A refreshing and tropical salad featuring tender chicken, juicy pineapple, and a zesty dressing. Perfect for a light and healthy meal.
Ingredients: 2 cups cooked chicken breast, shredded. 1 cup fresh pineapple chunks. 1/2 cup red bell pepper, diced. 1/2 cup cucumber, sliced. 1/4 cup red onion, finely chopped. 1/4 cup cilantro leaves, chopped. 1/4 cup cashews, chopped. 1/4 cup shredded coconut. 1/4 cup lime juice. 2 tablespoons honey. 1 tablespoon soy sauce. 1 teaspoon ginger, minced. Salt and pepper to taste. Mixed salad greens for serving.
Instructions: In a large bowl, combine the shredded chicken, pineapple chunks, red bell pepper, cucumber, red onion, cilantro, cashews, and shredded coconut. In a separate small bowl, whisk together the lime juice, honey, soy sauce, minced ginger, salt, and pepper to make the dressing. Pour the dressing over the salad ingredients and toss well to coat everything evenly. Refrigerate the salad for at least 30 minutes to allow the flavors to meld. To serve, arrange mixed salad greens on plates and top with the chicken pineapple salad mixture. Garnish with additional cilantro leaves and cashews, if desired.
