Episode 1 "Yak Loaf"
Let me set the scene. I (wife) get home 2ish hours before my husband from work. When I get home, I typically walk the dog, take care of the animals, and any other lingering chores that my OCD husband didn't do this morning. (I say that lovingly. I never ask him to do these things, but his hyperfixations kick into overdrive and he ends up bleaching the entire bathroom at 8 am and is late for work). Then, I set about cooking dinner. Husband used to cook for a time, but here recently I have been cooking more often so that food is on the table at a reasonable hour.
The night of Yak Loaf, I asked husband to cook and let him know what ingredients we had in the kitchen to throw together. A pound of ground beef, half an onion, 4 bell peppers, a GIANT zucchini, and side dishes in the pantry. He said he had it under control.
He gets home and starts cooking around 7:30 PM. We usually have a late dinner, so no biggy. But, picture this: a young David Tennant in only his boxers, giggling like a madman and occasionally making Donnie Thornberry noises with glee over his concoction. He would yell occasionally some explicative over burning himself on the cast iron or the oven, and then shout "NO, STAY OUT OF THE KITCHEN" when I ran to his aid.
9:30 PM. Dinner is still being cooked. I'm wasting away on the couch of starvation and trying to distract myself by playing ZZZ. He announces that dinner is ready around 9:40. He brings out his creations and sets them on the dinner table
I present to you: Yak Loaf

What is a Yak Loaf? Well, it's a standard meatloaf recipe, except with also AN ENTIRE BOX OF STUFFING MIX thrown in. Seasonings doused on the sides to make crusty and flavorful. Formed into the body and head shape of a Yak. Baked to high heavens in a cast iron. Lil pretzel sticks make the legs. The glaze is a mix of spicy and regular ketchup.
Unpictured was our side dish, a heaping plate of zucchini that had an hour long limeade bath and then fied in a pan with lemon juice. It was charred in parts and the mushy in others and very, very, lemon lime.
I could only eat a third of my Yak. The Glaze distracted from the taste of the Loaf, which altogether was pretty good just there was soo much. A pound of beef makes more than enough meatloaf for two people. Adding stuffing mix like sawdust to bread is smart if we only had a little bit of beef or were trying to feed a party of 6. I had to fit the leftovers into 3 separate containers.
Husband was very proud of this meal. I was very proud for him.
