Soulmates: Okay, you must have telepathy or something, seriously! For a couple weeks now I've been working on a soulmate series with the fandoms in mind being Naruto and One Piece for right now. Getting ideas so things aren't the same across the board has been difficult.
As for the poll... I honestly had a few in mind as a general "who'd like the idea of having a soulmate." Since it wasn't multiple choice I put Itachi but Naruto, Gaara, Kakashi, and Lee, with Neji in a close position behind them, would be really high on my list. It all has to do with their life situations from canon.
So Itachi, if we stayed with canon, I could really see him hoping to meet them especially after being forced to kill his clan. I'm of the mind the Uchiha clan loves deeply, if not so much quickly. Knowing he has someone out there that would love him platonically or romantically without judging his past at least TOO harshly would be something I could see getting him through things. I don't think he'd want to find them because of what he's done and then with being ill, and having Sasuke coming after him...I just don't see him wanting to put them through that. If it was a non-massacre AU situation though, I still see him really loving the concept but in this scenario he'd want to find them. They'd be his safe haven, his quiet place, the one who really knows him behind the mask he wears for family and village. I can even see him actively looking for them depending on how the soulmate connection worked.
As for Naruto, I mean the boy really needs 100% on the poll. After all he's put through, sacrifices, and gives freely for loved ones and village, the boy deserves a soulmate and the sooner the better! Being called demon and monster and shunned as a kid could have really put him on a darker path and if we looked at it logically, he should have. I mean I can really see him being the ultimate villain in the story. However, with a soulmate - if someone explained it to him properly - I could see this being a dream right up there with wanting to be Hokage. To know someone will love him for him, Ramen obsession and all šŸ™‚, would be something extra special to him and boy, don't let him hear you bad mouth them! Before he finds them or not. And then of course, the fluff!!!
Gaara, after his seal is fixed or whatever we want to say happens between the chunin exam invasion and when we see him next as a kage (I may have forgotten if they explained this or not it's been a hot minute since I've seen Shippuden), is kind of in the same situation as Naruto in a way. He'd probably be afraid of finding them at first because of Shukaku and not wanting to know someone who's his fears him. That'd break him, I think. But once he sees they aren't afraid of him and how tender they are with him it would be his most precious treasure.

OH MY GOSH! THIS ASK IS AMAZING! Okay, okay, okay, let me give me thoughts a section at a time, and then I'll get to the other ones ;)
ITACHI
With canon Itachi, I think you're so right in that his soulmate story is a tragic romance. He yearns for them, it brings him peace on his worst nights to know that there's someone out there who could love him, even after everything. But he will never, ever try to find them. If they found him, he'd run away so fast.
He feels cursed. His soulmate doesn't deserve to be dragged into this. They may be sad to never meet their soulmate, but whether they know it or not, Itachi thinks they'll be happier if he's dead.
Where this is complicated a bit, is what happens if Itachi has already found his soulmate before he massacre's his clan. But I still think that he'd run. He thinks it would hurt them less if he doesn't drag them into it. And if they're also an Uchiha? Well, I think he would rationalise that they'd be better off dead, give them a nice genjutsu life before killing them... and then he leaves Konoha with his soul quite literally broken.
Non-massacre Itachi is exactly as you said! His soulmate is his safe space! They would be so cute. Itachi would be so smitten. He pretends to be all logical about it whenever his teammates or Shisui would tease him about eventually finding his soulmate. Acting all mature like 'it's effort that makes a relationship succeed' and 'my first duty is to my clan'.
But then. Then! He meets his soulmate and boy is gone, he's a pile of love sick mush. Sasuke is incredibly judgemental about the whole thing lol.
NARUTO
So, Naruto is actually who I voted for, so safe to say I agree with you haha. But you summed it up so perfectly!
Child!Naruto wants to be loved. He wants someone to see him and love him, that's his biggest wish. Wanting to become Hokage is actually a step to achieving that, so actually being loved is his number one goal. So if he knew he had a soulmate out there somewhere? Oh boy. Meeting them is his dream, his ultimate life goal.
He dreams about them, he even talks to his imaginary version of his soulmate when he's sad. If he has some kind of mark, he caresses it all the time. He's keeps a sharp eye out for his soulmate.
But what I think is so cute about a soulmate AU with Naruto, is he talks about them constantly, he's desperate to find them, everyone around him is like lol, poor soulmate is going to be bombarded by him.
