So today I baked a cherry bakewell cake.

I used to love baking when I was younger and when I moved out and started working/studying I didn’t have time for it anymore. So it’s been around 5 years since the last time I made this cake and the only good thing to come out of isolating was rediscovering my love of baking. Hope you like it, I’ll put the recipe below. Ingredients:

200g softened butter

200g golden caster sugar

100g ground almonds (almond flour)

100g self raising flour

1/2 tsp almond extract

4 large eggs

Cherry jam/conserve

175g icing sugar

8-10 tsp cold water

1 tbsp chopped almonds

Method:

Sieve the flour and baking powder into a bowl, add the ground almonds and set aside.

Beat the 4 eggs together in a jug or a bowl and set aside.

Cream together the sugar and butter until smooth, slowly add the flour and eggs bit by bit alternating to maintain consistency.

Once all combined add the almond extract, fold through a few times to ensure flavour distribution.

Spoon into two round cake tins and tap to level out

Bake in oven for 20 minutes at 180°C until golden brown.

For the icing: sieve the icing sugar into a bowl and add 5tsp of the cold water. Keep stirring and add extra water when needed. Be careful not to over hydrate the icing sugar.

When cooled add a layer of the cherry converse between the two cake layers (how much is up to you) and drizzle the icing on top. Sprinkle on some chopped almond slices and leave to set

Make a nice cup of tea/coffee and enjoy 🥰
