Wellness Wednesday:

Looking to Finish Strong

I, for the most part, completed my main objectives and goals for the year - but by some strange test of fate I could slip up.

So...

For the next 4ish weeks (26 Days - 4 more posts) my plan is to be easy going, but mindful of diet and exercise routine. With widely surpassing my objectives I could tank/skip my workouts or diet and still come out on top of my goals, but I would like to end on the highest note possible - I would like my last weight to be the lowest I've ever weighed AND I would like to be able to say 100% confidence that I went a whole year without a chip, slice of pizza, or an ice cream cone - let alone a single order of take out.

As well - I would be excited to see my final stats on my exercises. To my current knowledge I think I have only missed 3 or 4 workouts - that's 3 or 4 days out of the last 340 days. I'd like to keep that stat below 5 for the remainder of the year if I could... again... for gloating purposes (don't worry... I have no friends so this sentiment probably won't leave the sanctuary of this post - gloating averted).

Closing Thoughts:

The Good:

I decided to simply my workout - and I am still seeing the same/positive results with the simpler workout. That extra stuff I did in November was unnecessary.

The Bad:

It's that time of year where the air is dry and my sinuses and unobstructed breathing is collateral damage.

The Ugly:

My sleep schedule has been trash since my Thanksgiving Break/Vacation. Feel like a walking zombie. There times where I have passed out in the middle of the day.

You probably don't believe me as I write this, but it is true! This recipe really belongs to my great Grandma Calliope! She used to make the authentic Shepherd's pie many times and sometimes after Christmas, she would use the leftovers to make this imitation. My Mom saved her recipe, so now I can share it with you!

And actually this happens in my house many times: I cook so much food and have a lot of leftovers from our Christmas Eve/Day table (which is typical, when Greeks celebrate Christmas).

Hence, this time I decided to follow my Yiayia's recipe and make her absolutely delicious "Shepherd's pie" using leftovers from the roasted Turkey and stuffing.

Plus, that way we are able to eat the leftovers which we usually don't want the next day, let alone that they are sometimes a bit dry.

So follow my instructions to get a succulent, easy, inexpensive new dish after Christmas /Boxing Day!

INGREDIENTS

Ingredients for the filling:

300 gr. / 10.5 oz Turkey roasted, diced, cold (or chicken)

600 gr. / 1 lb 5.5 oz Turkey Stuffing (with chicken livers)

130 gr. / 4.6 oz Mixed cooked Peas, Carrots, Potatoes, green Beans (i.e. Macedoine, canned or frozen, net weight after strained)

140 gr. / 4.9 oz cooked Corn (canned or frozen, net weight, strained)

1 cup / 250 ml Gravy leftover @ room temp. (ready or homemade)

A bit ground Salt and Ground Pepper

 

Ingredients for the mashed Potatoes topping:

1 kg. / 2.25 lb Potatoes suitable for boiling (weighed after being cleaned)

1 tsp. ground Nutmeg

0.35 cup / 90 ml Fresh Milk 2% fat

60 gr. / 2.1 oz / about 4 tbsp. Butter

1/4 cup / 60 ml Single Cream

1 cup / 90 gr. / 3.2 oz Graviera or Kefalograviera cheese, finely grated (altern: Gouda, Manchego)

Ground Salt and Pepper

To sprinkle on top: 2 tbsp. / 30 ml Butter, melted

To garnish: 1 tbsp. fresh Dill (or parsley), finely chopped

1 tbsp. fresh Rosemary, finely chopped

 

METHOD:

A.    Prepare the mashed Potatoes:

1.     Simply follow my easy recipe for Mashed Potatoes but make a double dose from the recipe I originally posted (fyi the ingredients above are for a double dose)!!

