Fresh Taco Salad with Creamy Avocado Dressing
⭐️⭐️⭐️⭐️⭐️ 5 of 5 Stars
Mmmmmm mmmmm Good! This one is light & delicious. It’s easy to make, but there’s a lot of steps so we recommend having everyone help to make this meal. We made homemade salsa and homemade guacamole too!
We also made 2 versions: quinoa and ground turkey. Both delicious! For the ground turkey, follow the same directions.. use less water and add some homemade taco seasoning.

Bonus recipe! We’ve always wanted to make salsa & this was sooooooooo easy. It’s fresh, tangy and you can adjust the spice to your liking. We over processed ours to make it really smooth. We are going to make it a litter chunkier next time to change it up.

Sweet Potato, Poblano, and Black Bean Enchiladas
⭐️⭐️⭐️⭐️⭐️ 5 out of 5 Stars
Duration: prep 25 min, cook 70 min
Melt in your mouth amazing! We all made this meal together and it was so fun and simply delicious! We used large flour tortillas and each enchilada is so hearty and filling! This dish was a crowd pleaser and everyone gave it a thumbs up!
We considered using chicken instead of sweet potato for 1/2 of the Enchiladas. We decided to stick to the recipe and didn’t have any regrets. So yummy!

If you’re a fan of eggplant, you’re going to want this recipe! We thoroughly enjoyed this hearty dish. If you’re a carnivore you could easily swap out the eggplant with beef. Enjoy!

Vegan Fajita Bowl — we had a vegan version and version with meat
⭐️⭐️⭐️⭐️ 4 of 5 Stars
Duration: prep 20 min, cook 30 min
We really enjoyed this healthy and tasty meal & it will become a staple in our home.
I made mine as low carb without the rice and our vegetarian had the vegan version without meat. The rest of us added chicken. We simply made taco seasoning and sautéed the chicken in the seasoning + a little water.
Next time, we are going to make a lime dressing for the greens, season the sautéed veggies with a little of the homemade taco seasoning & sprinkle some tortilla strips on top.

For Super Bowl Sunday, we made chicken wings. We LOVED this recipe! They are baked, not fried and tossing the wings in baking powder makes them crispy! The homemade sauce is tangy and finger licking good! Recipe is from Chef Matt Abdoo who did a segment on the Today Show.

Instant Loss Green Smoothie

This week 3 of the 4 of us were sick, so we made this healthy and detoxifying green smoothie. I added 6 ice cubes to make it cold & a little thicker. We added more apples and strawberries for the girls :)

This is a tasty and hearty soup. Perfect for a cold winter day. Approx 60 minutes.
We have a few ideas to make it even better: 1. Season and sear the chicken before putting it into the instapot 2. Use fresh jalepeno vs pickled and 3. We may use a slow cooker vs pressure cooker.
