Tim Hagney and Kate Bolton threw down hard at yesterday's #vivasangrita competition at ABV in San Francisco. They kegged and caned their sangrita which contained hopped simple, carmelized pine apple, belle pepper, jalapeño, Thai chili and coffee porter malts. It's not every day that you taste a new spirit category. Singani is a Bolivian Spirt. 500 years of heritage, it has both a denomination of origin and a geographical indication. Using only one species of grape, the Muscat of Alexandria and must be grown at the minimum altitude of 5,250 feet in the designated area in the Andes Mountains. The spirit is approached like a grappa or pisco but shows huge differences in flavor. Beautiful nose and packed with tons of fruit and floral notes. A common misconception when barrel aging is that you use a recipe that's balanced and just age the drink.
