Okay I think @sofipitch was pretty spot on with these but I'll say mine here anyway!

Louis: he's in charge of whatever shitty financial business his daddy left him. Investment banking, hedge fund management, real estate investment, stock brokering etc. Who knows. It's unethical and/or obnoxious and it pays too well for what it is

Lestat: actor or musician is an easy one, but I also think there's a case for fantasy writer. Maybe he's a washed up one-hit-wonder who transferred his vampire rock band gimmick into vampire fiction

Armand: I totally agree with Sofi saying body farm researcher, but I also propose embalmer/funeral director who scams grieving families or CEO of a pyramid/Ponzi scheme

Gabrielle: some kind of field researcher, maybe an archeologist or anthropologist. She works alone and she works well, even in a collaborative field

Claudia: again, Sofi nailed it with Miranda Priestly-style fashion mogul, but I could also see sleazy defense lawyer who takes on big budget clients who are definitely guilty of heinous crimes

Daniel: always a journalist, probably a public interest or personal profile guy. He has a book of abridged interviews coming out and they're all accompanied by black&white photos of the subject. Maybe he's got a Soft White Underbelly sort of YouTube channel

Marius: art history professor who sleeps with freshman students

David: British history professor who sleeps with freshman students
