Spiked Apple Cider
Tumblr media
This is the recipe I use for our spiked apple cider. I normally use an existing apple cider as the base just to intensify all of the flavors. Captain Morgan is our go-to Rum for this. Add your own spin to make it your own.

I use this recipe to make the perfect spinach with the pumpkin soup. I tend not to add the red pepper flakes only because some of my family aren’t fans of spicy food.

Pumpkin Soup
Ingredients:
1 pack of sausage (meat of your choosing)
1 chopped onion
1 chopped red and green peppers
1 tsp of black pepper
1 tsp of sea salt
1 tbsp of minced garlic
2-3 bay leaves
1 can of organic pumpkin purée
1 cup of water (or beef broth)
1/2 cup of coconut milk
Bring pot to medium fire with 2 tsp of olive oil. Allow garlic to simmer for five minutes.
Cut sausage into inch-long slices. Add meat and chopped onion to sauté in garlic and oil. Cover pot with lid to ensure heat cooks meat thoroughly, making sure to stir occasionally for meat to brown on both sides.
Once meat is browned pour in water or broth. Keep fire on medium and mix broth with contents in pot to loosen any residue from the sides.
Stir in pumpkin purée, coconut milk, and chopped peppers until throughly blended. Also include salt, pepper seasoning and bay leaves. If you feel the need to include any extra seasons to taste to your liking do so now. At the end you can add the Bay Leaves. Cover the pot and set to simmer for 30minutes to one hour.
Remove from stove and serve. Best of paired with roasted vegetables and/or toasted homemade garlic bread.

Kahlua Cake
For this recipe I used a Duncan Hines Yellow Cake Mix and simply added an extra egg, added vanilla extract, replaced the water with milk, and the oil with butter. I normally bake my cakes in a Bundt pan, as it makes for drizzling the Kahlua mix allot easier. You can follow this link to read up more about hacking your box cake recipes. Simply follow te instructions on the box with the added ingredients. Afterward proceed with making the Kahlua drizzle for the cake.
Kahlua Cake Drizzle
Ingredients:
1/2 stick of butter
1/2 cup of milk
1/2 cup of Kahlua
Melt the butter into a saucepan on medium heat. Add in milk once melted and stir until softly blended. Stir for five minutes until milk mixture begins to heat.
Softly pour in Kahlua mix and stir. Cover and allow to simmer on low heat for about ten to fifteen minutes, stirring occasionally.
take a small butter knife and slice holes into the cake.
using a small spoon or measuring scoop, pour your mix over each of the slices taking care to in enough that it can fill the insides too. You want your cake to absorb the mix, as well as drape the top just a bit.
Once all the slices have been filled, let the cake sit for a few hours to absorb the flavors. Cut and serve alone or with ice-cream.
