2006 Pax Obsidian Knights Valley - This wine is still rocking my world! Black currant, Kirsch, menthol and a touch of smoke in the nose. The wine color is still a dark opaque purple. The flavors are still mouth filling dry fruit with a slightly tannic finish. I have owned these bottles since release and they never miss a beat. Alas, this is my last 750. 2007 La Rioja Alta, S.A. Gran Reserva 904. Transparent garnet color. Initial aromatics of herbs that have evolved into fresh leather and bright cherry flavors. The finish starts at the tip of the tongue and rolls all the way down the throat as one swallows. Served with hamburgers on the grill with house cut French fries. Can you say Butterscotch? Who wants to taste a perfectly aged white Burgundy without premox? Wish I would have tasted these 5-6 years ago but alas another buried case of wine in the depths of the cellar! Hay with notes of old straw but a darker golden color. A beautiful example of this wine. The finishes is only medium and it finishes flat. Popped and poured from the cellar. Light golden clear color. Aromatics of matchstick, lemon, tropical fruit and minerality with a touch of acid. There is more citrus fruit in the palate that shows up like a tart passion fruit. I would be happy drinking this every night! Sans Liege XV/XVI “The Prophetess” Syrah from Santa Barbara County went fantastically well with tonight’s baby back ribs smoked on the Webber. Color is opaque purple. Aromatics of smoke, eucalyptus and tar. The flavors are earthy dark brooding fruit of smoky black raspberry, not for the faint of palate! 2012 Le Vieux Donjon CdP. This wine has finally arisen from slumber. Dark garnet color with light thinning on the edge. The aromatics shows light guarigue with bright medicinal cherry and sage. 2018 Carlisle Sonoma County Syrah. Near opaque color. Nose of cocoa powder, chocolate, cola and a touch of white pepper. Flavors of deep dark raspberry and blackberry with an unresolved core. Served with tonight’s Chicken and Orange sauce served over rice pilaf and peas. This bright and acidic through the roof version of the Zeltinger Sonneuhr Riesling Dry ***. Light golden color. Aromatics of honey suckle and apricot. The flavors are pure Granny Smith apple but finishes with an instantaneous bone dry finish despite the three stars. So it turns out that the found case consists of three different wines from PYCM. This Criots Batard Montrachet was tonight’s selection for tasting another bottle with our Cedar plank grilled salmon. Bright clear golden color. Aromatics of lemon but the hay nose is a slightly heavier than yesterday’s Corton. The mouth reveals a higher mineral and acidity content.