And then Naruto meets them, and he gets shy. He's all blushy and starry eyed and shy, and it's literally the cutest thing in the world!
GAARA
I think your idea is very realistic for Gaara, in the sense that he needs to be in the right place, as an adult, before he's anticipating his soulmate.
I do think that he's way more cautious than Naruto though. While he believes in soulmates, I think he doesn't quite fall in love with them until he meets them and gets to know them. He's not going to fall in love with a concept like Naruto.
But once he finds them, he's so pro soulmates. With his own children, he encourages them heavily to find their soulmate, and will give as many resources as they need to make it happen.
So in a weird way, Gaara is more in love with the concept of soulmates after he's already found his own.

I don't think I personally could really properly improve any of these characters, there's just so much that goes into it. That being said, there are two that I think were done dirtiest
And that's Naruto and Sasuke. And I don't necessarily mean "improve" them, I'm thinking more just treating them with a little more empathy.
Sasuke is the easier one to explain. We love to meme on Sasuke and I agree it's hilarious, but in canon I don't think Sasuke is really given the chance to be a broken kid and just being allowed to be sad about it. Can't be sadness, it has to become anger. And that's mainly because Sasuke is stuck in a boys boy manga where combat = character development, so taking time to explore his complex feelings isn't the point or focus.
Sasuke has been done the worst by Danzo and the gov of Konoha, and I personally don't think he owes the village anything. Him becoming the Shadow Hokage just doesn't make sense to me. Let this guy rest. Give him a nice martini and a sun hat. Take a week off, Sasuke.
He's not then allowed to have proper closure. He can't go home to his wife and daughter and enjoy stability and support. He has to stay away so he doesn't loose his aloof vengeng!1 motif.
Sasuke's story, the severely broken and traumatized child forced to grow up too quick but is mentally stuck in the past, has since been done a lot better with Arcane's Jinx. But Jinx was written to be a character, not a vessel for millions of new abilities for boys to scream over.
As for Naruto This is gonna be an unpopular opinion but hear me out
I don't think he needed to become Hokage.
This has nothing to do with his abilities or his lineage or anything. Man's qualified. His motivation to become Hokage is so people finally notice him, to finally respect him and so he can have friends. But he didn't need to become Hokage to accomplish all that.
So, do I think he needed to become Hokage to be happy? Not really. To me it's less of a triumph and more an inevitability. I think Konoha's whole ass system is fucked and needs a major overhaul, which is what Naruto could have done just sayin
But this also ties into Naruto only really seeing himself as loveable if he's useful. If he just saves the village enough times, they'll finally like him and treat him well. I think Naruto deserves better than that. Konoha has a very "You're worthless if you can't be of service" mentality which isn't the cutest, besties. I wish someone (preferably Hinata) helped Naruto realize that he's worthy of love just for being alive, that he's worthy of being loved and taken care of too. That if Konoha turns on him for being imperfect, that's on Konoha. He's just one person.
It's a very Pixar way of viewing his story, I'm aware of that. Him realizing he doesn't need to become Hokage. But then what would he be? I think he should have taken after his first father figure, and arguably his most humble. I think he should have become an academy teacher like Iruka. He has first hand experience being the underdog, the one struggling, and could be there to encourage and support young ninja like Iruka supported him. Plus it gives him more time to be with his wife and kids, I want him to be the lamest and cringiest dad known to man. I need it.
But I know these are unpopular opinions for a reason. This isn't the series for this kind of writing lol

Poking the Uchiha Cousins Live AU with a stick and I'm most likely naming one of my little ocs Naoto for a single joke to myself (Naoto and Naruto are one syllable off so when Team 7 is formed, Sasuke is at risk of calling Naruto by the wrong name at all times) (It doesn't happen that often but even once is embarrassing enough)
Going on a bit of a ramble because somehow putting this stuff together in a shareable format helps me think!
....it's way too convenient if there's an even split in genders of kids but a couple kids transed their gender and now there's more boys than girls and I'm a little self-conscious of it HAHA such is life. I'm not allowed to add more ocs to this family to balance it out because there's already 14 of them.
I keep forgetting if the series ever mentioned how many Uchiha there were before Itachi wiped them out, so I keep wondering if I made too many kid ocs? Mentioned it before, but I'm going with the thought that in this AU where Itachi got given very slightly different orders, everyone left alive is either Sasuke, the little kids who were too young for academy training, or the like, three kids who were really very not interested in ninja training and were thus purely civilian, more or less.