2.     If you are not using ready made gravy, use my recipe to make your own.

3.     Let them both cool down to room temp.

 

B.    Assemble the pie:

4.     In a large bowl, mix together the stuffing with the cubed turkey.

5.     Add the mixed, cooked vegetables and the corn followed by some ground pepper (and salt, if needed).

6.     Pour on top the cold gravy and with a large spoon stir to blend all filling ingredients very well.

7.     Scatter the grated cheese in the mashed potatoes and mix to incorporate it.

8.     Spray or brush with oil a 22 ×30 cm. / 8.7 x 12 in. Pyrex dish and then place the turkey mix on the bottom. Level it with a spoon.

9.     Optionally, use a piping (pastry) bag to pipe the mashed potatoes on top of the turkey mix and to make a nice "flowers" decoration. I did it mainly because during baking, the peaks get a nice golden color and glaze and crisp from the melted cheese.

10.  Pour the extra 2 tbsp. butter on top for extra glaze and some more ground pepper.

 

C.     Baking instructions:

11.  Bake Shepherd's pie in a preheated Oven FAN @ 190°C / 375℉ for 35'-40' (depends on the oven).

12.  Remove from the oven and sprinkle the 2 chopped herbs on top.

13.  Let food rest for 10' on the kitchen bench before serving.

 

D. Serving suggestion:

Serve Shepherd's pie hot with some Cranberry Sauce or Jelly and a nice, light and refreshing, green Salad.

Simply mouthwatering, nutritious, practically a complete meal! Food recycling couldn't taste any better!

E. Storage info: After the dish has cooled down, store the tray with leftovers, covered in the fridge, for 1 week or in the freezer for 1 month.

A hearty dish with origins in the United Kingdom and Ireland composed of ground meat cooked in gravy, onions, carrots, celery with a mashed potato crust (can be top and bottom, or just top). It’s a typical meal served on St. Patrick’s day.

Μάλλον δεν θα πιστεύετε αυτό που γράφω, αλλά όμως είναι αλήθεια! Αυτή η συνταγή ανήκει πραγματικά στη προγιαγιά μου Καλλιόπη! Έφτιαχνε πολλές φορές την αυθεντική, Εγγλέζικη πίτα του Βοσκού και μερικές φορές μετά τα Χριστούγεννα, χρησιμοποιούσε τα υπολείμματα για να φτιάξει αυτή τη συνταγή-απομίμηση. Η μαμά μου φύλαξε τη συνταγή της, οπότε τώρα μπορώ να τη μοιραστώ μαζί σας!

Και πραγματικά αυτό που συμβαίνει στο σπίτι μου πολλές φορές είναι ότι μαγειρεύω τόσο πολύ φαγητό και έχω πολλά υπολείμματα από το τραπέζι της παραμονής/ημέρας των Χριστουγέννων (που είναι χαρακτηριστικό, όταν οι Έλληνες γιορτάζουν τα Χριστούγεννα).

Έτσι αυτή τη φορά αποφάσισα να ακολουθήσω τη συνταγή της προγιαγιάς μου και να φτιάξω την πεντανόστιμη της «Πίτα του Βοσκού» χρησιμοποιώντας υπολείμματα από τη ψητή γαλοπούλα και τη γέμιση.

Με αυτό το τρόπο, μπορούμε να φάμε τα υπολείμματα που συνήθως δεν τα θέλουμε την επόμενη μέρα, πόσο μάλλον που μερικές φορές είναι και λίγο στεγνά.

Ακολουθήστε λοιπόν τις οδηγίες μου για να αποκτήσετε ένα ζουμερό, εύκολο, φθηνό νέο πιάτο μετά τα Χριστούγεννα/2η μέρα Χριστουγέννων!

