When creating Cadello, we put ourselves in a metaphorical time machine and went back to the peak of the Venetian Empire.
During the peak of the Venetian Empire, Venice had a near monopoly on trade between Europe and Asia.
The wealthy Venetian merchants had unique access to exotic ingredients from places along the Old Silk Route plus flavours indigenous to Italy.
At the same time, during Carnevale, they hosted lavish masked balls in their grand palaces.
When creating Cadello, we asked ourselves, “What spirit would these wealthy Venetian merchants have created to serve at their masked balls?”
The Venetian mask, with all its mystery, allure and hints of scandalous fantasy, represents all that is Cadello…

Il Conte is our (extremely unique) variation of a 'negroni'.
After 15-20 seconds, Campari gives way to subtle hints of coconut with just a touch of smoke from the Mezcal.
Cadello brings balanced accents of chocolate and vanilla.
Il Conte was created by our own @robert_deiana_cadello88 and it is truly special.
25ml Cadello
25ml Campari
20ml Koko Kanu Rum
10ml Vida Mezcal
Stir over ice for 30 seconds.
Strain into a coupette glass.
Serve neat and garnish with lemon zest.

In a period when hundreds of new brands have been created in almost every traditional liquor category, we felt it was time to create something new and unique. In our pursuit of creating a unique new spirit, we asked ourselves... "What spirit would the wealthy Venetian merchants of the 18th century have created to serve at their lavish masked balls?" They had access to all the exotic spices from the east as well as flavours indigenous to Italy. Since 1181, various bridges have stood next to the Rialto Market in Venice, where these exotic spices were bought and sold. The current bridge, the Ponte di Rialto, was built in 1591 and is one of the most beautiful bridges in the world. A very special thanks to Christian Lazzaro (@chris_l78) for this amazing photograph of Ponte di Rialto. Many beautiful photographs have been taken of the Ponte di Rialto over the years; however, this is the nicest one we have seen.

In the logo of Cadello, our unique "Ferro Dragon" has the head of a dragon (representing China) and the tail of a 'ferro' from the front of the Venetian gondola (representing Italy).

There are various stories around how the Espresso Martini came to be… . And there are many people who claim to have invented it… . We subscribe to the story that it was invented by legendary British bartender Dick Badsell (who initially referred to it as Vodka Espresso, and then later ‘Pharmaceutical Stimulant’ – great name). . Allegedly, Dick was working at a bar in Soho in the 80s when a young (future) supermodel asked for something to “wake me up and f**k me up”. . Upon that, rather particular, request the Espresso Martini was born.Whatever the truth and real story may be, the Espresso Martini is now a classic. . . Our own espresso martini is the Cadellotini (see recipe below). . . Next week the amazing Mezzanine Bar will be showcasing (and serving) their delicious Cadello espresso martini at Cocktails in the City (@cocktailsinthec). . . . CADELLOTINI . 30ml  Cadello 20ml  Vodka 20ml  Franglico 5ml    Cherry Liqueur 1         Espresso . Shake vigorously for 30-60 seconds and strain into a martini glass.

In Venice, the word casa is abbreviated to ca', particularly when used to name a noble family's palace.
We wanted to name our new spirit after a Venetian palace in which grand masked balls would have been held during the peek of the Venetian Empire.
Hence... Ca' Dello... Cadello

What’s your preferred martini…?
Today is the birthday of Ian Fleming - the man who gave us James Bond. Among 007’s lasting contributions to life was to crystallise the martini as arguably the most stylish and sophisticated of the classic cocktails.
We hope you all commemorate the creator of James Bond with sufficiently creative, stylish and sophisticated martinis this weekend…

FLOR DE AMOR
15ml Cadello
30ml Tequila Blanco
60ml Pomegranate Juice
30ml Mint, Ginger, Honey Syrup
3-4 slices of lime
Garnish with lime zest and mint sprigs.
Put lime into shaker and muddle.
Pour all other ingredients over the lime and shake for 30 seconds.
Double strain into chilled glass.

Sometimes truth is stranger than fiction…
Il Teatro San Benedetto was a grand opera house in Venice, built in 1755.
Sadly, it burned to the ground. However, it was rebuilt and inaugurated on 16 May 1791.The new theatre was named ‘La Fenice’ (which means The Phoenix in Italian).
Yesterday was La Fenice’s 230th birthday.
Since being named ‘La Fenice’, the theatre has burned down twice more and, like The Phoenix, it has been rebuilt twice more. (once in 1836 and once again in 1996).The spirit of the theatre and what it represents to Venice and to opera is immeasurable.
Since becoming La Fenice, the theatre has hosted the second most premieres of Verdi operas (behind La Scala), as well as many premieres by Rossini, Bellini and others. La Fenice lives on as one of the greatest opera houses in the world.
The story of La Fenice is an inspiration to persist… and to restore, recover and resuscitate.
These are, indeed, strange times we live in, but we will all once again dance and sing and freely enjoy all of our joys and passions in life.

Why aren’t we posting a cocktail on World Cocktail Day…??
(Today is, of course, World Cocktail Day)
However, today is also the birthday of George Braque…
Together, George Braque and Pablo Picasso created the revolutionary art form of cubism around 1907-1908. 
Cubism turned the art world on its head and changed the perceptions and creative processes employed by artists, writers, composers, photographers and early filmmakers.
Many great works of art produced over the last 100 years can be traced back to the transformative impact of cubism.
In honour of World Cocktail Day, we hope that every one of you are deconstructing traditional norms to create revolutionary libations today.
Whatever your passion in life… be original, be expressive, be unique, be creative and leave your mark in a way that inspires others.

Cadello is like a cocktail in a glass.
The drinking experience takes your mouth on a journey…
In the first 20-30 seconds, you get a bit of star anise and mint…
After 30 seconds, star anise and mint give way to coffee, chocolate, vanilla, a bit of hazelnut and caramel…
Finally, after 50 or 60 seconds, you get a warm combination of all these ingredients coming together in a very smooth, but complex finish.
