paired with Singaporean Chef Nicky Ng of Mitzo, who was the Head Chef at Michelin-starred Hakkasan New York City and Club Chinois, the pioneer of modern Chinese fine dining cuisine in Singapore. Its a East-meets-West dinning extravaganza and I was fortunate to be invited to the dinner event to sample some of the best cuisines created by these award-winning chefs.

The decor of Mitzo is modern, sleek, and “psychedelic” at times with dance tunes spinning in the background while diners enjoy their meals surrounded by reflective glass panels that create a multi-coloured prismatic environment. It reminds me of my recent visit to W Retreat & Spa Bali which has a similar dance party look and feel to it.

While waiting for the meal to start, diners were treated to a side dish consisting of cashews and almond flakes stir fried with a spice mixture.

At 7:30pm, the dinner event began and the 1st dish served was created by Chef Fliegauf, Veal Cannelloni. The surprise factor for this dish was the goose liver ice cream made without any milk and cream. It had a silky smooth texture and was extremely refreshing, providing a great contrast with the cannelloni and the onions cooked three ways.

The 2nd dish dish of the day was created by Chef Nicky, Double-Boiled Abalone Soup with Porcini Mushrooms and Winter Melon. It was a good soup but it lacked a surprise factor compared with the impactful 1st dish.

Next up, Dim Sum and Roast Platter featuring Drunken Chicken Dumpling, Mitzo Special Barbecued Pork, Scallop and Shrimp Dumpling. It was a much stronger showing by Chef Nicky compared to his previous dish. I simply love the Special Barbecued Pork which has a delicious thick caramelized coating with a melt-in-your-mouth texture that is simply out of this world.  This is definitely one of the best Barbecued Pork that I have ever had.

After sampling some amazing dim sum, Chef Fliegauf presented his Salmon poached in Hay which is a kind of deconstructed fish head, featuring pumpkin, crunchy fish skin, hay ash, watercress and salmon roe. For me, this was the best dish of the evening. The flavours were beautifully layered with the moist salmon, the savoury herb sauce, the velvety pumpkin puree, the crunchy fish skin, and the salty salmon roe.

The 5th dish of the evening was a collaboration between Chef Nicky and Chef Fliegauf, Seafood Duo featuring Stir Fry Scallop in Bonito Sauce with Asparagus and Prawns with Seaweed Cracker sitting on top of a Lobster Bisque. Although both dishes were simply delicious, I preferred Chef Fliegauf’s dish as the Seaweed Cracker and Lobster Bisque were just too good.

To end the evening, Chef Nicky and Chef Fliegauf presented Black Diamond (Fried Sesame Ball with Salted Egg Lava) and Fliegauf’s Cheesecake with Vanilla Chip and Sea Buckthorn. Once again, Chef Fliegauf’s dish stood out from the plate with an amazing deconstructed cheesecake that was surprisingly light and refreshing with a harmony of sweet, sour, and floral flavours.
