Pumpkin Tiramisu Cake — pumpkin spice cake soaked with coffee liqueur, fluffy mascarpone frosting. Traditional tiramisu is all about booze, coffee, and creamy filling. Sticking with the classic dessert-theme, I created a Heritage frosting that still utilized tiramisu’s familiar mascarpone filling. This type of frosting is creamy and fluffy, further, the cakes were brushed with a soak made from coffee liqueur to better compliment the pumpkin flavour which makes this cake even more stunning and awe-worthy for the holidays.

The frosting is equally as awesome. Both the cake and the frosting are fantastic alone but together they make what I think maybe the best bite of cupcake I’ve ever had. The cupcakes themselves have the perfect moist and not too dense texture, along with the flavour of the gingerbread. Adding ginger syrup to the top makes the cakes very moist and is worth the extra step.

This cake is super simple to put together and quick to make. It has so many delicious textures in it. You get the light and delicious cake with refined hints of coconut/vanilla and lemon and then you have a bit of crunch from the poppy seeds as well, then you have that jammy fruity part from the delicious raspberries curd. It’s not overly sweet at all and I really enjoyed this for breakfast, in break-time, as a dessert or even perfect for afternoon tea. Enjoy!

This cake is the richest, moist and delicious one. The actual secret behind it is the hidden vegetable inside. You will never know there is Zucchini in this chocolate cake because it is SO Good! The zucchini absorbs the cocoa while bringing the full flavour of chocolate, but without the heaviness of some other chocolate cakes. The ingredients are all usual, you should have all of them on hand if you have zucchini. If it is summertime, you shouldn’t have a problem finding any.

This Sweet Potato Cake is perfect for Fall & Thanksgiving - or if you love carrot cake and are looking for a delicious alternative. It’s moist, super easy, filled with warm spices, and topped with a sweet fluffy cloud of marshmallow buttercream which tastes like a delicious cloud of marshmallow heave. I added a few chopped pecans on top of my cake – but that’s totally up to you.
