What is chai made of?
According to Wikipedia
Masala chai (/tʃaɪ/; lit. 'mixed-spice tea') is a tea beverage made by boiling black tea in milk and water with a mixture of aromatic herbs and spices.[2] Originating in India, [3] the beverage has gained worldwide popularity, becoming a feature in many coffee and tea houses. Although traditionally prepared as a decoction of green cardamom pods, cinnamon sticks, ground cloves, ground ginger, and black peppercorn together with black tea leaves, retail versions include tea bags for infusion, instant powdered mixtures, and concentrates. The term "chai" originated from the Hindi word "chai", which was derived from the Chinese word for tea, cha (see: Etymology of tea). In English, this spiced tea is commonly referred to as masala chai,[4] or simply chai,[5] even though the term refers to tea in general in the original language. Numerous coffee houses use the term chai latte or chai tea latte for their version to indicate that it is made with steamed milk, much like that used to make a caffè latte, but mixed with a spiced tea concentrate instead of espresso. By 1994, the term had gained currency on the U.S. coffeehouse scene.[6]

How to drink chai?
To prepare chai latte (or chai tea) at home:
Using a tall clay mug, also known as kulhad, pour hot water over the spices mix (fill to about a third of the way up)
Leave to brew for 3-4 minutes.
While your tea is brewing, froth enough milk to fill the cup.
After 3-4 minutes, remove the tea bag and top the mug up with frothed milk.
Drink while inhaling at the same time to avoid burning your tong.

There was a time when exotic spices were limited to haut-société… kings, queens and their closest social circle were the only ones to have the right to delight such exotic yet limited goods.
In the Early part of the middle ages (before the Crusades), Asian Spices in Europe were costly and mainly used by the wealthy. A pound of saffron cost the same as a horse; a pound of ginger, as much as a sheep; 2 pounds of mace as much as a cow. A German price table of 1393 lists a pound of nutmeg as worth 7 fat oxen.
Unlike earlier times when monopolies dominated the spice trade, commerce in spices is now relatively decentralized. Throughout the world, spices and herbs are frequently used in cuisine, largely to improve flavor and to provide new tastes.
Today, people are increasingly interested in enjoying spices and herbs for health benefits. As research is progressing, more evidence is supporting some of the anecdotal information supplied by our ancestors.
Let’s put some spices to work and let’s dive to this unique so tasty and comfort meal TIKKA MASALA CHICKEN.
Chicken tikka masala is a dish of chunks of roasted marinated chicken (chicken tikka) in a spiced curry. Its origin is disputed. The curry is usually creamy and orange-colored. 
Tikka is the Hindi term for “small chunks,” and masala means a spice blend. So when small chunks of anything, like chicken, are cooked in a sauce with a particular spice blend, it is called Chicken Tikka Masala.

Ingredients
for 5 servings
CHICKEN MARINADE
3 boneless, skinless chicken breasts
½ cup plain yogurt(125 g)
2 tablespoons lemon juice
6 cloves garlic, minced
1 tablespoon minced ginger
2 teaspoons salt
2 teaspoons ground cumin
2 teaspoons garam masala
2 teaspoons paprika
SAUCE
3 tablespoons oil
1 large onion, finely chopped
2 tablespoons minced ginger
8 cloves garlic, minced
2 teaspoons ground cumin
2 teaspoons ground turmeric
2 teaspoons ground coriander
2 teaspoons paprika
2 teaspoons chili powder
2 teaspoons garam masala
1 tablespoon tomato puree
3 ½ cups tomato sauce(800 g)
1 ¼ cups water(300 mL)
1 cup heavy cream(250 mL)
¼ cup fresh cilantro(10 g), for garnish
cooked rice, for serving
naan bread, for serving

SPECIAL EQUIPMENT
Bamboo or wooden skewer
Preparation
Slice the chicken into bite-sized chunks. Combine the cubed chicken with the yogurt, lemon juice, garlic, ginger, salt, cumin, garam masala, and paprika and stir until well-coated.
Cover and refrigerate for at least 1 hour, or overnight.
Preheat the oven to 500°F (260°C). Line a high-sided baking pan or roasting tray with parchment paper.
Place the marinated chicken pieces on bamboo or wooden skewers, then set them over the prepared baking pan, making sure there is space underneath the chicken to help distribute the heat more evenly. Bake for about 15 minutes, until slightly dark brown on the edges.
Make the sauce: Heat the oil in a large pot over medium heat, then sauté the onions, ginger, and garlic until tender but not browned. Add the cumin, turmeric, coriander, paprika, chili powder, and garam masala and stir constantly for about 30 seconds, until the spices are fragrant. Stir in the tomato puree, tomato sauce, and 1 ¼ cups of water, then bring to a boil and cook for about 5 minutes. Pour in the cream.
Remove the chicken from the skewers and add to the sauce, cooking for another 1-2 minutes. Garnish with cilantro and serve over rice or alongside naan bread.
