Do you think we have enough evidence in canon that Ethan is really the best in his field? He has a relatively conservative (safe?) approach towards treating patients, especially compared to Tobias's. So what's your opinion?

I personally wouldn’t say he’s the best overall. As, yes he does have many strengths and experience in his field but like anyone else he also has his weaknesses. The reason the diagnostics team works so well is because it uses all their combined strengths, so another doctors weakness is another’s strengths.

So I would say he’s the best but he’s 100% one of the best in the field.
