Happy Veganuary Y’all!
Yes, I am a Mexican female who just turned vegan... I also live in Texas home of the BBQ, pecan pies and would you like to add cheese and bacon with that? what about making it a Texas size?. Not to mention the many taco food trucks on every corner, Tex-Mex restaurants on every block and a mother who cooks nothing but delicious Mexican dishes.
So based on my fist sentence you probably already figured out  that I am a rare species or just a freak of nature because being Mexican eating tacos her whole life living in Texas surrounded by good ole’ southern comfort food just makes no sense on why I would even think about changing some good barbacoa, or baby back ribs smothered in BBQ sauce for celery sticks with out the ranch dressing. 
After some research and multiple docu-series and movies, I decided to make a drastic change in my diet and be more conscious about not only what I am putting in to my body, but also on how that affects the ecosystem. 
I have been Vegan for about a month now and I have to say that in my personal opinion and based on my results I can notice all of the good changes in my body physically and even emotionally. I am however very new at this and I am still researching and collecting information about everything that has to do with food, how it is processed and how to gain all of the nutrients from an all plant based diet. 
Since I just started doing this not to long ago I am still learning as I go and I am taking it step by step. My ultimate goal is not only to benefit myself from this wonderful life changing diet, once I am more informed and confident to share it with my family and friends, because as of right now it almost feels like a terrible secret. In a culture where having a feast where an animal is being killed for food and pretty much 90% of our cultural food is animal based, I personally feel like an outcast in which I will be looked like a strange specie  maybe even disowned and damned by the Aztec gods (Just Kidding, please don’t strike me with lighting!). 
In all seriousness so far I am loving everything about being Vegan despite the judgments and the learning process. I am aware that there is a lot of information about food processing and nutrition and I am willing to learn because like I said I am loving it, but also because I want to make a change for the planet. I know that my change alone would not have an impact, but this community is rapidly growing and hopefully in the near future more of us would be more aware and more conscious of how and why eating plant based foods is beneficial to our health and to the ecosystem.
