Hi! Sorry if this is personal but I’ve been wondering this for a bit… what made you so into Bruno?
That’s alright, no harm done.
And there are a few reasons I’ll try to summarize so I’m not rambling.
I like characters I can relate to in some way. It makes me feel less alone.
Bruno is multifaceted in a way where he intrigues me (and he’s very good-intentioned with how he interacts with people normally).
I feel like objectively he wouldn’t hate me or treat me like shit.

Night terror
It's not a headcanon, but I sometimes wonder if Bruno experiences night terrors and/or flashbacks. Whether that be from what happened to his father, or his plethora of other possible experiences in Passione. Not to mention the pressures of being a leader and looking out for the lives of the team. It just seems like too much for one man to handle.
Anyway it makes me pretty sad to think of him possibly dealing with something like that alone. So I doodled my s/i comforting him, or at least attempting to. 🩵💙

Ooh, this is a fun question… Funnily enough, I’ve given quite a bit of thought to this in the past. Buckle up, because I’ve got a bunch of beverage headcanons for you!
Without further ado, here’s my take… (under the break)

I imagine Bruno isn’t a huge drinker when it comes to alcohol. (As you said, he’s definitely not a beer guy.) Most of the time, he prefers to keep a sharp, clear mind, ready for whatever may come his way. That said, it doesn’t stop him from appreciating a good glass of wine. Wine is such a key part of Italian culture that it’s hard to picture Bruno not enjoying it. (In fact, I headcanon that Bruno is actually pretty passionate about the subject of wine—we’ll get to that in a bit.) He drinks it for the taste rather than the effect it gives.

Because he doesn’t usually like being inebriated, he limits himself to small amounts—typically just a glass with a meal. On days off, however, he may enjoy a bit more wine than he usually does. Even though Bruno enjoys red wine, I feel like he leans more toward white wine, with a special fondness for sparkling varieties. He’s not a huge fan of a ton of fizz, though, so he goes for older sparkling wines where the bubbles have softened a bit.
I like to think Bruno has a good understanding of wine, largely thanks to Polpo’s influence. Whether he wanted to or not, Bruno surely picked up knowledge from Polpo, who, being the foodie he is, likely gave plenty of unsolicited lectures about wine. Bruno absorbed more than enough to discuss things like aging processes or which years produced the best vintages.
I also imagine Bruno’s interest in wine began because of Polpo’s constant ramblings. It’s not that Bruno had negative feelings toward wine before meeting him; he probably just didn’t think much of it, especially as a twelve-year-old. I can picture Polpo launching into a long-winded explanation about wine or food before delivering some important assignment with Bruno thinking, “If it were really important, you wouldn’t spend this much time talking about wine.”

But that forced exposure grew into genuine interest, and now Bruno has become passionate about it. Picture him excitedly sharing wine facts with a partner or someone he cares about, then catching himself mid-sentence and apologizing for rambling. (He’ll think back to his conversations with Polpo and wonder if he’s overstepping his boundaries.) But, of course, his partner reassures him that it’s okay. I like to think Bruno tends to ramble about things he’s passionate about since he didn’t have much chance to express his interests growing up. So, when he gets the chance, he dives in a bit too deep, almost by accident.
He probably has a decent collection of wines with a few rare or expensive bottles. However, Bruno isn’t the type to splurge, so most of the high-end bottles were likely gifts. He saves them for special occasions.
Now that you bring it up, I can also see Bruno being a limoncello drinker. I’ve never had it before, but it looks pretty good. Based on its description, I too think Bruno would like it.
As for coffee, I imagine Bruno enjoys espresso—or “caffé,” as Italians call it. It’s not an everyday thing, but when he does indulge, it’s usually a plain shot of espresso. (Occasionally, he treats himself to a caffé latte or cappuccino.) He avoids drinking too much, as he doesn’t like the jittery feeling caffeine can bring. If he’s close with someone, he’d probably prefer sipping from their coffee rather than ordering his own.
Bruno doesn’t strike me as someone who’d enjoy soda (or pop, depending on where you’re from). As mentioned, he’s not fond of fizzy drinks, and soda is not only fizzy but also loaded with calories, which wouldn’t appeal to him.
When asking @cornerfortherats this question to see her take on this ask, she wrote that she could also see him enjoying “Iced tea and those sugar-free mix drinks. (Think like kool-aid. Particularly the blue raspberry one.) In my mind, he buys the really weird flavored ones to try for fun because they’re relatively cheap and on occasion his reaction is just this:”

Of course, Bruno drinks plain water too. He knows how important it is to stay hydrated and tries to keep up with it. But, with how busy he is, it’s not unusual for him to forget sometimes.

