Simple eggplant parmigiana on a bed of garlic-y spinach... Wow that went so well together! No breadcrumbs. No egg. No flour. Here in Starbucks after dropping a friend off at the hospital for his knee surgery... There's a bunch of hard working kids in here... I can't help but notice how many more people pre order their drinks- and then just run in-grab them off the counter and go! No interaction with the staff... Kinda sad. Personally I like the interaction with people. You should never(or at least rarely) be in so much of a hurry that you can't wait a couple minutes for a coffee. ... And maybe say hi to the person who made it for you. Makai - the cute young man who made my coffee was pleasant and obviously hard working! So stop in and see him and the crew if you're at the Starbucks at 8267 Md Rt3 N Lane Millersville, MD. .... Also a good place to buy a quick gift card for then to use for a caffè sospeso for them to use for someone.😉(they won't keep cash!) I left mine specially for someone in uniform... In Italy there's a "thing" called caffè sospeso- Which translated to "suspended coffee"- it's a coffee paid for in advance as an anonymous act of kindness. The tradition began in Naples where if someone had good fortune would buy2 coffees...Drinking one coffee. Later if a "poor" person came in they could get a cafe sospeso-for free. BUONGIORNO! So... Pasquale and I are on a smoothie kick this week... Today I made this one with 2Carrots.1Cucumber. 2 handfuls Spinach. 1/2 banana. 1/2 apple. About a cup Frozen blueberries. 2TbspFlax seed. Chunk of Fresh Ginger. 1tbsp Turmeric. TspCinnamon. About 1/2-3/4cKefir. Water. We've been having this size glass of smoothie every morning this week and been very full! (I still have my small cappuccino or espressino!😉☕️) I do make a smoothie every now and then in our normal breakfast rotation but this week... Every day. It's a nice healthy change up. And yes... This is my almond meal crusted chicken that i created last week. This with a salad was a really tasty little dinner... And filling too! And HEALTHY! Wow! So many ANDs! LOL!!! Just take some almond meal... Add spices- i used my spicy spaghettata mix (which is parsley, red pepper flakes and garlic) Salt and black pepper Extra virgin olive oil to moisten it all Then just spread on your chicken (or any other meat) and bake My thin sliced chicken you see here took about 10 -15 minutes in a pre-heated 400degree oven.
