Dom Potol Recipe | Bengali Doi Potol Recipe | Scroll Recipe Ingredients: • 6-7 parwal/patal • 3 TBSP oil • salat to taste • 2 TBSP coriander, cumin and chilies paste • 1 TSP ginger garlic paste • ½ TSP turmeric powder • ¼ cup whisked curd • 1 TSP sugar • 2 green silted chilies • 1 TSP garam masala • ½ cup milk • 1 TBSP ghee Process: • Heat the pan and add 3 TBSP oil • Add Parwal/Patal • Add salt to taste • Sauté it for 5-7 mints and keep it separate • Add 2 TBSP coriander, cumin and chilies paste in the same oil • Add 1 TSP ginger garlic paste • Add ½ TSP turmeric powder • Add ¼ cup whisked curd and mix it nicely • Add parwal/patal • Add ½ cup of water • Add 1 TSP sugar and mix it nicely • Add 2 green chilies • Cover with a lid until its completely cooked • Add 1 TSP garam masala and mix it • Add ½ cup milk and cook for another 5 mints • Add 1 TBSP ghee and mix it nicely • Serve hot with rice/roti ================================================== please like & subscribe and comment what you like and what you didnt like. Dehati Mutton Recipe | Authentic Mutton Curry | Scroll Recipe Ingredients: • 1 kg mutton, cut into pieces • 2 onions, finely chopped • 2 tomatoes, finely chopped • 2 tbsp ginger-garlic paste • 2 green chillies, slit • 1 tsp cumin seeds • 1 tsp coriander seeds • 1 tsp red chilli powder • 1 tsp turmeric powder • 1 tsp garam masala powder • 1/2 tsp kasuri methi (dried fenugreek leaves) • 2 tbsp oil • Salt to taste • Chopped coriander leaves for garnishing Instructions: 1. Heat oil in a pan over medium heat. Add cumin and coriander seeds and let them crackle for a few seconds. 2. Add chopped onions and green chillies to the pan and sauté until the onions turn golden brown. 3. Add ginger-garlic paste and sauté for 1-2 minutes until the raw smell goes away. 4. Add chopped tomatoes, red chilli powder, turmeric powder, and salt. Mix well and cook for 5-6 minutes until the tomatoes become soft and mushy. 5. Add mutton pieces to the pan and mix well. Cook for 5-7 minutes until the mutton turns brown. 6. Add garam masala powder and kasuri methi to the pan and mix well. 7. Add enough water to the pan to cover the mutton pieces. Cover the pan with a lid and let the mutton cook on medium heat for 30-40 minutes or until it becomes tender. 8. Once the mutton is cooked, remove the lid and let the curry simmer for another 5-7 minutes to thicken the gravy. 9. Cook them with the spices for 3 minutes. • Cover and cook on low heat for another 5 minutes • Add 1 TSP homemade roasted cumin powder • Add ½ TSP homemade garam masala/ (whole Bengal gram • 1 TBSP ghee • ½ TSP homemade garam masala Process: Step 1: • Grease your palms with mustard oil to prevent the sticky sap from sticking to your hands. • Remove outer bracts and collect the flower clusters. Repeat the process for each layer. (Calyx and pistil, Discard these two parts from all the florets) • Save the inner core • Chop the florets and inner core • Dip the chopped florets and inner core in water for 3-4 hours • Transfer the chopped florets and the chopped inner core to a pressure cooker. • Add salt, turmeric, and water. Pressure cook everything on medium heat for 3-4 whistle. • Strain the mocha.
