Got up at 4 for a bike adventure and AccuWeather lied. I got caught out in a severe thunderstorm for two hours in the dark in the woods. Calories up for the holiday but I'm doing more celebrating tomorrow. Should be fun. I'm trying new recipes.

Day 27




Halal cart style chicken over rice was an unexpected joy. Overchurned my ice cream and it was basically foam. Didn't get a ton of movement in because I had to take a half day to be a parent but hopefully will tomorrow! I'm glad to see the progress on the scale too. If I can hit day 100 and be under 175 I'll be so happy, and I'm on track!

Recipe: Healthy Fudgey Brownies
Ok i'm pretty happy with this recipe. They're the right consistency, but the flavor is maybe a little off and artificial because of the sweetener. I think if you had some kind of mix-in to offset it, it would help a lot. Honestly adding in chocolate chips would be a huge improvement. I'll keep experimenting. Only like 600cal and 36g of protein for the whole thing!
Dry:
1/2 cup unsweet cocoa powder
1 scoop chocolate whey protein
1/2 cup erythritol
2 tbsp flour (honestly could probably skip, maybe replace with 1tsp xanthan gum)
1/2 tsp baking powder
1/4 tsp salt
Wet:
3 tbsp melted butter
1/3 cup fat free greek yogurt
1 egg
1/2 tsp vanilla
Combine dry, mix. Add wet, mix. Put in a greased 8x8 pan. Bake at 325 for ~30 minutes (plus or minus 10 minutes for your pan type probably).

Pork ribs were on sale at the grocery store and I realized I'd never had them homemade before, and it'd been years since I had them at a BBQ place. They were unquestionably the best I've ever eaten. Steps and calorie burn was def way higher. My watch died this morning halfway through doing yard work and then I took my kids to the pool.

Recipe: Protein Carrot Cake



So this is something I've wanted to figure out for a while. As is, it has around 200 calories per slice (8 slices total). Overall, I'd give it a 6/10. I think if I was gonna redo I'd add 1/4 cup applesauce (it's a little dry and bland), and replace 1/4 cup of Greek yogurt with 2oz of softened cream cheese (it was sweet but really yogurty, I think the cream cheese would balance it out more, maybe worth adding a bit of erythritol here too if u want)
Ingredients:
Wet:
1 cup shredded carrots
4 tbsp melted butter
1/3 cup milk
1/2 cup erythritol
1 tsp vanilla
2 eggs
Dry:
1 cup flour
1 scoop vanilla protein
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
1/4 tsp ground clove
Frosting
3/4 cup fat free Greek yogurt
1 tsp vanilla
1/4 cup powder sugar
1/2 scoop vanilla protein
Pecans are optional but I like em
Combine wet ingredients, mix. Add solid ingredients, mix. Put in a greased 4x8 pan and bake at 350F for 30 minutes until you poke it and it comes out clean. I tented aluminum foil over it 15 minutes in so the top wouldn't burn. Remove from pan and allow to cool, the. Mix frosting ingredients and spread over the top. Store in fridge.

Had a fun bike adventure this morning. I ate a small breakfast at the top of my tower while I watched the sun rise. A doe came up to me on my hike but I yelled at her because I was scared lol. I think doing this once a week is good for my mental health but every time I do it I'm wiped out for like two days. I'm gonna try to force myself to get to and workout in the morning anyway.

idk how to log everything I ate today. I was at a BBQ for hours and ppl just kept handing me food it was bad. Oatmeal protein pancakes with sugar free syrup as a pregame to make myself full only made me feel bloated and gross.

New protein bars were alright, not what I expected. Tomorrow will probably be crazy with a big BBQ im going to but I'll just focus on meat and vegetables and try my best to track since I can't properly measure.