(something something old man doing the ruthless calculus of wanting to keep spare sharingan around and thinking a bunch of comparatively helpless, untrained and traumatized kids would be easier to manipulate if needed) (also, getting rid of all the other academy students keeps me from trying to make even more kid ocs than I have right now)
Feels obvious to say but I feel like Uchiha kids were probably strongly encouraged to go for ninja school for various practical reasons i.e. my brain started cackling about needing an official ninja license to do certain jobs anyway, so you might as well go to ninja school for that if not any other reason like clan pride or social pressure or like, on the off chance that someone manifests a sharingan, formal training would be Really Fucking Handy to have. (but also I'm just captivated by the fic out there that mention using stuff like doton for landscaping and other everyday things)
(and also the fire jutsu rite of passage bit?) (I'm like. wigglyhands. i guess regardless of if they go to the academy or civilian school they probably do have to do a little home tutoring in basic skills, but there's home tutoring and then there's getting licensed to do stuff, etc)
I was also thinking about a post I saw and lost track of that was talking about the idea that a bunch of Uchiha clan culture gets lost because of the massacreā€”it lined up with me thinking about how if there was any clan-specific methods for crafts and whatnot, they'd better hope that there are manuals and written instructions somewhere, or else if the cousins wanted to try their hands at it they'll have to re-invent based on what's left behind
and what about story time! what about music and dance! they're a pack of very small children so no one remembers shit, even if they manage to bring Itachi back into the fold, Itachi was 12 or 13 at the time, there's so much he might not know or pay attention toā€”and if he comes back, that would be when everyone is older, memory fades! Depressing, man
I don't think the kids would all forgive, and Itachi wouldn't want that anyway...he wants penance and he wanted to die to Sasukeā€™s vengeance but there's something fun about him having to live with that weight of what he did (orders or no, it was his hands that held the blade etc etc)

Naruto - He can tell the minute he sees the Empress's face when she walks into the harem after the meetings that things didn't go so well. He gives her an invigorating speech about how it'll all work out soon. If that doesn't work, he'll probably try and entice her into some of the old shenanigans they used to get up to when they were kids. Maybe running in the gardens at night, or sneaking into the kitchens to steal food. Just something to make her forget about everything for one evening.
"Aww, I'm sure you'll be able to get them to agree next time! And if not, I heard the cook's been making these amazing new flatbreads, I'm sure they won't notice if a few go missing!"
Sasuke - Talking to Sasuke about this is good for the ego. The ways he talks about how stupid these idiots are for turning it down makes the Empress feel less like it's her fault. The Empress is probably trained with a sword, so Sasuke offers to go and spar to burn off any lingering energy from the meetings too.
"They're idiots not to agree. You'll show them. Give it a few years and they'll be begging for another chance."
Kakashi - He approaches it from a practical perspective at first, suggesting that if they know why the deal fell through, they can now rework the strategy and try again. If they still donā€™t cheer up, he isnā€™t really sure what to do... Food and head pats??? That works on his dogs??? He sends a servant to bring some food and just pats the Empress on the head with aĀ ā€œthere, there.ā€ Heā€™s so awkward, I love him haha.Ā 
"Rework the plan. You know why they turned you down, so that means you can fix it."
Gaara - Gaara is very knowledgeable on politics, but heā€™s not the kind of person to prioritise constantly retrying the same leads again and again, instead he likes to look for new solutions. He writes off this deal as unsuccessful, but why did you want that deal? Is there another country who can offer what you need? Can we live without the deal? At the end of the discussion, he absolutely offers his room for the Empress to rest in tonight with him. He doesnā€™t mean it as a innuendo though, he means it literally.Ā 
ā€œHmm, yes, those ambassadors are known for being especially difficult, it isnā€™t your fault. Perhaps there is another way to solve the problem?ā€
Haku - He is hesitant to give his opinion and decides against saying anything specific about the deal. He doesnā€™t feel like itā€™s his place to do so. Instead he focuses on getting the Empress to feel better. He initially thinks about offering to dance for her, but he gets embarrassed about that and instead offers a walk in the gardens, or if it is winter, maybe some tea and cakes. He will definitely accept any advances the Empress may make towards him, but heā€™s too shy to offer it unprompted haha.Ā

Shikamaru - He almost certainly had a big role in helping you design this proposal, so when you walk in shaking your head, heā€™s frustrated. There isnā€™t going to be an early night for him tonight because now you both have to go through everything to figure out what happened and bring Shikamaru up to speed. This whole thing is troublesome...

