❀   Holiday Muffins.    ❀
I am going to start my first blog post with a recipe I came up with during Christmas holidays!
Just a quick, little info about me: I do not consume lactose, gluten or sugar (in any form - except the natural sugar from fruit). Today, it is extremely difficult to find a recipe (for a dessert) for someone who is on a special diet like me.
During Christmas time there is always some kind of cake or cookies on the table. I always feel kind of left out because I am not allowed to eat what everybody else is. So, this year I gave my best to, finally, create a recipe for myself! I call them - Holiday Muffins.
RECIPE: INGREDIENTS
* 200g glutenfree flour (I use millet flour)
* tsp of bourboun vanilla
* tsp of ground ginger
* tsp of cinnamon
* tsp of baking soda
* 133g of coconut oil/butter
* tbsp of psyllium husk powder
* 3 ripe bananas
* 1 egg
* 2x pinch of salt
* lemon zest
* 2x handful of hazelnuts
INSTRUCTIONS
Mix all the dry ingredients together in one bowl (flour, ginger, cinnamon, baking soda, psyllium husk, salt, hazelnuts, vanilla).
The rest of ingredients you can blend together in a blender or with a hand mixer. After that you have to add your mixed dry ingredients to wet ingredients - small amount at a time.After you mixed them together with a tablespoon you can put your mixture in your muffin tray. Bake them at 175 Celsius degrees for 20-30min!
Disclaimer:
It is very important to know that millet flour (or any glutenfree flour) is not like wheat flour at all. Dough from wheat flour has elastic toughness that holds its shape well once baked and is known for its soft consisteny.That’s why we used psyllium husk powder! It’s recommended to use psyllium husk with glutenfree flour because it holds the mixture together much better and also gives a soft touch to it.
Also, have in mind that this recipe does not contain any kind of sweetener - except bananas!To people, who regularly consume refined sugar, these muffins will have no flavour at all (checked with family members). But don’t give up! If your taste buds get used to a flavour like this - these muffins will become your favourite treat! ;)
Until next post! Lana Vidović ❀