Since I had gotten this same ask from @moodybloos at an earlier date, I’d like to say that I agree with what Jovia’s saying. Therefore, I’ll add some additional content onto this post so I’m still answering the ask @moodybloos sent asking this question.
Note: Sorry this took so long. I currently want to pelt myself with bricks. (I’m fine though.)
Whenever his child throws up on him, he just silently accepts it. He used to kill people for a living, so I doubt vomit affects him. And he’s just more inclined to worry about his baby more than himself (or the furniture). Furniture is replaceable, his kid is not.
He would be the type of dad to kiss his partner when he knows his kids will be grossed out by it because he thinks it’s funny. His partner will be able to tell by how he smiles into each kiss.
Whenever he’s stressed and needs a minute away from his kids, he’ll go off and listen to some jazz to relax.
When his kids reach a certain age, he’ll have a drug talk with them and explain a bit of what happened in his childhood (not enough to know about his mafia involvement but enough to know that drugs are a very touchy subject) so his kids understand that they’re not something to be using. As much as he’s scared people straight in the past, I think he’d realize after a while of parenting that kids listen best when they’re able to grasp something.
His first choice for a boy name would be Paolo. Many parents believe that the name they pick for their kids will influence how they grow up, and I see him feeling similarly. Aside from the obvious reasoning, Bruno would want to name his son Paolo since he’d want his son to grow up to be someone with a heart like his father’s. (If his partner was against this name, he’d want this to be a potential middle name.)
For all genders, Bruno would like some type of virtue name in hopes his child grows up to embody that trait. However it wouldn’t be as on-the-nose as naming a daughter Hope. I can see him being more drawn to names like Felicia (which means lucky/happy) or Irene (which means peace).
To keep up with the whole theme of him and his squad being people outside the norm, I feel like he’d want to name his kid something common so they’d fit in with their peers while also subconsciously gravitating towards more rare/uncommon names. It frustrates him to no end.
While waiting for the baby to arrive, Bruno spends a lot of time reading child-rearing books. Ideally, he’d love to ask his own father for advice about how he should go about raising his soon-to-be bundle of joy, but of course, life is never that kind to him. He aims to read books that give advice that sounds in-line with what his father would do, and then he tries to contextualize how effective/healthy it would be in practice.
As his kid gets older, Bruno will try to get into whatever his kid likes as a hobby. Many parents and kids who have little in common have a harder time establishing good long-term relationships, so I can envision Bruno wanting to ensure they always have something to talk about.
Naps are a family affair in the Bucciarati household. Raising a kid is just as tiring as it is for that kid to grow, so group naps are a frequent occurrence. During these naps, Bruno prefers to hold his kid in one arm and his partner in the other.
Bruno becomes 5x more smitten with his partner when he sees them parenting their kid. Outwardly, it might not be noticeable but inwardly, he wants to squeeze them so bad.
He begs whatever higher powers exist in the world for his kid to never develop a stand. Bruno’s worst fear is his child leaving the house one day and never coming back—being a stand user would increase the possibility of that so much.
Even when his kid is an adult, he still carries them to bed and tucks them in. Being a dad is for life, and he’s more than happy to have that responsibility.

Before I get into it, I just wanted to say that Maggie (@cornerfortherats) and I had a great discussion over this question, and since some of these thoughts are hers, I wanted to tag her for credit !!

I believe Bruno would want one or two kids, probably leaning toward two. He’d want to ensure he could give equal time and attention to each child without stretching himself too thin. While I think he could handle more than two—okay, leading a team of mafiosos isn’t the same as raising kids, but the leadership skills he’s cultivated would certainly be useful in parenting—that doesn’t mean he *wants* more. And of course, he wouldn’t treat his kids the way he treats his teammates; he would give them much more love and care.
As a father, Bruno Bucciarati would be deeply involved in his children's lives. He wants to give them the kind of life he had before his parents' divorce—one filled with love and warmth.
Bruno would be the type of dad to hug his kids often because he didn’t receive much affection growing up. It can be awkward adjusting to normal levels of affection when you’re not used to it, and he wouldn’t want his kids to experience that. He wants them to know, without a shadow of a doubt, that he loves them.
Every night, Bruno reads to his kids the way his mother read to him. Those memories are something Bruno is no doubt fond of, and he wants his children to feel that same warmth.
Bruno spends as much time with his children as he can because he feels the best part of his life is spent with his family. He wants to be there for every moment—his children’s first words, first steps, etc. I can totally see Bruno letting his kid dress him up (maybe as a fairy princess for a tea party or something). However, he would not allow anyone to take a photo of him while in costume.
You can bet his children are getting the best education possible. As someone who never had the chance to attend a good school, he wants to make sure his children are well set up in life, and thanks to Passione, he can afford to send them anywhere.
Bruno is the type of dad who would cry when his kids are born. However, it wouldn’t be at the hospital as you might imagine, but alone with his partner and baby. It’s a mix of the usual dad joy and the relief of finally getting to rebuild the family he lost. He feels an unspoken awe and eternal gratitude towards his partner for making their baby, like a "how did you create someone so amazing?" kind of feeling. (This last part only applies if his partner is AFAB.)
He would probably try to quit being a mafioso to focus on family when his first kid is on the way. This would be difficult, especially if he’s already deeply involved, but he’d be concerned about the danger his connections could pose to his new child.
Additionally, he wants to be a role model for his children, and the best way to keep them out of a shady life is to cut ties with Passione entirely. Bruno would never allow his children to join Passione or even come close to it. He would also be very secretive about his past life as a mafioso, shielding his kids from that part of his history. (He may eventually tell them about his experience in the organization when they’re much older.) He’s determined to make sure they grow up loved and safe, ensuring they steer clear of a dangerous path.
Due to his protective nature, he might come across as a stricter parent. In his mind, enforcing order ensures safety, something he didn’t have the luxury of growing up with. Bruno shows this strict side quite often in Vento Aureo, such as when he and his team arrived at San Giorgio Maggiore. Before stepping off the boat, while his team was happily imagining what kind of food they would eat later, Bruno snapped, impatiently reminding them that they were still on a mission. He would be significantly less stern with his children than he is with his team, but still firm.
Overall, Bruno would be an amazing parent. Sure, he may be strict at times, but he doesn’t want total control over his kids—as someone who has a deep understanding of life’s perils, he wants nothing more for them to grow up safe, happy, and most of all, loved.

