Dry red chilli
When chilli is completely ripe it’s colour transforms from green to red. It is then sun dried to elongate its life and use in various dishes. Dry red chilli can be used whole or in powder form.

Lauki ki Lauj / Lauki Barfi
Ingredients:
1/2 kg Bottle gaurd/ lauki
1.5 litres Full cream milk (preferably buffalo milk)
Sugar
5-6 Chopped almonds
4-5Cardamom/ Elaichi (optional)
6 tbsp Ghee
Steps to make mawa:
Put a metal kadhai / heavy bottomed utensil on high flame . Pour milk into the kadhai
Bring the milk to boil and then lower the flame to medium.
Keep stirring the milk every 3-4 min and it will start to slowly thicken.
