Just made these again tonight with some minor alterations from last time.
I followed the recipe more by doing the marinade, but only for about 3.5 hours.
I also used almond milk since that's what I had
You can make a quick buttermilk by adding 1tbs of distilled white vinegar or lemon juice to every 1cup of milk fyi
Last time I only halved the chicken breasts to get double the amount, but went further this time...
I started out with two large chicken breast and sliced them in half. The more triangular pieces I did shallow sliced on to open them up and flatten them more (I do not have a mallet). The thicker pieces I sliced through horizontally to get two thinner pieces.
Basically I turned two chicken breasts into six pieces
And once these bad boys baked they got slapped into a bun with dill pickles and a copycat chik-fil-a sauce (never had the actual sauce, but this is pretty damn good) and it was soooooo delicious 😍

These are really freaking good and an excellent option if you don't want to deal with hot oil and/or want a healthier option.

I did not do the marinade. Next time I make these I plan to do that.
Otherwise I did follow the recipe
I had five large chicken breasts to use and only sliced them in half so they were little squat, squarish pieces. I did not flatten any of them (but I should have).
I lacked a proper wire rack and used the rack that came with the roasting pan I used. The wires were set a little too far apart for the size of my chickens and I had to drape them over the wires lol
I want to experiment with different ways of marinading and seasoning these in the future.
They go extremely well with a copy cat Chick-fil-A sauce (why give them money when you can make your own??) 😋

Chocolate Chip Cookies from Joy Food Sunshine
This is currently my all time favorite chocolate chip cookie recipe! The photo I included here is literally fresh out of the oven 😍
Tips/Bonus Information
If you like gooey cookies then these are for you!
I've made them with just chocolate chips and just tried adding in mini M&M's
I substituted 1/2 a cup of chocolate chips for 1/2 a cup of mini M&M's
I just used two spoons to scoop out and drop the dough onto the trays so mine might be a little bigger than what they should be
They spread out so keep that in mind when placing the dollops
They puff up when baking but will flatten out when cooling
These are just really delicious and 15/10 would recommend this recipe 😋

This is “Mother Mary”, the owner of Blackberry’s mother.
She made all the cakes for the restaurant while it was open. Chef Gordon Ramsay tried her red velvet cake, and spoke this meme-able line:

My friend asked how I learned to cook and the answer is I didn't. I know like 5 things about cooking and they are:
Always use more garlic than the recipe calls for
"Ehhh fuck it close enough" is a great measurement tool
Find like 5 recipes that you like, adjust them how you like them, make them until you hate them
Clean as you go
If a recipe is from a mommy blog, you will need more spices

Since this made so much, we had leftovers today
Lunch was chicken (sliced), dill pickles, lettuce, bacon, cheese, and mayo all wrapped up in a tortilla for a yummy chicken wrap
Dinner was chicken sandwiches

It's a lot like Chick-fil-A, but without the homophobia
