Some mornings you whip up a quick smoothie and call it a day, but others you make these delicious smoked salmon cucumber toasts because well, look at them. 🤤 . This is a perfect dish to bring to a brunch party also! . Recipe inspired from @toastsforall which is a total drool-worthy account- but I tweaked my recipe a bit. I mixed equal parts goat cheese, cream cheese and Greek yogurt for the base- added some @m_salt1, chives and chopped dill. Here is your recipe of the week!! It is easy, peasy and lemon squeezy (get it....😒) . . I got a tub of vegan kale, cashew and basil pesto from @traderjoes (shown in stories), tossed it into pasta (of your choice) with a splash of olive oil. Grilled a chicken breast (seasoned with paprika, @m_salt1 ) and topped all of it with fresh chopped basil and lemon squeeze. YUM! Perfect for lunch or weeknight dinner. Let me know if you make it and what you think!! Note- you can use any store bought pesto or make your own- I just happened to see this one when I was shopping and wanted to try it.