Note: I’m not a doctor or a ballistics expert. If I get anything wrong on a technical level, just know this was an attempt at an educated guess.
Potentially? It’s very dependent on what exactly was injured on Paolo.

It’s hard to glean from these pictures, so I’ll begrudgingly trust the Wiki and use this to work off of:

It’s most likely that it was a handgun that was used to shoot Paolo, considering that a rifle or shotgun are, quite obviously hard to hide.
Our next problem is figuring out what model it was, as each handgun works differently, therefore giving a different type of injury.
My guess would be that it’s a Glock 17, due to the affordability, durability and high usage it sees.
Now, I’ll take the assumption that each shot was made confidently (as depending on how you go about pulling the trigger, a shot might be less effective) and didn’t produce faulty shots.
Glock 17s have a muzzle velocity (for people out of the loop, it’s the estimated speed of a projectile, based off the moment it leaves the its barrel) of 1,230 ft/s and a firing range of 164 ft (or 50 meters). However, a 9 mm handgun like a Glock 17 works its best at around 82 feet to 164 feet away (or 25 to 50 meters).

The best frame of reference for distance we have for Paolo’s injuries is this panel, which I’ll estimate the distance as 20 ft.
A 9 mm bullet moving 1,230 ft/s towards a target 20 ft away is a lethal shot. One was likely enough to leave him incapacitated but seven? It’s no wonder everyone was saying he was lucky to be alive.
Using this article and this case report as reference, he most likely had some severe nerve damage (Neurotmesis) and chest trauma, which would’ve potentially caused problems like chronic pain, muscle atrophy, a loss in motor function or sensory function and a multitude of other issues.
With this clip in mind, he was either in a long-term care facility for the rest of his life, or he was given in-home care and this happens to be a glimpse of Paolo in hospice.
Footnote: This scene is so much sadder to think about when you consider the fact that Paolo might’ve been unable to feel Bruno holding his hand (and would explain why Paolo wasn’t gripping Bruno’s hand in return).

Note: Thank you for the positive feedback, and I’m sorry for replying to this so late.
In my mind, both of them kept to themselves emotionally speaking but were close outside of their emotional problems. Though, Paolo really did try to get Bruno to open up to him.
Unfortunately for him, Bruno picked up how he handles his problems from him (as lots of children tend to mirror their parents and their behavior, regardless if it’s good or bad).
So yes, inadvertently from seeing how Paolo keeps things to himself, Bruno took that and began to develop that approach to bad situations.
But I have some other reasons for why Bruno doesn’t seem to process his emotions, particularly grief.
1: Bruno prefers to be in control of himself in any given situation, and that control is what brings him comfort in more turbulent environments (which is why the loss of that affects him so much). Crying around another person involves a deep level of comfort with someone that Bruno doesn’t have with anyone, due to the more professional nature of all his close relationships. So in theory, I think he just can’t cry while around other people or out in the open (that, and he was also focused on the things happening around him during those instances where he would need to cry during Golden Wind/Vento Aureo, rather than his own feelings).
2: He intellectualizes as a way to cope.
I wouldn’t be surprised if he does this, based on how he reacts to Giorno accurately surmising his own conflict in regard to Passione’s more unsavory practices:

And how he reacts when he has to see the direct impact his involvement with Passione has on the people he wants to help/keep safe (since people who intellectualize as a coping mechanism are trying to avoid the emotional stress a situation instills by keeping a level of detachment, and this would be a circumstance where someone who does that wouldn’t be able to distance themself):

People who do this are typically very aware of the nuances of the situation that is or has bothered them, and will use that cognizance to put themselves in a sort of witness position, rather than a victim of misfortune.

Maybe this might be a stretch (due to how dubious his consciousness might be here), but when talking about his own death — something that previously terrified him — he’s showing a great deal of acceptance and even appreciation for the unique opportunity he’s been given.
For a lot of other people with a similar fear, it would’ve taken them much longer to accept their death. But Bruno, after having fully grasped the truth of his situation, is eerily calm.
Again, it just feels like another example of him being withdrawn from his feelings.
