:3 what’s the most delicious rock
Good question!
The easiest answer here is table salt. Also called Halite, it can come in a variety of colors besides the usual white/colorless crystals, the most popular of which is pink/red. It makes crazy fun shapes too, and is one of my favorite specimens in large crystalline clusters because of the angular formations.

It has a cubic crystal system and perfect cleavage in three directions! Can also be fluorescent!

Another popular tasty crystal is MSG! It forms fun starburst-like crystals and is known for bringing out umami or meaty flavors in cooking.

MSG is incredibly water-soluble—in fact, it’s the most water-soluble calcium salt of glutamic acid. It crystallizes in rhombic prisms branching out from a central point. I will say I’m having a hard time finding much information on it from a geological structure standpoint, and I don’t think the crystals form naturally out in the wild like halite does. Unfortunately, it looks like this particular salt falls more into chemistry than geology, but I wanted to include it here because of its fun structure and ability to form crystals.
More infodumping below.
The broad answer is that water-soluble minerals will generally have a flavor, as saliva can break them down enough to be processed by your taste buds. Now, a quick disclaimer:
Ahem.
Do not lick mineral specimens.
Much like with plants, there are many MANY types of minerals that are toxic when ingested. Licking the wrong specimen can, in fact, deliver a harmful dose of whatever could hurt you, and that’s not even touching on whatever fungi or bacteria are hanging around on it from being underground. It also, like, damages the specimen. So maybe don’t do that.
The recommended method for testing the flavor of a mineral is to lick your finger, poke the rock, then lick your finger again. If there is a flavor pungent enough to use in identification at all (there usually isn’t) you should be able to taste it from that alone.
Now, the real question is: what is your ideal flavor palette? Finding the most delicious rock will vary greatly on an individual’s preferred flavor profile, just like a favorite food. This website has a short list of specimens with more distinct flavors, ranging from sweet (Borax) to bitter (epsomite, sylvite). There are also some interesting combinations like ~Sweet Metallic~ (Calcanthite), which sounds like a spice mix my dad would use.
Minerals and crystals aside, one could also use the tongue to distinguish between the grain size of mudstone and siltstone (though this method is unreliable without extensive experience). So if texture is more your thing, you could start there.
There isn’t a lot of information by way of mineral flavor, mostly because the majority of water-soluble specimens tend to have toxic properties and are more easily identified in other ways. Water-soluble specimens are also far more delicate than average—just keeping them in a humid environment could damage them—so it’s usually best to use other methods of identification anyway.
