Easy Chickpea Tacos

This was one of the first recipes I learned to make in college and is super easy for not much effort! I used to make them right in my dorm room all the time. I no longer cook them in the microwave, so the time isn’t exact, but if you have experience with a microwave it shouldn’t be hard to guess how long.

Ingredients:

1 Taco kit (my favorite is Old El Paso stand up taco kit)

2 standard cans of chick peas or 1 large can chick peas (Goya has easy open lids, so no can opener needed!)

Salad in a bag

Cherry tomatoes

Directions:

Strain chick peas in a colander and rinse. Put in microwave safe container and empty taco seasoning with some water into container and stir.

Microwave for 3-5 minutes or until hot. Alternatively, if you have more energy to spare, empty rinsed chick peas into a large pan along with taco seasoning. Pour about half a cup to one cup of water into pan. The water keeps the chick peas from drying out and is also a good way to know when they’re done (minimal to no water = ready!)

If desired heat up taco shells in oven or toaster oven (if using a toaster oven keep eye on shells since they will be closer to heating element).

Spoon chick peas into taco shells. You can either add the sauce on after you spoon the chick peas into the shells or just empty the whole thing into the container beforehand for a more even coating.

Slice up lettuce leaves from bagged salad and halve or quarter cut the cherry tomatoes. Top the tacos with veggies and enjoy!