ΥΛΙΚΑ

Υλικά για τη γέμιση της Πίτας:

300 γρ. / 10,5 oz Γαλοπούλα ψητή, κομμένη σε κύβους, κρύα (ή κοτόπουλο)

600 γρ. / 1 lb 5,5 oz γέμιση Γαλοπούλας (με συκωτάκια κοτόπουλου)

130 γρ. / 4,6 oz ανάμεικτα μαγειρεμένα μπιζέλια, καρότα, πατάτες, πράσινα φασόλια (δηλαδή "μακεδονική σαλάτα", σε κονσέρβα ή κατεψυγμένα, καθαρό βάρος μετά από στράγγισμα)

140 γρ. / 4,9 oz μαγειρεμένο Καλαμπόκι (κονσέρβα ή κατεψυγμένο, καθαρό βάρος μετά από στράγγισμα)

1 φλ. / 250 ml υπολείμματα Σάλτσας γκρέιβι @ θερμοκρασία δωματίου (έτοιμη ή σπιτική)

Λίγο φρεσκοαλεσμένο αλάτι και φρεσκοαλεσμένο πιπέρι

 

Υλικά για τον πουρέ Πατάτας:

1 κιλό / 2,25 lb Πατάτες κατάλληλες για βράσιμο (ζυγισμένες αφού καθαριστούν)

1 κ.γ. αλεσμένο Μοσχοκάρυδο

0,35 φλ. / 90 ml Φρέσκο ​​Γάλα 2% λιπαρά

60 γρ. / 2,1 oz / περίπου 4 κ.σ. Βούτυρο

1/4 φλ. / 60 ml Κρέμα γάλακτος μαγειρικής

1 φλ. / 90 γρ. / 3,2 oz τυρί Γραβιέρα ή Κεφαλογραβιέρα, ψιλοτριμμένη (εναλλακτικά: Γκούντα, Μαντσέγκο)

Φρεσκοαλεσμένο αλάτι και πιπέρι

Για να πασπαλίσετε από πάνω: 2 κ.σ. / 30 ml Βούτυρο, λιωμένο

Για το γαρνίρισμα: 1 κ.σ. φρέσκος Άνηθος (ή μαϊντανός), ψιλοκομμένος

1 κ.σ. φρέσκο ​​Δεντρολίβανο, ψιλοκομμένο

 

ΜΕΘΟΔΟΣ:

Α. Ετοιμάστε τον πουρέ πατάτας:

1. Απλώς ακολουθήστε την εύκολη συνταγή μου για Πουρέ πατάτας αλλά κάντε διπλή δόση από αυτή που ποστάρω (τα υλικά παραπάνω είναι για 2η δόση)!

2. Αν δεν χρησιμοποιήσετε έτοιμη σάλτσα-γκρέιβι, φτιάξτε τη δική μου συνταγή μόνοι σας.

3. Αφήστε και τα δύο να κρυώσουν σε θερμοκρασία δωματίου.

 

Β. Συναρμολογήστε την πίτα:

4. Σε ένα μεγάλο μπολ ανακατέψτε τη γέμιση με τους κύβους γαλοπούλας.

5. Προσθέστε τα ανάμεικτα, μαγειρεμένα λαχανικά και το καλαμπόκι και μετά λίγο αλεσμένο πιπέρι (και αλάτι, αν χρειάζεται!).

6. Περιχύστε από πάνω τ�� κρύα σάλτσα-γκρέιβι και με ένα μεγάλο κουτάλι ανακατέψτε να ενωθούν πολύ καλά όλα τα υλικά για τη γέμιση.

7. Ρίξτε το τριμμένο τυρί μέσα στον πουρέ και ανακατέψτε να ενσωματωθεί.

8. Ψεκάστε ή αλείψτε με λάδι ένα ταψί Πυρέξ 22 × 30 cm. / 8,7 x 12 ίντσες και μετά απλώστε το μείγμα γαλοπούλας στο κάτω μέρος. Ισιώστε με ένα κουτάλι.

9. Προαιρετικά, χρησιμοποιήστε ένα ��ακουλάκι κορνέ (ζαχαροπλαστικής) για να βάλετε τον πουρέ πατάτας πάνω από το μείγμα γαλοπούλας και να φτιάξετε μια ωραία διακόσμηση από «λουλούδια». Εγώ το έκανα αυτό κυρίως επειδή κατά το ψήσιμο οι κορφούλες παίρνουν ωραίο χρυσαφένιο χρώμα και γλάσο και γίνονται τραγανές από το λιωμένο τυρί.
