Imperial Scone
11 oz. whole grain flour
1 ½ tsp baking powder
¼ tsp baking soda
2 tbsp white sugar
1 tbsp brown sugar
¾ tsp fine salt
⅛ tsp ground cinnamon
⅛ tsp grated nutmeg
1 tbsp. lemon zest
4 oz. frozen butter 
1 cup blueberries
1 tsp vanilla extract
¾ cup sour cream
¼ cup milk
1 cup blueberries
1) In a bowl add all the dry ingredients. Add the lemon zest and mix well.
2) In a measuring cup mix the sour cream and milk until the form a thick liquid. Add the vanilla extract and ¾ cup of the sour cream liquid to the dry ingredients using a spatula and adding in ¼ cup increments ensure even distribution. Add the blueberries with the last ¼ cup of sour cream liquid. (You should have ¼ cup left over. Set aside.)
3) Once the dough starts coming together place on a non-stick worksurface. Using your hands bring the dough together until it forms a ball. Press the dough out into a square being careful not to burst the blueberries and cut into eight pieces.
4) Transfer into a parchment lined baking sheet. Brush the top of each scone with the reserved sour cream mixture and sprinkle the tops with brown sugar.
5) Bake at 425 degrees for 20 minutes or until the tops are browned and blueberry juice is beginning to leak out.

Birriamen
 Adobo:
2 ancho chilies
2 pasilla chilies
2 guajillo chiles
3 large roma tomatoes
Canola oil (or anything neutral)
4-5 avocado leaves
1 whole onion peeled and quartered
2 heads of garlic sliced in half and bruised
Beef or chicken stock.
¼ cup apple cider or rice vinegar
1 tsp all spice
1 tsp Mexican oregano
1-2 cloves
Salt
pepper
Stew Ingredients:
3-4 lbs of beef cut into large cubes (oxtail, chuck roast, shank)
1-2 lbs of beef ribs (you really want these for the bones)
2 bay leaves
1 stick of cinnamon
Canola oil
1-4 cups of Beef or chicken stock
 Method
1. Remove the cores from the chili pods, lightly toast the chilies until they become aromatic. (Do not burn or everything will be bitter.) Toast the spices until fragrant. Add to blender.
2. In a bit of canola oil, sautee/fry the onion and garlic. Add to blender and blend with spices and chilies. At this point you may want to add oil or a little bit of stock to help with the blending but you really want this to be the consistency of a loose tomato paste.
3. Once you’ve achieved it, pass the paste through the strainer to catch all the little fibers that didn’t get pureed.
4. In a pot, sear the beef on all sides. Once the beef has been seared, slather the adobo onto the meats.
5. Line the bottom of your crock pot with the avocado leaves. Place the beef ribs at the bottom of the pot. Add the cinnamon stick and laurel leaves. Stack the rest of the meat on top of the ribs. Cover the top of the crock pot with any leftover avocado leaves.
6. Turn the crock pot on low and slow cook for 8 hours. (we usually prepare this the night before and leave it overnight.
7. NOTE: We don’t usually add more than 1 cup of beef stock to the crock pot, but since you probably want this for Ramen, I would suggest adding more. ALSO, taste the adobo and birria for seasoning. The last thing you want is bland birria.

I tried to make little crosshatch patterns. But you could tell the moment I gave up and just Picasso'd the rest!
Per my brother, these are DANGEROUSLY good. I need to find a recipe for a slightly healthier baked version.

Menudo Blanco (White Sonoran Menudo)
For those who don’t know, menudo is cow stomach (tripe). Although our butcher is meticulous about giving us the best cuts, we still trim the fat and treat the menudo with lemon juice before rinsing it off and starting the broth.
The result is a light taste that relies heavily on the added aromatics and vegetables for flavor. It’s essentially Mexican Pho.
Don’t be fooled though, a bowl of this and you’ll be ready for a nap!

Stuffed Jalapenos (Mini Chiles Rellenos)
One of the few times I can convince my brother to eat vegetarian. Eaten crispy or dipped in a spicy tomato sauce.
These were stuffed with cotija, onion and tomato although shrimp is a favorite.

Turkey + Cran-Apple Stuffing + Smol Rosemary Potatoes
Turkey was sitting in a dry brine for 24 hours before being patted dry, brushed with canola oil and tossed into the oven! I prefer Alton Brown’s method of cooking an ENTIRE turkey.
The result was a juicy turkey and the crispiest skin I’ve ever seen! This one was my best birb yet!

Kaasi Wasp Pie
4 oz Cream Cheese
245g Puff Pastry
½ cup chopped walnuts
½ cup fig jam
1 tsp Vanilla extract
½ tsp Powdered Cinnamon
¼ tsp Powdered Ginger
6 figs sliced thinly
1 egg
1) Sweeten the Cream Cheese with about ¼ cup of fig jam. Add vanilla extract. Mix until smooth.
2) Mix the chopped walnuts with cinnamon, ginger, and remaining fig jam until all the pieces are coated.
3) Roll out puff pastry to a 9″x9″ square. Cut into 3″x3″ pieces.
4) Add a dollop of cream cheese to each square. Top with walnuts and fig slices.
5) Arrange in rosettes, mini turnovers, or rolls. Brush the tops with egg wash.
6) Preheat Oven to 400° F. Bake in a parchment lined sheet for 15 minutes or until golden and crispy.

SATURDAY IS BAKING DAY!
Today I made Coyotas, which is basically a hybrid between an empanada and a cookie. A stuffed butter cookie.
We made classic piloncillo (brown sugar) which was so flakey and buttery and just GOOD... 
I have been given unholy powers. I don’t think I can control them!
