These thumbprint cookies are a Christmas staple at our house. They are dangerously delicious and are great for gifting too! 1 cup unsalted butter 1 cup powdered sugar 2tsp vanilla 1/2 tsp salt 2.5 cups all purpose flour In stand mixer, cream butter, sugar, and vanilla together until light and fluffy (2-3min). Add salt and mix until combined. Add flour 1/2 cup at a time mixing well after each addition until completely incorporated and dough stays in a ball when pressed together. Scoop out even portions and roll into a ball. Roll in sprinkles (optional). Once on cookie sheet, gently press thumb into the top of each cookie. Bake for 8min at 350. Remove from oven and using a melon baller or other round tool (I use a wine cork), deepen indentation. Bake an additional 5-8min. Cool completely before icing. 3/4 cup powdered sugar 1Tbs light corn syrup 1/8 tsp vanilla 1 Tbs unsalted butter, melted 1 Tbs milk (more or less for desired consistency) Fill in the thumbprint and then let set completely.