I could just be biased but so far during my short 7 months as a Naruto fan I've noticed that Anti Neji, Anti Sasuke, Anti Uchiha, Anti Hyuuga (not Hinata though), Anti SNS people are full of shit. So are the Pro Sakura, Pro Hinata, Pro SS/NH people. Good lord, they're wrong on every take.
..I know SNS isn't perfect, neither is its fandom, but I've yet to see an Anti SNS person making any sense. Not including when they talk about the less desirable SNS fans, like the ones that totally fetishize Naruto and/or Sasuke for example
A lot of right-wing dudebros are anti Uchiha. I remember this dudebro who argued with my friend said to her that it makes sense to put a group of people in a ghetto if you don't trust them. He also said it's good the Uchiha were exterminated because like Tobirama said they are evil and crazy. Even some sns defend Konoha and Tobirama and claim anyone who talks about the Uchiha being discriminated is a Sasuke stan or an Uchiha apologist. Funny how I remember my friend and even myself used to argue this NH fan who shit on the Uchihas all the time, he was so delusional and Hinata was like a waifu to him. Now the same nonsense comes out of the mouths of sns shippers. Do these new fans think we haven't heard the same arguments and excuses over and over again over the years?
Anti Sasuke straight up lie like saying he killed 1000 people or that he never won any fights. They are really something else, if you hate something so much you need to make stuff up the hatred must be something personal, maybe Sasuke reminds them of someone who was better than them or rejected them.
Anti Neji people are usually Hinata wankers who think he abused her. As if he wasn't her slave. He already was going easy on her, then she just had to rub his slave status in his face. He even died to save her useless ass... all for her to lust after Naruto's big manly hand.
Anti sns (people who hate the ship itself) tend to take stuff out of context and ignore other things. They'll be like "this doesn't make sense (to me) so I don't take it into consideration, this is a retcon, this is one-sided because Sasuke doesn't react the exact same way as Naruto etc.". I don't understand. They don't have to ship it but they really are ignoring part of Naruto and Sasuke's characters in their arguments.
SS/NH donā€™t care about the story and the characters, only their own fanon romance, some of them even defend the spin offs saying Kishi needs ā€œhelpā€ with romance, basically admitting they always supported relationships with no development or chemistry in canon. But they donā€™t care because this is about them and not the story. They also have one of the most toxic fandoms out there and even now that they have ā€œā€œā€œā€œwonā€ā€œā€œ like they always say they arenā€™t satisfied, because many people still think their ships are bullshit, and because they need to prove to people their ship is better than their sister ship, like how they are now fighting whether the Last or Retsuden is better. Itā€™s so crazy. And of course meanwhile they try to claim sns tropes as their own because their ships suck.

I do have some questions!
1. The missions that Team Taka accepts, are they only shinobi related? or are they also more mundane like farming, building?
2. If they're shinobi related, do they have hard nos? and what are they willing to accept?
3. You said that Danzo dies with the help of all Taka, but do they take more actions? making it public? destroying the world?
First of all. thank you!!! I am so glad I have interested at least one(1) person in this AU idea. And I would love to read it too, but unfortunately I would have to like... actually write it. Bummer.
To answer your questions:
1) They're a mix of both! What I had in mind is that they're often moving a lot, village-to-village, town-to-town, maybe even the city, in search of information on the things they're searching for (The 7 Swords of the Mist, traces of Juugo's clan, traces of the Uzumaki, etc.) and so here and then they'll either find someone who needs their immediate help or ask around if they can help with anything if they need the money. Sometimes a mission will be "my son got kidnapped after a village attack please helpme find him" or helping with groceries. Like your usual shinobi missions, really.
They never take more money than is strictly necessary (which is at Sasuke's insistence) when they move as a group. Sometimes they'll split up around a town to take a few individual odd jobs, and Karin and Suigetsu will sometimes take a little more than they think the mission is worth, but only if the client looks well off enough. Sometimes they will do missions for free if they look particularly dire and they feel too bad to charge the client, which happens a lot more than they'd expect.
