The original Phantom orchestra features 27 musicians in the pit every night but sadly this is only the case in London and New York at the moment.

All the revivals and the tour have only a reduced 14 piece orchestra. There are for example only 3 violins instead of 7. I think @operafantomet is quite familiar with the orchestrations and perhaps she has a detailed list.

To imitate the sound of a big orchestra the new productions use the three  keyboards in conjuntion with computers to create a sound that is similar to the original one yet someone who is familiar with the original score can easily hear the difference.

During one of my recent visits to the Danish revival (14 musicians) the computers failed at the beginning of Don Juan Triumphant and I thought I share with you what came out of the pit.
