daiginjo (大吟醸) - polished remaining < 50%   - if polished remaining 30%, takes 3 days ginjo (吟醸) - polished remaining < 60% honjozo (本醸造) - polished remaining < 70%   - these are more receptive to being served at both warm/chilled temperatures   - takes 1 day to polish junmai (純米) - polished remaning 100-70%

tokubetsu (特別) - used as adj; means that the sake was made with higher quality rice namazake (生) - unpasteurised sake; brighter, fresher taste; must be stored fridged nigori (濁り OR にごり酒) - cloudy white, has rice bits; creamier koshu (古酒) - aged sake; fragrant and more mellow   - jukusei means aged more than 3 years kijoshu (貴醸酒) - 'dessert' sake; final addition of water during brewing is substituted with sake, the yeast cannot convert all the extra sugar, creating a sweeter sake

rice polishing - sake from less polished rice tends to be heavier and thicker, more rice-y flavoured; in contrast, sake from more polished rice tends to be lighter and more aromatic

correction surgeries for shortsightedness. three generations of surgeries involving laser procedures in the last 30ish years. each new method/tech takes about 10 years to fully mature and plateau.

1) PRK - the first laser method. an entire chunk of the cornea is removed to flatten the curvature. all of it becomes raw tissue so the healing process hurts a lot more than later generations and takes 1-2 weeks.

2) LASIK - second laser method, where a flap of the cornea is cut and an inner layer is removed to flatten the curvature. flap is about 270degrees of the full iris. flap is closed again. hurts less than PRK because there’s no raw exposed tissue. but complications are possible from high impact or friction which can cause the corneal flap to reopen. ℹ️ - cornea tissue can never heal to its original state once it has undergone surgery. 50% of the cornea’s integrity is lost

3) SMILE - newest method, uses a different laser technology from the previous two which allows penetration through the top corneal layer. the inner layer is cut using this new laser tech, and then a small incision 2-4mm is made so the cut tissue can be removed. healing is very fast, 1-2 days, and hurts less. only 7% of the cornea’s structural integrity is lost.

before all this laser tech, the soviets had another technique called radial keratotomy, where the cornea was flattened by basically destroying 70% of its cornea integrity lol 8 incisions would be made around the iris like cutting a cheesecake into eighths, but the center area (pupil area for seeing) would not be incised. the cornea sort of collapses and flattens. but bc there’s no more structure to the cornea, high impact can rupture the eyeball.... there was a case where someone’s eyes burst from airbag impact during a car crash while the rest of their body was fine. this method is no longer used

eyes opening while sleeping - if your iris is visible when your eyes are open that’s more severe. just eye whites are not as bad. you can get eyedrops to use pre-sleep to help. also default eyelid state is open, closing requires voluntary muscle contraction and eye closing can trigger a reflex of eyeball rolling up

python - versatile, good option for data science, data analysis, working with big data. also good for ML/AI. viable for backend web development too. however it’s processing speed is much slower (compared to C++) as it runs through an interpreter

C++ - much faster processing speeds, thus good for game dev.

homemade ricotta - vinegar/lemon juice & milk. ratio is ~1.5L milk to ~3 lemons (5 lemons for the extra tang). #1 heat the milk to ~85C or when it is lightly bubbling at the edges, remember to stir to prevent scorching. #2 turn down the heat to low. #3 add lemon juice/vinegar and let the milk curdle. #4 turn off heat and leave for 20mins. #5 drain! drain longer for crumbly, drain shorter for creamy.

jonathan larson wrote Rent (the musical) which shaped and moved forward american musicla theatre. unfortunately, he died just before Rent’s premiere, so all awards he wont posthumously. his musical tick, tick, tick... boom! was remade by netflix into a semi autobiographical movie. he wrote tttb as a “rock monologue” and it retells his process of writing Superbia and how it never made to production.

canelé - small french pastry. shaped like a cartoon pudding, with rounded sides like flower petals and tallish. anyway... core ingredients include rum and vanilla. the outer layer is a caramelised crust and the inside is soft and custardy.

when making soft baked chewy cookies, brown sugar is used both to caramelise the outside for a crunch and also used on the inside for the chewines. for the “falling apart” cookie effect, that is done by taking out the tray mid-way when half-baked and then banging it so it collapses.

chengdu and shanghai are the more lgbtq+ friendly cities in china.

when you get rubbing alcohol on leather (eg a bag) and it “stains”, that’s actually a result of all the moisture and oils being drawn out of the leather by the alcohol. to remove the “stain” and restore the leather’s condition, reapplying oil to the damaged areas will help. based on my experience, dr martens sells a balm for leather shoe maintenance and that works.

in indonesia, it’s not that easy for women(?) to hang out in groups and domestic helpers working locally don’t earn tha much money. but for the indonesian domestic helpers in hong kong, not only do they earn more money (sometimes enough money to send home and let their family buy plots of land), but on weekends they’re able to hang out with their friend and enjoy time together.

in shanghai, gender expression (at least amongst the lgbtq community) is more androgynous and fluid than in hong kong where there tends to be a clear distinction between more masculine (“TB”) and more feminine wlw.