2) They discuss what their limits would be, when they're acting as a group, among each other. Since Sasuke's no longer leading them towards a goal that is his alone, "just do what Sasuke says" isn't how they function anymore (Suigetsu and Karin will constantly remind Juugo of this, who just kind of already decided how that would be how he'd work for himself. Some encouragement from Sasuke himself and more time getting used to working as a team eventually leads him to speak up about what he thinks more). What they decided after long discussion is:
They will not take assassinations as long as they can all agree that the person being assassinated deserves it. Which kind of people fit into that is another subject for discussion but they can all agree that they won't entertain petty rivalries or requests from people in high positions (rich, noble, etc.) that are clearly abuses of power.
They will not bother helping people who can clearly help themselves, if it's for mundane every day tasks. They will check for it if that happens to be the case.
They will not take on anything that keeps them in one place for too long, given that they're still on the run and two of them have their faces on official village watchlists.
3) I hadn't thought as far as "what do they do with what they know now and after killing Danzo", actually! That part is still something I'm working on. But they're definitely not gonna go public as far as like being the faces of the Revolution, or something. They don't have the power or the resources for that, and prefer (and are better-suited) to do some individual direct action.
I did mention that Obito/Madara as Akatsuki ringleaders are completely absent from this AU, making it so that the Akatsuki and what they do are 100% the work of Konan and Nagato, so... at some point, Hebi are radicalized enough to see the Akatsuki less as dangerous criminals and more as people who had a point. They eventually face with Kisame, who has a sword Suigetsu wants, who is perfectly happy to tell them what the Akatsuki wants and what their true motives are. So they could collaborate with what's left of them from time to time (that being just Kisame, Konan, and Zetsu, lol). I do not believe in Konan trusting Naruto so readily like Nagato did so she won't do that in this AU. She will try to rebuild the Akatsuki, or at least a movement that can stand against the Hidden Villages and challenge them, bc it's what she deserves. And Hebi can help with that, what with the connections with other people they've built, and such.

I love them
I imagine them as friends before all else, so a platonic thing, but I will never say no to Lee being loved and cared for by his partner. But regardless of their relationship and how it shows itself, I know these two are going to be VERY entertaining. Any combination of these two together is the same wonderful mix of "the exhausted ass and the best most exhausting person you know". You'd think considering that Shikamaru and Lee would just make this mental feedback loop of "pissed because he's too much so I'll just ignore him in hopes he fucks off" and "disappointed he isn't enough so I'll just keep trying until he responds" and they surely do this a lot but I think that's understating both characters. Shikamaru obviously has the capacity to willingly be around deeply tiring & energetic people (point in case Naruto) and Lee clearly isn't... "on" all the time, and is capable of calming down to keep less energetic people around, proven by his apparent friendship with people like TenTen and Neji (who I still don't like but I digress). They won't cancel each other out, they'll fill the gaps. Lee teaches Shikamaru to move and take in life more in the now while Shikamaru teaches Lee how to slow down and enjoy the little things.
If I really sat here and thought about Naruto and its significant themes I could probably explain why Lee and Shikamaru are narrative foils or why they'd make competent and compelling friends and how it all ties back into war and complacency within it and how no one wins but that would just turn into "Pepsi rants about how Rock lee should've been the main character, not Naruto" again and no one wants to hear me on my soap box. So let's just say one being super hyper and the other being very lazy is the peak theme wrap-up of naruto.
I do everything in the name of humor so the pure potential of these two is too much to just ignore. I actually have a draft rn and the idea goes as follows. "Lee and Shikamaru are tasked with killing Naruto and Sasuke after too many offenses against the village. The pair is considered better off dead than alive, too much of a liability, and they're sending their best child soldiers to finish the job. Lee hears the news and is upset for about 30 minutes before clocking into the killer ninja mode and Shikamaru 55. The story follows the pair as they hunt for their targets and also fall in love <3" Just want these two to shrug and be like "well jobs a job" and get on with their life. They joke across campfires and laugh over treetops. Lee gets all scary and killer ninja-ie and Shikamaru blushes. The world is good.
I think all characters not interacting with Lee is wasted potential so 1000000% a fucked shot in the dark.
Back to humor even funnier if Lee and Shikamaru gotta deal with their fuckin weird exs in the process. Why are Gaara and Ino here? Because i like them complaining about romance together dripping in the blood of ninjas sent after them in retaliation. Just a cluster fuck mess
I don't even know if i answered your question or ask right but TLDR I have some good thoughts on them and I like them a lot. solid 8/10 pair
